6 6-ounce tuna steaks, each about 1 inch thick
2 tablespoons peanut oil
3 tablespoons butter
1/3 cup thinly sliced green onions
1/4 cup chopped cilantro
2 tablespoons finely chopped peeled fresh ginger
4 garlic cloves, chopped
8 ounces fresh shiitake mushrooms, stemmed, caps sliced
6 tablespoons soy sauce
1 1/2 cups whipping cream
3 tablespoons fresh lime juice
Lime wedges (optional)
Fresh cilantro sprigs (optional)

Steps:

  • Preheat oven to 200°F. Sprinkle 1 side of tuna steaks with pepper. Heat 2 tablespoons oil in heavy large skillet over high heat. Place tuna steaks, pepper side down, in hot oil and sear 2 minutes. Turn tuna over and continue cooking to desired doneness, about 2 minutes for rare. Transfer tuna to rimmed baking sheet; keep warm in oven.
  • Add butter, sliced green onions, cilantro, ginger and chopped garlic to same skillet and sauté until fragrant, about 30 seconds. Mix in mushrooms and soy sauce and simmer 30 seconds. Add whipping cream and simmer until sauce lightly coats back of spoon, about 3 minutes. Stir in lime juice. Spoon sauce onto plates; arrange tuna atop sauce. 4 cups pineapple juice
6 cloves garlic, chopped
2 small red chile peppers with seeds, chopped fine
2 cups chopped cilantro leaves
1 cup brown sugar
1 cup soy sauce
4 tablespoons peeled and chopped ginger root
2 teaspoons ground cumin
2 tablespoons olive oil
One 3 1/2- to 4-pound roasting chicken, giblets and neck removed for another use
2 tablespoons butter
4 cloves garlic, finely chopped
2 tablespoons ginger root, peeled and finely chopped
1/2 cup packed chopped cilantro leaves
1 teaspoon ground cumin
4 tablespoons soy sauce
1/2 cup heavy whipping cream
1 tablespoon lime juice
1 tablespoon pineapple juice
6 cups jasmine rice, prepared according to package instructions

Steps:

  • Mix pineapple juice, garlic, peppers, cilantro, brown sugar, soy sauce, ginger root, cumin, and olive oil well in large bowl. Reserve some of marinade for basting. Rinse and pat dry chicken. Add chicken to bowl, turn and baste several times, cover and refrigerate at least 12 hours or up to 24 hours, turning chicken and basting occasionally.
  • To prepare sauce, melt butter in 10 to 12-inch saute pan until sizzling. Add garlic, ginger root, cilantro, and cumin and saute for about 4 minutes or until fragrant. Add soy sauce and cook for 2 minutes, stirring frequently. Add whipping cream, and cook until slightly reduced or sauce coats the back of spoon, about 5 minutes. Remove from heat and stir in lime and pineapple juices. Can be made 2 days ahead - cover and refrigerate. Warm the sauce before serving.
  • Preheat oven to 450 degrees F. Remove chicken from marinade and place in roasting pan, just large enough to accommodate chicken.Tuck wings under chicken and baste with marinade. Place in preheated oven and roast for 15 minutes. Turn heat down to 350 degrees F and continue to roast for an additional 50 minutes, basting occasionally, or until an instant-read meat thermometer registers 180 degrees inserted into thickest part of thigh. Prepare the jasmine rice according to package instructions during the last 30 minutes of roasting. Remove chicken from oven, cover loosely with foil, and let rest for 10 to 15 minutes before slicing.
  • Serve slices of chicken over a bed of cooked jasmine rice with cilantro cream sauce drizzled over the breasts.

