GREEK LAMB-FETA BURGERS WITH CUCUMBER SAUCE



Greek Lamb-Feta Burgers With Cucumber Sauce image

These grilled lamb burgers are served with slices of ripe tomatoes and red onion in pita bread with a fresh tasting cucumber sauce seasoned with fresh mint and garlic.

4 large unpeeled garlic cloves
1 ¼ pounds ground lamb
½ cup crumbled feta cheese
¾ teaspoon dried oregano
½ teaspoon salt
½ teaspoon black pepper
½ large cucumber, peeled, grated and squeezed very dry in a clean towel
¾ cup sour cream
1 tablespoon minced fresh mint leaves
1 teaspoon red or rice wine vinegar
1 clove garlic, minced
4 large, thin red onion slices
4 large, thin tomato slices
4 small (4 inch) pita breads

Steps:

  • Set 4 whole garlic cloves in a small skillet over medium-high heat; toast until spotty brown, about 5 minutes. Peel, mince and set aside.
  • Break up lamb in a medium bowl. Sprinkle roasted garlic, feta, oregano, salt and pepper over meat; stir with a fork to combine. Divide into 4 portions. Toss meat back and forth between cupped hands to form a ball. Pat with fingertips to flatten to about 4 inches wide. Refrigerate.
  • Mix cucumber, sour cream, mint, vinegar, 1 minced clove of garlic, and salt and pepper to taste in a small bowl. Refrigerate sauce until ready to serve.
  • Build a hot fire on one side of grill. Replace rack. When coals are covered with white ash, add burgers. Cover and cook, turning only once, until done, about 4 to 5 minutes per side for medium to medium-well burgers.
  • Grill pitas until spotty brown and warm, a minute or so per side. Split crosswise. Spread a couple of tablespoons of sauce over 4 pita halves. Top each with an onion slice, a tomato slice and a burger. Spread a portion of the remaining sauce over each burger. Top with remaining pita halves.

2 teaspoons fresh lemon juice
1 clove garlic, minced
1 teaspoon chopped fresh dill leaves

1/2 small onion, chopped
2 cups lightly packed baby spinach leaves, coarsely chopped
1/4 cup crumbled feta cheese

1 1/4 pounds lean ground turkey breast
1/4 teaspoon salt
4 whole-wheat burger buns
1/4 English cucumber, thinly sliced
4 small leaves romaine lettuce, hard ribs removed

  • In a small bowl, stir together the yogurt, oil, lemon juice, garlic, dill, and salt and pepper.
  • Heat 2 teaspoons of oil in a nonstick skillet over medium-high heat. Add the onion and cook until soft and translucent, about 3 minutes. Add the spinach and cook until wilted, about 1 minute. Remove the pan from the heat. Add the feta cheese, dill and 1/4 teaspoon black pepper and stir to combine.
  • Divide the turkey into 4 equal sized rounds. Make 2 equal sized patties out of each round so you have 8 patties total. Put 2 tablespoons of the spinach-feta mixture onto half of the patties. Top with remaining patties working the turkey around the edges to seal burgers closed. Season the burgers on both sides with the salt and remaining 1/4 teaspoon pepper.
  • Spray a nonstick grill pan with cooking spray and heat over medium-high heat, or prepare the grill. Grill the patties until cooked through, about 5 minutes per side.
  • To serve, place a burger on the bottom half of each bun, top with about 2 tablespoons of yogurt sauce, then 2 or 3 cucumber slices and a lettuce leaf. Top with the other half of the bun and serve.

1 large egg yolk
3/4 teaspoon dried oregano
1/2 teaspoon kosher salt
A few grinds black pepper
1 red onion
4 pitas with pockets
2 tablespoons olive oil
One 16-ounce package store-bought tzatziki
1/2 head Boston lettuce
1/2 medium seedless cucumber, chopped
One 4-ounce package crumbled feta (about 3/4 cup)
Potato chips, for serving

Steps:

  • Preheat the oven to 250 degrees F.
  • Place the turkey, egg yolk, oregano, salt and pepper in a large bowl. Grate half the red onion and add it to the bowl. Mix with your hands, then form into four 1/2-inch-thick patties. Place on a sheet pan or plate lined with parchment paper.
  • Put the pitas on a baking sheet and place in the oven to warm.
  • Heat the olive oil in a large cast-iron or other nonstick skillet over medium-high heat. When the oil is hot, add the patties and cook until they are brown on the outside and no longer pink in the center, approximately 5 minutes on each side.

