A re-creation of a wonderful pasta dish I ate on Whidbey Island in Wash. State, this is fresh with tomatoes, mushrooms, and spinach.

8 ounces dried linguine
8 ounces smoked salmon (my favorite is alder smoked salmon from Trader Joe's. ( DO NOT USE LOX STYLE smoked salmon))
2 tablespoons olive oil
2 large shallots, minced
1 clove garlic, crushed
8 ounces mushrooms, sliced
2 large roma tomatoes, diced
1 (6 ounce) package organic baby spinach leaves, divided
2 cups chicken broth (or more)
fresh ground pepper

Steps:

  • Saute shallots and garlic in olive oil in a large skillet until soft.
  • Add mushrooms and tomatoes, saute for another 2 mins.
  • Add chicken broth and 3/4 of the spinach; gently simmer over low heat while pasta cooks.
  • Cook pasta a little less time than according to pkg directions.
  • Drain pasta and gently stir it into the sauce.
  • Simmer gently until pasta absorbs some of the sauce, and is cooked to your preference.
  • Crumble the salmon into chunks and gently stir it into the pasta.
  • Add more chicken broth if needed and heat through.
  • Serve on a bed of the reserved spinach and sprinkle with freshly ground pepper to taste.

This is an awesome pasta that is quick to make and very satisfying. I first copied a recipe from Bon Appetit and then combined it with several recipes from my cookbooks. Over the years I have tweeked it to the recipe it is today. I have used fresh salmon in place of smoked salmon when I have not been able to get smoked salmon, and it was very good as well. Served with a salad it makes a very lovely meal.

1/4 cup olive oil
1 cup mushroom, sliced
2 shallots, sliced thinly
1 garlic clove, minced
1 pinch cayenne
1/3 lb smoked salmon, cut into 2-inch pieces
1/4 cup white wine
1 cup heavy cream
2 tablespoons lemon juice
1 tablespoon lemon zest, grated
3 tablespoons capers, drained
1 teaspoon parsley
1 lb linguine or 1 lb spaghetti
1/2 cup parmesan cheese, freshly grated
salt and pepper

Steps:

  • Cook Pasta as directed. Drain.
  • Meanwhile, in a large skillet, heat oil. Add mushrooms, shallots, garlic and cayenne. Saute until veggies are tender.
  • Add white wine and bring to boil. Add cream and bring to boil. Let simmer for 3minutes.
  • Add lemon juice, lemon zest and salmon. Bring to boil and let simmer 1 to 2 minutes.
  • Add capers, parsley, salt and pepper. Mix well.
  • Pour salmon mixture onto hot drained pasta. Toss to mix. Add Parmsean and toss well. Let set for 2 minutes as pasta will absorb any extra liquid.
  • Serve.

EASY SMOKED SALMON PASTA

1 tablespoon butter
1 tablespoon extra-virgin olive oil
1 shallot, minced
1 ounce smoked salmon, cut into small pieces
1 tablespoon reduced-fat cream cheese
3 tablespoons milk

Steps:

  • Fill a large pot with lightly-salted water and bring to a rolling boil. Stir the linguine into the water and return to a boil. Cook uncovered until the pasta has cooked through but is still firm to the bite, about 11 minutes; drain, reserving 2 tablespoons of the water.
  • Melt the butter with the olive oil in a saucepan over medium-low heat; when the mixture begins to bubble, add the shallots and cook until softened. An elegant, easy 15-minute creamy smoked salmon pasta recipe that is deeply satisfying, brightened with lemon and chives.

1 pound long, flat pasta, such linguine, fettuccini, or tagliatelle
6 ounces smoked salmon, cut into pieces
6 tablespoons (3 ounces) butter
2 lemons, zested and juiced
2/3 cup heavy cream
3 tablespoons minced chives (can substitute 2 tablespoons thinly-sliced scallions)
kosher salt

Steps:

  • Bring a pot of salted water to a boil and cook pasta until just shy of al dente. Drain, reserving some pasta water.
  • While the water is boiling, melt the butter in a large skillet over medium heat. Add the salmon, lemon juice, half of the lemon zest, and half of the chives. Cook for a few minutes, stirring occasionally. Stir in the cream and cook over low heat (the cream should be at a simmer) for about 5 minutes.
  • Add the drained pasta to the cream mixture. Cook for a few minutes, tossing to coat. Taste for seasoning. If the pasta looks a little dry, add pasta water a tablespoon or two at a time until it is creamy enough.
  • Serve immediately, topped with the remaining chives and lemon zest.