6 7-ounce halibut fillets, each about 1 1/2 inches thick by 2 inches wide
Olive oil
3 1/2 tablespoons minced fresh ginger
2 shallots, minced
1 tablespoon minced garlic
1 cup bottled clam juice
2/3 cup dry white wine
12 large green or red Swiss chard leaves, thick stems removed
1 cup whipping cream

Steps:

  • Brush fish with oil. Mix ginger, shallots and garlic in heavy small saucepan. Rub 1 teaspoon ginger mixture over each fish fillet. Add clam juice and wine to remaining ginger mixture in saucepan. Boil mixture until liquid is reduced to 1/4 cup, about 15 minutes.
  • Steam Swiss chard until just tender, about 30 seconds. Transfer chard to strainer and rinse with cold water. Drain.
  • Pat chard dry. Place 1 chard leaf on work surface. Place another leaf next to first, overlapping long sides. Place 1 fish fillet crosswise near 1 end of chard, leaving 2-inch border on short sides of fish. Season fish with salt and pepper. Fold 2 long sides of chard over fish, then roll up fish in chard, enclosing completely. Repeat with remaining chard and fish. (Can be made 8 hours ahead. Cover ginger mixture and fish separately and chill.)
  • Place steaming rack over boiling water in large Dutch oven. Place fish on rack. Cover; steam until cooked through, about 8 minutes. Transfer to plates.
  • Meanwhile, add cream to ginger mixture in saucepan. Boil until mixture thickens to sauce consistency, about 5 minutes. Spoon sauce around fish.

I found this recipe on the web a few years back. You can tell its not one of my experiments, no hot peppers. It is one of my favorites and I get rave reviews when I cook it for friends. It works well with mahi mahi as too, though mahi mahi shouldn't be eaten rare. Not health food, but hey, that's what Decadent Saturdays are for.

fresh ground pepper
2 tablespoons vegetable oil
2 tablespoons olive oil
1/4 cup thinly sliced green onion

3 cloves garlic, chopped
6 ounces fresh shiitake mushrooms or 6 ounces morels, stemmed,sliced

Steps:

  • Heat two tablespoons vegetable oil in a non-stick skillet over high heat.
  • Pepper one side of the tuna steaks, place pepper side down and sear for two minutes.
  • Turn tuna over and continue cooking, about two minutes for rare, four for medium.
  • Transfer tuna to plate and keep warm.
  • Add olive oil, green onions, cilantro, ginger and garlic to same skillet and saute about 30 seconds.
  • Mix in mushrooms and soy sauce and simmer 30 seconds for shiitake, 1 minute for morels.
  • Add half and half and simmer until thickened, about 3-4 minutes.
  • Stir in lime juice.
  • Spoon sauce onto plates and place tuna steak on top.
  • Garnish with cilantro and a slice of pickled ginger.

4 mahi mahi fillets
fresh coarse ground black pepper, to taste
3 tablespoons butter
1/2 cup chopped scallion
2 tablespoons finely minced fresh ginger
4 cloved garlic, chopped
8 ounces fresh shiitake mushrooms
1/3 cup soy sauce
1 1/2 cups heavy cream
3 tablespoons fresh lemon juice
5 large red potatoes
2 eggs, beaten
salt and pepper
lemon wedge (to garnish)

Steps:

  • Make the Potato Beds:.
  • Peel and cut the potatoes into uniform pieces.
  • Boil in water until done.
  • Drain and mash.
  • Add the eggs and salt and pepper and mix thoroughly.
  • Shape the mashed potatoes into 4 "beds" on a parchment paper covered baking sheet.
  • You can use a pastry bag or the back of a large spoon.
  • Bake for 20 minutes until set and browned.
  • Preheat the oven to 350 degrees F.
  • Sprinkle the mahi mahi with the black pepper.
  • Heat the oil in a large skillet, add the mahi mahi.
  • Sear for 3 minutes on one side, then turn the fish and sear the second side for 4 minutes.
  • Make the Ginger Shitake Cream:.
  • Melt the butter in a large skillet over medium heat.
  • Add the scallions, fresh ginger and garlic.
  • Saute for 30 seconds.
  • Stir in the mushrooms and soy sauce.
  • Saute for another 30 seconds.
  • Stir in the cream.
  • Bring to a boil, reduce the heat and simmer for 3 minutes, until the sauce lightly coats the back of the spoon.
  • Stir in the lemon juice.
  • To serve:.
  • Place one mahi mahi fillet on each potato bed.
  • Spoon the sauce over each piece of fish.
  • Garnish with lemon wedges.

