6 cups sliced fresh strawberries
1/2 cup sugar
1 teaspoon vanilla extract
SHORTCAKE:
3 cups all-purpose flour
5 tablespoons sugar, divided
3 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup cold butter, cubed
1-1/4 cups buttermilk
2 tablespoons heavy whipping cream
TOPPING:
1-1/2 cups heavy whipping cream
2 tablespoons sugar
1/2 teaspoon vanilla extract

Steps:

  • Combine strawberries with sugar and vanilla; mash slightly. Let stand at least 30 minutes, tossing occasionally., Preheat oven to 400°. For shortcakes, whisk together flour, 4 tablespoons sugar, baking powder, baking soda and salt. Cut in butter until crumbly. Add buttermilk; stir just until combined (do not overmix). Drop batter by 1/3 cupfuls 2 in. apart onto an ungreased baking sheet. Brush with 2 tablespoons heavy cream; sprinkle with remaining 1 tablespoon sugar. Bake until golden, 18-20 minutes. Remove to wire racks to cool completely., For topping, beat heavy whipping cream until it begins to thicken. Add sugar and vanilla; beat until soft peaks form. To serve, cut shortcakes in half; top with strawberries and whipped cream.

1 tablespoon baking powder
1/2 teaspoon salt
1/4 cup cold butter
1 cup milk
2 pints strawberries, chopped
1 tablespoon orange juice
1-1/2 cups whipped topping

Steps:

  • In a large bowl, combine flour, 2 tablespoons sugar, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. Gradually stir in milk until a soft dough forms. , Drop the dough by heaping tablespoonfuls into 8 mounds on a lightly greased baking sheet. Bake at 425° for 12-15 minutes or until lightly browned. Cool on a wire rack. , Meanwhile, place strawberries, orange juice and remaining 1 tablespoon sugar in a bowl; toss gently. Split shortcakes in half horizontally. Biscuits -
2 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon sugar
1/3 cup unsalted butter
3/4 cup milk
Whipped Cream -
2 ounces cream cheese
2 cups heavy whipping cream
1 teaspoon vanilla extract
1/2 cup powdered sugar
Strawberries (washed and sliced)

Steps:

  • For the biscuits, mix together flour, baking powder, salt, and sugar in a medium bowl.
  • Use a pastry blender to blend flour mixture together with cold sliced butter. Continue until mixture is well blended.
  • Add milk to mixture, and mix well. You should be left with a somewhat sticky but still manageable dough.
  • Grab spoonfuls of dough and shape into biscuits about 3/4 inch thick. Place on ungreased cookie sheet.
  • Bake at 425° for about 15-20 minutes, or until tops are beginning to turn golden.
  • Meanwhile, wash strawberries.
  • Mix together cream cheese, heavy whipping cream, vanilla, and powdered sugar to form a whipped cream.
  • Once the biscuits have cooled, slice a biscuit in half.
  • Place bottom half of biscuit on plate. Add a layer of sliced strawberries, followed by a generous layer of whipped cream, then another layer of sliced strawberries. Top with the top half of the biscuit.
  • Add a small dollop of whipped cream to the top, followed by a whole strawberry.
  • Serve and enjoy!

GRANDMA'S SHORTCAKE DROP BISCUITS

During the Summer months, grandma would make these bicuits and put all kinds of berries on them with whipped cream. As a kid I thought they were the greatest. Well here I am older now and making my own. I garnish mine with a piece of my chocolate mint leaves I have in my spice garden.

1 c self-rising flour
3 Tbsp margarine or butter at room temperature
7 Tbsp milk
1 tsp pure vanilla extract
whipped cream or cool whip as desired

Steps:

  • 1. Preheat oven to 450.
  • 2. Combine all ingredients until batter is blended.
  • 3. Using a tablespoon; drop onto a cookie sheet that has been sprayed with cooking spray. If you have a nonstick cookie sheet; it works well also when sprayed with cooking spray.
  • 4. Place in oven and bake about 10 minutes or untl golden brown.
  • 5. Remove biscuits and cut in half and serve with your favorite fresh fruits of the season and top with your favorite whipped cream. Can be served hot or cold.

This is my grandmother's biscuit recipe. It is my all-time favorite and has a really good flavor to it. Be sure not to roll out too thin, you want high biscuits! I usually just pat out the dough to the desired thickness, usually 1/2 inch.

2 tablespoons white sugar
4 teaspoons baking powder
½ teaspoon cream of tartar
½ teaspoon salt
½ cup vegetable shortening
1 egg
⅔ cup milk

  • Preheat an oven to 450 degrees F (230 degrees C).
  • Sift flour, sugar, baking powder, cream of tartar, and salt into a bowl. Use a pastry cutter to chop vegetable shortening into the flour mixture until it resembles coarse crumbs. Whisk egg and milk together in a separate bowl and slowly add milk mixture to flour mixture, stirring as you pour, until dough is moistened and well-mixed. Drop dough by spoonfuls onto an ungreased baking sheet.
