CLASSIC APPLE CRUMB PIE

1 1/4 cups all-purpose flour, plus more for dusting
2 teaspoons granulated sugar
1/2 teaspoon salt
1 stick cold unsalted butter, cut into 1/2-inch cubes
1 tablespoon apple cider vinegar
1/4 cup ice water, plus more if needed
1 cup all-purpose flour
1/3 cup packed light brown sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1 stick unsalted butter, cut into 1/2-inch pieces, at room temperature
3 pounds mixed apples (such as Golden Delicious, Granny Smith and Gala), peeled and sliced 1/4 inch thick
4 tablespoons unsalted butter, melted
1/3 cup granulated sugar
1/4 cup packed light brown sugar
2 tablespoons all-purpose flour
1 tablespoon fresh lemon juice
1 teaspoon ground cinnamon
1/8 teaspoon salt

Steps:

  • Make the crust: Whisk the flour, granulated sugar and salt in a large bowl. Rub the butter pieces into the flour using your fingers until pea-size pieces form. Drizzle in the vinegar and ice water; stir gently with a fork to combine. If the dough doesn't hold together when you squeeze it, add more ice water, 1 tablespoon at a time. Turn out the dough onto a piece of plastic wrap and form into a disk; wrap tightly. Refrigerate until firm, at least 1 hour or overnight.
  • Roll out the dough on a lightly floured surface into a 13-inch round. Ease into a 9-inch pie plate. Trim the edges, leaving a 1-inch overhang, then tuck the overhanging dough under itself; crimp the edges with a fork. Refrigerate until firm, at least 1 hour or overnight.
  • Meanwhile, make the crumb topping: Mix the flour, brown sugar, cinnamon and salt in a medium bowl. Rub the butter into the mixture with your fingers until no longer floury and crumbs form. Freeze until ready to use.
  • Make the filling: Place a foil-lined baking sheet on the lowest oven rack; preheat to 400˚. Mix the apples, melted butter, both sugars, flour, lemon juice, cinnamon and salt in a large bowl. Spoon the filling into the chilled pie crust. Pat the crumb mixture on top.
  • Bake the pie on the hot baking sheet until lightly browned, about 30 minutes. Reduce the oven temperature to 350˚ and bake until the apples are completely soft when pierced with a paring knife, 60 to 80 more minutes. (If the topping is getting too dark, cover loosely with foil.) Transfer the pie to a rack to cool completely.

1/2 cup brown sugar (packed)
1/2 cup molasses
1 large egg
1 1/2 cups water
1 tablespoon all-purpose flour
1 teaspoon vanilla
1 cup all-purpose flour
1/2 cup brown sugar (packed)
1/4 cup butter (melted)
1/2 teaspoon baking soda
1 unbaked 9" pie shell

Steps:

  • In a saucepan, combine the ingredients for the molasses layer. Cook and stir over medium heat until the mixture has thickened. This will take about 5-10 minutes, depending on your stove. Allow it to come to a low boil, but not a full boil. Allow the mixture to cool while you prepare the topping.
  • For the topping, combine the flour, brown sugar, melted butter and baking soda. Mix well.
  • Pour the molasses mixture into the unbaked pie shell.
  • Sprinkle the crumbs on top of the molasses mixture.
  • Bake at 375 for 40-45 minutes until the top is golden brown and the center starts to puff up.
  • Allow the pie to cool before slicing. This is considered a "wet-bottom" pie, so when you slice it, the bottom may be slightly "wet" and that's OK.

When I make a Pie crust from scratch , this is my go to recipe. It's so easy to make and is very good. Vinegar can serve two useful roles in pie crusts - it promotes tenderness and can keep the crust from getting too brown.

2 1/2 c all purpose flour
1 c crisco shortening
1 tsp salt
1/4 c water
1 Tbsp vinegar
1 egg

Steps:

  • 1. Mix flour , salt and Crisco shortening together to make a crumb mixture.
  • 2. Beat all the wet ingredients well together and add to the crumb mixture ; blend to form a ball ; then divide and roll out to 2 pie crusts.
  • 3. You can follow any pie recipe that you are gonna be using but if you want to pre-bake the crust, after you have formed your pie dish with the crust then freeze the crust for at least 30 minutes or until chilled. This will prevent the crust from slip down the sides.
  • 4. Preheat your oven to 350°F. After the pie crust has been chilled then line the pie crust with parchment paper or wax paper. Fill at least two-thirds full with pie weights - dry beans, rice, or stainless-steel pie weights.
  • 5. Bake with weights in the pie for 20 minutes. Remove from oven, cool a few minutes and carefully remove pie weights. Poke small holes in the bottom of the pie crust with a fork and return to oven (without the weights) and cook for another 10 minutes or until the crust is golden.
  • 6. Cool completely before filling.
  • 7. NOTE : You may need to cover the edges of the pie with aluminum foil or a crust shield if your going to be putting a filled pie back in the oven to keep the edges from getting too dried out and burnt.

1 prepared pie crust
4 -5 cups sliced Granny Smith apples
1/2 cup sugar
cinnamon
3/4 cup flour
1/2 cup sugar
5 tablespoons margarine (room temperature)

Steps:

  • Slice apples into pie shell, pour the half cup sugar over the apples, sprinkle with cinnamon.
  • For the topping, mix flour and sugar. Cut in margarine until crumbly. Spread over the top of the pie. Bake at 350 degrees for 60 minutes, until topping starts to brown just slightly. Cover the edge of the crust with foil when baking. Remove after 45 minutes in the oven so it can brown slightly before finished baking.

2 cups brown sugar
2 T flour
2 cups milk
2 beaten egg yolks
pinch of salt
1 T butter
Egg whites for meringue
baked pie shell

Steps:

  • Mix brown sugar and flour together well. Add 2 cups of milk to mixture, and cook in a double boiler until luke warm. Then add beaten egg yolks. Return to double boiler, and cook until thick. Add pinch of salt and butter. Pour into baked pie shell. Add beaten egg whites to top of pie (sweeten whites slightly with approx 2 T of sugar to every white used, plus 1/4 tsp of baking powder (or cream of tartar.)) Brown meringue in slow oven (300-375-degrees for 8-10 minutes).