1 cup chunky peanut butter (recommended: Boo preferred Skippy)
1/4-1/3 cup milk or half-and-half, eyeball it
1/4 cup honey, eyeball it
1/4 teaspoon cinnamon
12 ginger snaps (recommended: Midel brand, Boo liked because they were extra crunchy)

Steps:

  • Place ice cream on the counter top to get soft. (Boo always liked hers mushy.)
  • Place peanut butter, milk or half-and-half and the honey in a small skillet and warm over low heat. Stir until smooth and season the sauce with a little cinnamon. Scoop ice cream into dishes and top with peanut butter sauce and jam the ginger snaps all around the bowl, getting the edges into the ice cream and sauce.

Get all of your ingredients ready before you begin (mise en place), as the cooking goes quickly. Also, be sure to use regular full-fat whipping cream -- the flavor of the cream is key to this and low-fat substitutions won't work well. If you decide to substitute chicken breasts for the tuna, decrease the heat and increase the cooking time to thoroughly cook the chicken. Serve on a bed of baby greens, alongside Wasabi Mashed Potatoes. Perfection!

  • Grind a generous amount of pepper onto one side of tuna steaks (skip this if using chicken and see intro for instructions).
  • Add oil to the pan. When it's very hot, add the tuna steaks, pepper side down. Cook for 1-2 minutes per side, until seared but still rare in the center. Remove from the pan and keep warm on a plate, tented with foil, in a 200 degree oven.
  • In the medium-high pan where you seared the tuna (or chicken), add butter, onion, ginger and garlic. Sautee for a minute, just until the garlic becomes translucent (don't let it brown).
  • Add shiitakes and cook, without stirring, until they brown slightly. Add the soy sauce and cream. Let it cook until it thickens enough to coat the back of a spoon. Add the lime juice and cilantro.
  • Serve tuna, fish or chicken hot atop a bed of greens. Add wasabi mashed potatoes alongside. Top all with the sauce, and garnish with cilantro or chive sprigs.

1 teaspoon fresh lime juice
3/4 cup whipping cream
2 medium tomatoes, peeled,seeded,and chopped

Steps:

  • Melt butter in lg pan; saute shallots.
  • Add wine and chicken broth; warm through and reduce heat to simmer.
  • Add whipping cream and simmer gently a few more minutes.
  • Reduce heat again, add salt, pepper, ginger, and lime juice; warm through.
  • Garnish with chopped tomatoes and serve.

4 boneless skinless chicken breast halves (6 ounces each)
1/8 teaspoon salt
1/8 teaspoon pepper
2/3 cup sesame seeds
2 tablespoons peanut oil
1/2 pound sliced fresh shiitake mushrooms
4-1/2 teaspoons minced fresh gingerroot
2 garlic cloves, minced
4-1/2 teaspoons soy sauce
1-1/2 teaspoons butter
1 cup heavy whipping cream
1-1/2 teaspoons wasabi mustard
Hot cooked rice

Steps:

  • Flatten chicken to 1/2-in. thickness; sprinkle with salt and pepper. Place sesame seeds in a shallow bowl; dip chicken in sesame seeds., In a large skillet, cook chicken in oil over medium heat for 6-8 minutes on each side or until a thermometer reads 170°. Remove and keep warm., In the same skillet, cook and stir the mushrooms, ginger and garlic in soy sauce and butter for 3 minutes. Add cream and mustard; cook and stir for 6-8 minutes or until thickened. Serve sauce with chicken and rice.