Tired of plain old 'burgers for summertime? Mix it up a bit by adding some classic Greek flavor: spinach, feta, roasted red pepper, and herbs...Yum! Serve these burgers on a warm toasted Kaiser roll, with a delicious feta cheese spread, fresh lettuce, and tomato.

1 red bell pepper
2 ounces crumbled feta cheese
2 tablespoons mayonnaise
2 teaspoons lime juice
1 sprig fresh mint, chopped
1 sprig fresh parsley, chopped
1 pound lean ground beef
6 ounces crumbled feta cheese
8 ounces fresh spinach - rinsed, drained and coarsely chopped
¼ cup bread crumbs
1 egg
1 clove garlic, minced
¼ cup chopped onion
2 sprigs fresh basil, coarsely chopped
3 sprigs fresh mint, coarsely chopped
2 sprigs fresh parsley, coarsely chopped
salt and ground black pepper to taste
4 Kaiser rolls, split and toasted
1 tomato, sliced
4 leaves lettuce

Steps:

  • Preheat the oven's broiler and set the oven rack about 6 inches from the heat source. Line a baking sheet with aluminum foil. Cut the red bell pepper in half from top to bottom; remove the stem, seeds, and ribs; place pepper cut-side-down onto the prepared baking sheet.
  • Cook under the preheated broiler until the skin of the pepper has blackened and blistered, about 5 minutes. Allow the blackened pepper to cool and steam in a paper bag for 5 minutes; peel and dice; set aside.
  • Stir together the 2 ounces feta cheese, mayonnaise, lime juice, the 1 sprig chopped mint, and the 1 sprig chopped parsley in a small bowl; set aside.
  • Preheat an outdoor grill for medium heat, and lightly oil the grate.
  • Place the roasted red pepper, ground beef, feta cheese, spinach, bread crumbs, egg, garlic, onion, basil, the remaining mint, and the remaining parsley in a bowl. Sprinkle with salt and pepper, and mix gently with your hands until evenly combined. Divide the meat mixture to form 4 equal 4 1/2 inch patties.
  • Cook on the preheated grill until the burgers are cooked to your desired degree of doneness, about 4 minutes per side for medium. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C). Serve burgers on warm toasted Kaiser roll with the feta cheese spread, fresh tomatoes, and lettuce.

1/2 cup fat-free plain yogurt
1/2 cup chopped cucumber
2 teaspoons chopped fresh mint leaves
1 teaspoon fresh lemon juice
1 box (9 oz) frozen chopped spinach
1 1/4 lb lean (at least 93%) ground turkey
1/4 cup fat-free plain yogurt
1 teaspoon dried oregano leaves, crushed
1/2 teaspoon garlic salt
1/4 teaspoon pepper
5 thin slices medium tomato, halved
5 whole-grain pita bread halves (6 inch)

Steps:

  • Set oven control to broil. In medium bowl, mix Cucumber Sauce ingredients; cover and refrigerate until ready to use.
  • Cook spinach as directed on box; cool slightly. Squeeze to drain well. In large bowl, mix cooled spinach, turkey, 1/4 cup yogurt, the oregano, garlic salt and pepper. Shape into 5 oval patties, each about 1/2 inch thick. On broiler pan, place patties. Broil with tops about 5 inches from heat 10 to 12 minutes, turning once, until thermometer inserted in center of burgers reads 165°F.
  • Place 2 tomato slice halves in pita pocket halves; place burgers over tomato slices. To serve, top each burger with about 3 tablespoons sauce.

1 pound ground turkey (85 percent lean)
3 tablespoons chopped parsley, plus whole leaves for serving
2 teaspoons Worcestershire sauce
2 teaspoons Dijon mustard
Kosher salt and freshly ground pepper
1/2 cup plain yogurt (not Greek)
2 tablespoons fresh lemon juice, plus 1/4 teaspoon grated zest
2 teaspoons extra-virgin olive oil, plus more for drizzling
4 flatbreads (each 6 inches), such as pitas
Hummus, cucumber spears, and arugula, for serving

Steps:

  • Combine turkey, parsley, Worcestershire, Dijon, 1 teaspoon salt, and 1/4 teaspoon pepper. Cover; refrigerate 20 minutes. Stir together yogurt, lemon juice, and zest; season with salt and pepper.
  • Set a steamer basket in a wide pot containing 1 inch water. Bring to a boil, then reduce heat to medium. Form turkey mixture into eight 1/2-inch-thick patties. Steam, covered, until a thermometer inserted into patties reads 165 degrees, 3 to 5 minutes. Transfer to a plate; pat dry. Heat a large skillet over high; swirl in oil. Sear burgers, flipping once, until golden, about 2 minutes total. Cook breads over an open burner or under the broiler, turning occasionally, until charred in spots, 30 seconds. Spread with hummus; top each with 2 patties, cucumber, arugula, and parsley leaves. Drizzle with sauce and oil, season with salt and pepper, and serve.

