8 slices smoked bacon, cooked and broken into 1-inch pieces,
2 vine-ripened tomatoes, sliced, and drained on paper towels for 5 minutes

Steps:

  • Heat a large skillet over medium-low heat. Place 4 slices of bread on a cutting board and generously butter the top sides of each slice. Melt another tablespoon of the butter in the skillet; swirl around to coat the pan.
  • Lay 2 slices of bread, buttered side down, in the skillet. Put a few slices of the cheese on the bread. Lay the bacon, tomato, or ham on top of the cheese. Cover with a few more slices of cheese. Top with 2 of the remaining slices of bread, placed buttered-side up. Cook, without pressing, until the bread browns and the cheese is slightly melted, about 5 minutes. Turn the sandwiches with a spatula and add a small hazelnut-size piece of butter to the pan. Cook slowly, adjusting the heat as needed to melt the cheese completely before the sandwiches are brown, about 3 to 4 minutes more. Repeat with the other 2 sandwiches. Serve.

1/2 cup (1 stick) unsalted butter, cold, plus 1/2 cup (1 stick), at room temperature
1/4 cup all-purpose flour
1/2 cup heavy cream
10 ounces dried beef or salami, chopped into 1-inch cubes
2 tablespoons coarse black pepper
1 tablespoon ground coriander
2 tablespoons canola oil
3 large Yukon gold potatoes, sliced
16 slices Texas-style sliced bread
16 slices Muenster cheese

Steps:

  • Add the flour and 4 tablespoons of the cold butter to a pot over medium heat; stir and combine. Slowly whisk in the cream and bring to a simmer. Add the chopped meat, pepper and coriander and continue to whisk and simmer until it thickens. Turn off the heat.
  • Meanwhile, combine the oil and the remaining 4 tablespoons cold butter in a large pan over medium heat; add the potatoes. Fry, flipping occasionally, until golden brown in color. Drain the excess oil and set aside.
  • Heat a griddle over medium-high heat. Butter each side of the bread slices with the softened butter and place on the griddle until golden brown. Flip and layer on the Muenster cheese, meat gravy and potatoes. Sandwich together and fry until golden brown and the cheese is melted. Cut in half and serve immediately.

1 tablespoon finely chopped garlic
1 tablespoon Worcestershire sauce
1 teaspoon Montreal-style steak seasoning
6 slices white bread
6 slices Colby-Jack cheese

Steps:

  • Combine ground beef, parsley, garlic, Worcestershire sauce, and steak seasoning in a bowl; mix until thoroughly combined. Form into 3 evenly-sized patties.
  • Warm a nonstick griddle over medium heat. Place burgers onto the warm griddle and cook to desired doneness, 4 to 6 minutes per side. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C). Remove burgers and set aside.
  • Warm a second griddle over medium heat. Butter 1 side of each bread slice. Place a slice of bread onto the griddle, butter-side down. Add a slice of cheese, a burger, and a second slice of cheese. Top with another slice of bread, butter-side up. Repeat with remaining burgers.
  • Cook until bread is golden brown on the bottom, 3 to 5 minutes. Flip and cook until the other side is golden brown and cheese is melted, 3 to 5 minutes more.

1 tablespoon softened butter, divided
1 tablespoon prepared pesto sauce, divided
1 slice provolone cheese
2 slices tomato
1 slice American cheese

Steps:

  • Spread one side of a slice of bread with butter, and place it, buttered side down, into a nonstick skillet over medium heat.
  • Spread the top of the bread slice in the skillet with half the pesto sauce, and place a slice of provolone cheese, the tomato slices, and the slice of American cheese onto the pesto.
