GRANDMA MINNIE'S CARROT RING

Grandma Minnie's Carrot Ring image

When I was growing up, holidays in the Kahan house were celebrated with family meals made by my Russian grandmother, Grandma Minnie. One of her most beloved recipes was her savory carrot cake, called Grandma Minnie's Carrot Ring. Similar to cornbread's sweet-savory combination of flavors, it is delicious served mounded with Braised Romano Beans with Salmoriglio or your favorite hearty winter vegetable. (Note: please plan ahead for overnight refrigeration of batter.)

Time 1h30m

Yield 8 servings

Number Of Ingredients 11

7 ounces carrots
1 cup unsalted butter, plus additional to butter the mold
1/2 cup dark brown sugar
1 large egg
1 tablespoon water
1 1/2 cups all-purpose flour, plus additional for rolling
1/2 tablespoon baking soda
1 teaspoon baking powder
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon cinnamon
1/2 teaspoon salt

Steps:

  • Peel the carrots. Use the coarse holes on a box grater to grate them; place them in a large bowl.
  • In the bowl of a stand mixer fitted with a paddle attachment, cream the butter and brown sugar together. Add the egg, water, and grated carrots, and continue mixing on medium to incorporate. Add the flour, baking soda, baking powder, nutmeg, cinnamon, and salt; mix on medium-low until the batter comes together. Remove from the mixer and set aside.
  • Butter a 9½-inch Savarin ring mold. Spread the batter evenly in the buttered mold; wrap tightly with plastic wrap and refrigerate overnight.
  • Preheat the oven to 350 degrees F. Remove the carrot ring from the refrigerator and let it temper for 30 minutes. Bake in the preheated oven for 1 hour. Remove the carrot ring from the oven and allow it cool for a few minutes.
  • After the carrot ring has cooled slightly, unmold it onto a large, circular platter. Serve with vegetables mounded in the center, if you wish.

GREAT GREAT GRANDMA ANDREW'S CARROT PIE

Great Great Grandma Andrew's Carrot Pie image

This is an old family recipe brought from England by my great great grandmother Eliza Griffin Andrews. You can make this all year long since carrots are in grocery stores and are inexpensive. In olden days people made this pie as a replacement for: sweet potato, squash and pumpkin because carrots matured earlier than the other...

Time 1h20m

Number Of Ingredients 8

8 large carrots (cooked and pureed)
3 large eggs (beaten well)
2 1/4 c milk
1/2 tsp salt
1/2 tsp each: ground allspice, ground cloves, ground ginger, ground nutmeg
1 1/2 Tbsp ground cinnamon (or to taste)
1 1/2 c brown sugar, firmly packed
PIE CRUST

Steps:

  • 1. Combine carrots, eggs, milk, brown sugar and seasonings in mixer bowl. Beat 3 minutes. Pour into pie shell. Bake at 450 degrees for 15 minutes. Reduce temperature to 325 degrees. Bake for 35 more minutes. It is done when a clean, dry knife inserted in center comes out clean.
  • 2. This is similar to a pumpkin pie... but not quite. *** Cover the edges of the pie crust with aluminum foil, this helps prevent the crust from getting too dark.

CARROT PIE

Carrot Pie image

Carrot Pie, with its sweet cinnamon taste, has been in my family for at least 5 generations. It's a must-have at our family Thanksgiving and Christmas get-togethers (but good any time!).

1 (9 inch) unbaked pie shell
¾ cup sugar

Rich, moist and cinnamony, this old-fashioned cake recipe was handed down from our beloved Grandma Kelly. It's a perfect way to use up a few carrots and an apple...and it's ideal for smaller families, since it yields fewer servings.

GRANDMA ROSE'S REGAL CARROT CAKE

Grandma Rose's Regal Carrot Cake image

Another recipe from my mother. It's quite rich and tasty. The prep times are a guess, I've never made the cake myself, just enjoyed it. My mother has given me all of her recipe cards, she can no longer bake, I hope that I have not missed something in the translation, if so, please feel free to email me! I am so not a baker, so if something doesn't look right, I probably won't pick up on it!