  • TRADITIONAL PREPARATION METHOD: INTO a large bowl add the SEASONED GROUND MEAT ingredients without mixing; IN another small bowl beat one egg with 1 tablespoon flour; ADD egg/flour mixture to ground meat ingredients in large bowl; WHISK 1/4 cup milk and 1/8 cup ouzo or Pernod (or 1 teaspoon anise extract) in a small bowl and add 1/2 cup bread crumbs; ALLOW mixture to absorb; ADD to meat mixture; MIX well; CHILL meatball mixture until very cold (40 degrees F).
  • QUICK FOOD PROCESSOR METHOD: INTO large food processor add 1/4 cup milk, 1 egg, 1 tablespoon flour, 1/8 cup ouzo (or 1 teaspoon anise extract) and 1/2 cup bread crumbs; PROCESS; ADD the MAIN MEATBALL INGREDIENTS except for ground lamb and feta cheese; PROCESS; ADD ground lamb; PROCESS (Feta cheese may be added to mixture now and processed or folded into after); CHILL meatball mixture until very cold (40 degrees F).
  • SHAPE meat mixture into six patties.
  • PLACE patties onto a baking sheet (do not use a broiler pan with grill since patties will stick to the grill and/or and be difficult to remove after broiling).
  • PREHEAT oven to BROIL.
  • BROIL the patties 2-3 minutes, TURN patties using a metal spatula (NOTE: YOU MAY ADD CRUMBLED FETA CHEESE OVER BURGERS NOW IF DESIRED); BROIL 2 minutes longer or until desired doneness is reached (patties will continue to cook after removing from oven); REMOVE pan from oven; COVER patties with foil.
  • MAKE CUCUMBER-DILL SAUCE: Combine Cucumber-Dill Yogurt Sauce recipe ingredients in a small bowl (1 cup plain yogurt, 1/2 cup finely diced cucumbers, 2 tablespoons chopped fresh dill or 1 1/2 teapoons dried dill, 3/4 teaspoon chopped fresh mint or 1/4 teaspoon dried mint, 1/2 teaspoon finely minced onions, 1/4 teaspoon finely grated fresh lemon zest); CHILL before serving.
  • WARM or toast buns if desired (For toasted steamed buns if desired, melt butter a large skillet over medium heat; PLACE place halved buns cut-side down; REDUCE heat and cover until buns are browned on bottom and heated through); SPREAD the CUCUMBER-DILL YOGURT SAUCE; ASSEMBLE burgers as desired with above FIXINGS.

2 pounds ground 93 percent lean turkey breast
1 cup packed fresh spinach leaves, finely chopped
¼ cup pitted black olives, finely chopped
Zest of 1 lemon
2 tablespoons finely chopped red onion
1 tablespoon finely chopped fresh mint or parsley
1 teaspoon garlic powder, or 3 fresh garlic cloves, finely chopped
1 teaspoon dried oregano
1 teaspoon sea salt
½ teaspoon ground black pepper
Olive oil or ghee for frying
Optional toppings: butter lettuce, sliced tomato, sliced red onion, sliced cucumber, more fresh mint or parsley, basil pesto, or feta cheese

Steps:

  • In a large mixing bowl, use your hands to combine well the turkey meat with the spinach, olives, lemon zest, onion, mint or parsley, garlic, oregano, salt, and pepper. But don't overmix or the meat with become tough. Divide the mixture into 6 equal portions and shape them into burgers.
  • Warm about a tablespoon of olive oil or ghee in a large skillet set over medium-high heat. Working in batches, add the burger patties and fry them on one side for about 5 minutes, then flip them, frying on the second side for another 4 to 5 minutes, or until they're golden brown.
  • If you like, serve each burger on a large piece of butter lettuce and top them with any of the optional ingredients.
