Another recipe from my grandma. I still remember making this with her as a little girl. Rich and creamy!

Number Of Ingredients 4

1 cup sugar
1/3 cup milk
5 tablespoons butter or 5 tablespoons margarine
1 cup semi-sweet chocolate chips

Steps:

  • Put first three ingredients in a sauce pan.
  • Bring to a boil, while stirring constantly.
  • Remove from heat and add chips.
  • With a wire whip beat until creamy and cooled.
  • Add chopped pecans if desired.

How to make fudge the old fashioned way: just minutes of your time plus a few dollars of pantry ingredients gives you a candy shop quality homemade chocolate fudge perfect for gifting (or keeping!)

Number Of Ingredients 7

2 cups granulated sugar
1/4 cup cocoa powder (Hershey's is fine)
1/2 teaspoon salt
2/3 cup half and half
1 tablespoon corn syrup
3 tablespoons butter
2 teaspoons vanilla extract

Steps:

  • Combine all ingredients except butter and vanilla. In a 2 quart saucepan, combine the sugar, half and half, cocoa, salt, and corn syrup. Mix well with a whisk and bring to a boil over medium-low heat. While the fudge is cooking, butter a plate or baking dish for pouring the mixture into later.
  • Heat until the mixture reaches 240 degrees. Let the fudge cook until it reaches 240 degrees, checked with a candy thermometer or instant-read thermometer. Don't stir during the cooking process. Once the temperature is reached, immediately remove the pan from the heat.
  • Place butter and vanilla on top and allow to cool. Place the butter and vanilla on top of the fudge and allow it to cool. Do not mix or disturb the pan. Let it cool about. 20 minutes until the side of the pan is warm but not hot to the touch.
  • Mix with a hand mixer until fudge begins to firm up. Using a hand mixer on medium-low, beat the fudge for 1-3 minutes until it just begins to firm up and lose its shine.
  • Quickly pour into a buttered dish, cool, and cut. Once the fudge changes texture, immediately pour it into a dish to set. Work quickly. It if is not pourable, just scoop it out and flatten in the best you can. Allow it to cool for 20 minutes and cut into one-inch squares.

This recipe was passed down to me and it's one of the better recipes that I have tried. Long before marshmallow creme came into any recipe, this is a recipe that came out of a 1930's-1940's cookbook.

2 c sugar
1 c milk
1/2 tsp salt
2 squares unsweetened chocolate
2 Tbsp corn syrup, light
2 Tbsp butter, room temperature
1 tsp vanilla extract
1/2 c nuts (pecan are the best~~optional)

Steps:

  • 1. In saucepan combine sugar, milk, salt, chocolate squares and corn syrup.
  • 2. Stir over low heat until sugar dissolves.
  • 3. Cook until temperature reaches 238* or until the water test is proven (1 tsp. of mixture in a bowl of cold water is dropped in and forms a soft ball and when squeezed by fingers are flattened).
  • 4. Remove from heat and drop in butter but do not stir then cool without stirring.
  • 5. Add vanilla then with a wooden spoon beat until candy looses sheen then add nuts if desired.
  • 6. Pour into a 8 x 8 square pan and cool completely and cut into squares.

When I make fudge, I like to make a 9 x 13 pan so I have plenty to share. This is really good. I keep it in the refrigerator. My DH likes it to sit out and get stale for weeks and then he likes it better. Men!!

1 cup butter
1 cup evaporated milk
1 (12 ounce) bag chocolate chips
1 (10 1/2 ounce) bag miniature marshmallows
1 cup chopped walnuts (optional)
1 teaspoon vanilla extract

Steps:

  • Combine the sugar, butter and milk in large saucepan.
  • Let boil stirring frequently at medium heat until soft ball stage.
  • Add chocolate chips.
  • Remove from heat.
  • Stir until chips dissolve.
  • Add marshmallows, walnuts and vanilla.
  • Stir well.
  • Pour into 9 x 13 pan.
  • Put in refrigerator to cool.
  • Cut when hard.

100g milk chocolate, chopped into small pieces
200g slightly salted butter, softened
400g icing sugar, sieved
4 tbsp cocoa powder
2 tbsp milk

Steps:

  • Put the chocolate in a heatproof bowl, suspended over a pan of barely simmering water. Stir every now and then until melted. (Alternatively, melt in the microwave, stirring the chocolate every 20 secs so it doesn't burn.)
  • Remove the bowl from the heat and leave to cool a little. Meanwhile, put the butter and icing sugar in another large bowl and mash with a spatula to combine (this will prevent you covering the work surface in icing sugar), then whisk with a hand mixer until smooth.
  • Sift in the cocoa and pour in the melted chocolate and milk, then mix again until smooth, and use to ice your chosen cake immediately. Will keep in the fridge for up to a week, but remove an hour before using to bring it back to room temperature, and beat well.

This is an old recipe over 65 year old from my boyfriends granny . It may be an easier faster way to cook this icing. If you know of any that makes as much and is as good please let me know.

5 Tbsp cocoa
3 tsp all purpose flour
1 small can evaporated milk (5oz.)
1 egg
1 tsp vanilla extract

  • 1. Mix together the sugar, cocoa and the flour
  • 2. Add milk and egg to the dry.
  • 3. Cook on low for 40 min stirriing constantly. take off fire adcd the vanilla stir good. spread on cake. Work fast icing will cool fast
