Time 45m

Yield 4 to 6

Number Of Ingredients 17

1¼ pounds 90% lean ground beef
½ teaspoon baking soda
2 tablespoons unsalted butter, plus more for buns
1 medium yellow onion, finely diced
1 small red bell pepper, finely diced
3 cloves garlic, roughly chopped
¾ teaspoon salt
½ teaspoon freshly ground black pepper
1½ teaspoons smoked paprika
¾ teaspoon ground cumin
½ teaspoon dried oregano
¾ teaspoon dry mustard
1 (14-oz) can tomato sauce
2 tablespoons tomato paste
1 tablespoon Worcestershire Sauce
½ teaspoon hot pepper sauce, such as Tabasco or Frank's, or to taste
Hamburger buns

Steps:

  • In a medium bowl, using your hands, mash the beef with the baking soda. Let it sit on the counter for 20 to 25 minutes to tenderize.
  • Preheat the oven to 350°F and set a rack in the middle position.
  • Heat the butter in a large skillet over medium heat until bubbling. Add the onion, bell pepper, and garlic and cook, stirring frequently, until softened, 4 to 6 minutes.
  • Add the beef, salt, pepper, smoked paprika, cumin, oregano, and dry mustard and cook, breaking up meat with wooden spoon, until mostly brown, about 3 minutes. Add the tomato sauce, tomato paste, Worcestershire sauce, and hot sauce. Reduce the heat and simmer, uncovered, until the sauce is thickened, about 10 minutes.
  • Meanwhile, butter the inside of the buns and place on a baking sheet, butter side up. Toast in the oven until warmed through and lightly crispy, about 5 minutes.
  • Taste the sloppy Joe mixture and adjust seasonings. (If you like your Sloppy Joes sweet, feel free to add 1 teaspoon of brown sugar.) Spoon the mixture onto the toasted hamburger buns and serve.
  • Freezer-Friendly Instructions: The meat mixture can be frozen for up to 3 months and reheated in the microwave om on the stovetop until hot.

THE BEST SLOPPY JOES

The Best Sloppy Joes image

This is weeknight comfort food at its finest. We created a homemade sauce that is tangy and flavorful but also quick and easy. We used both ketchup and canned tomato sauce for lots of tomato-y zip and just a touch of brown sugar for a bit of sweetness and slight caramel finish. Green bell pepper is a key addition; it really enhances the other ingredients, elevating the flavor profile into the realm of a true sloppy joe.

SLOPPY JOES

Sloppy Joes image

This simple version of sloppy Joes, the classic sandwich served in school cafeterias and at kitchen counters across the country, comes together in about 20 minutes and can be made with ground beef, chicken or turkey. As the name suggests, they are messy, so serve with a fork and plenty of napkins.

Time 22m

Yield 6 servings

Number Of Ingredients 13

1 8-ounce can tomato sauce
1/2 cup ketchup
1 1/2 tablespoons Worcestershire sauce
1 teaspoon prepared yellow mustard
1/2 teaspoon dry mustard
1 teaspoon molasses
1 garlic clove, finely minced
1/4 teaspoon orange zest
Pinch of ground cloves
Hot sauce to taste
1 pound ground beef
1/2 small onion, finely chopped
6 whole-wheat hamburger buns, toasted if desired

Steps:

  • In a saucepan over low heat combine the sauce ingredients. Season to taste with salt and pepper. Mix well, and simmer while preparing the meat.
  • Heat a heavy nonstick or cast-iron skillet, at least 10 inches in diameter, over medium-high heat. Add the ground sirloin, and saute, stirring occasionally, for 4 to 5 minutes, or until the meat is no longer pink. Turn the meat into a strainer or colander lined with paper towels, allowing the fat to drain off.
  • Add the onion to the pan, and sauté, stirring frequently, for about 5 minutes, or until the onion is translucent. Return the meat to the pan, and add the sauce. Heat for 3 minutes, stirring occasionally. Taste and season with salt, pepper or more hot sauce, if desired. Spoon 1/2 cup of the mixture over each bun. Serve immediately.