50 -75 g smoked salmon, shredded
1/3 cup cream

200 g short pasta, like farfalle or 200 g frilled pasta shells

Steps:

  • Bring salted pasta water to a boil and while the pasta is cooking, sauté the garlic in the oil in a skillet--but don't burn it.

  • Add the cream and heat through.

3/4 tsp. kosher salt, plus more
1 bunch asparagus (about 1 lb.), trimmed, cut into 1"-1½" pieces
1 (10-oz.) bag frozen peas
4 Tbsp. cold unsalted butter, cubed
1 Tbsp. finely grated lemon zest
3 Tbsp. fresh lemon juice
1 cup sour cream, divided
1 1/2 tsp. freshly ground pepper, plus more
6 oz. smoked salmon, sliced into ½" strips
1 cup basil leaves

Steps:

  • Cook pasta in a large pot of boiling salted water, stirring occasionally, until very al dente, 7 minutes (or 2 minutes less than package instructions). When I left school I worked in an Italian restaurant. For staff meals we were allowed various basic pastas, but we could pay extra for a more 'luxury' meal, such as seafood etc. Every Saturday, I'd 'spoil' myself and buy salmon pasta. Once I left the job, I would crave this pasta, so I had to try to recreate it as best I could. I do tend to vary the optional items depending on what I have in the fridge, but the basic stays the same. BTW, if you don't like garlic, you don't have to add it, but it is definitely worth it!

150 g smoked salmon (diced or in strips)
200 g penne (or any pasta with a hollow area that can be filled by sauce)
2 -3 garlic cloves, crushed
1 tablespoon butter
1 tablespoon flour
1/4 cup milk
1/4 cup cream
2 tablespoons capers (optional)
2 spring onions (finely chopped) (optional)
salt & pepper, to taste
parmesan cheese, to taste

Steps:

  • Boil pasta as per manufacturer's instructions, and set aside.
  • In a frying pan, heat olive oil, and warm the crushed garlic cloves for just a few seconds. Add the smoked salmon strips and let them cook just enough to warm them. It doesn't need to be cooked as such, just enough heat to infuse the garlic with the salmon.
  • At this point add any optionals, such as capers or spring onions, but bare in mind that the salmon/garlic blend is already very rich.
  • When cooked, set aside.
  • Place the butter in a separate preheated saucepan and melt the butter down (on low heat). Once the butter is melted down add the plain flour.
  • Stir well and cook the mixture of butter and plain flour which should go a bit lumpy and dry at this stage.
  • Mix the milk and cream well.
  • Remove from heat and slowly, very slowly add the milk and stir. This must be done slowly, or it will become lumpy. Keep adding the milk until the desired thickness is achieved.
  • Add the sauce to the salmon and mix well.
  • Add the pasta, sprinkle with some parmesan cheese and black pepper and enjoy!

6 tablespoons butter
1/2 onion, finely chopped
2 tablespoons all-purpose flour
2 teaspoons roasted garlic
salt, to taste
2 pinches crushed red pepper flakes, ot to taste
2 cups skim milk
1/2 cup grated pecorino romano cheese, plus some for serving
1 cup frozen green pea, thawed and drained
1/2 cup mushroom (any kind, we used button mushrooms)
10 ounces sliced smoked salmon (we used Nova)
16 ounces penne rigate

Steps:

  • Bring a large pot of lightly salted water to boil.
  • Add pasta and cook for 8-10 minutes or until al dente; drain.
  • Melt butter in a large non-stick skillet over medium heat.
  • Stir in crushed red pepper, allow it to season the butter.
  • Saute onion in butter until tender, about 8 minutes.
  • Add garlic in the last 2 minutes.
  • Then, stir in flour; gradually stir in milk; whisking all the while.
  • Check for seasoning.
  • Heat to just below boiling and then gradually stir in cheese until the sauce is smooth.
  • Stir in peas and mushrooms; cook over low heat for 4 minutes.
  • Toss in smoked salmon and cook for 2 more minutes.
  • Serve over pasta, a salad of greens, French bread and a bottle of wine.
