2 large cucumbers, peeled and thily sliced
1 small onion, peeled and thinly sliced
3 small roma tomatoes, thinly sliced
1/3 cup low-fat sour cream
1/4 teaspoon Dijon mustard
1 tablespoon white vinegar
2 tablespoons low-fat milk
1/2-3/4 teaspoon sugar
1 tablespoon chopped fresh parsley
2 tablespoons chopped fresh dill
1/4 teaspoon pepper
1/4 teaspoon salt, to taste

Steps:

  • Place the cucumbers, onions and tomatoes in a large bowl. Set aside.
  • In a small bowl, whisk together all dressing ingredients. Pour over salad mixture.
  • Toss to coat well.
  • Chill at least 2 hours before serving.

DRESSING:
1/4 cup sour cream
1/4 teaspoon prepared mustard

1 tablespoon white vinegar
1 tablespoon milk
1/8 teaspoon pepper

Steps:

  • In a bowl, combine cucumbers, onions, tomatoes, and parsley. Combine dressing ingredients; pour over cucumber mixture and toss gently. Cover and chill for at least 1 hour.

1/2 cup good quality sour cream, chilled
1 -2 tablespoon finely chopped fresh chives
salt & pepper, to taste

Steps:

  • Peel cucumbers and slice them paper thin (or as thinly as possible), and drain if watery.
  • In a medium bowl, mix together the sour cream and chives. Add cucumber slices and stir gently to coat.
  • Season to taste with salt (go easy on the salt) and pepper.
  • Serve immediately, or cover and chill for up to one day.

This is a very light, tasty salad, and not sweet like many cucumber salads. It's very refreshing with a tangy bite from the green onions. I used dried herbs, of course using less, and it was still very tasty. I got the recipe many years ago from a recipe board online, but do not remember the source. However, it was attributed to a man who made this for his guests at an inn he ran in Germany. I included slicing the vegetables in the approximate time.

1 big cucumber
salt
1/2 garlic clove
1 small chopped onion
2 tablespoons parsley (use a combination) or 2 tablespoons borage (use a combination)
2 teaspoons vinegar
salt
sugar
pepper
2 tablespoons salad oil
1/2 cup sour cream or 1/2 cup plain yogurt

Steps:

  • For marinade: mix all ingredients, oil comes last; mix well.
  • Then cut the cucumber to fine slices using a potato peeler.
  • Sprinkle salt on them and let it rest for 20 minutes.
  • Drain liquid released by the cucumber.
  • Mix the cucumber slices with the onion and marinade and add the herbs.
  • Variation: You can add black olives and cubes of sheep´s or goat´s cheese.

3 -4 cucumbers, thinly sliced
1 medium onion, thinly sliced
3/4 cup evaporated milk
3/4 cup sugar
about 1/4 cup vinegar (to taste)

Steps:

  • Soak the kukes and onions in salt water for 30 minutes.
  • In a small bowl, stir together the evaporated milk and sugar.
  • Add vinegar a little at a time until well blended and starts to thicken some. Add more vinegar if needed to taste for sweet/sour you prefer.
  • Squeeze the kukes and onions by hand and add to the sauce mixture. Chill until serving time.
  • Good for several days.

A traditional German favorite that I have loved since I was a child. This recipe is quick, easy, and delicious. Substitute cider vinegar for a different flavor. I prefer to leave the skins on the cucumbers for more texture and flavor, but they can also be peeled prior to slicing if desired. Flavor is best when marinated for several hours before serving.

4 slices bacon
1/2 onion, chopped
4 cucumbers, peeled & thinly sliced
4 tablespoons vinegar (can use apple cider vinegar)
1 teaspoon sugar
1 tablespoon cornstarch
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a hot skillet, fry bacon and remove from pan. Save one tablespoon of bacon grease and fry chopped onion and cucumber slices.
  • Add vinegar, sugar, cornstarch, salt and pepper. Simmer in low heat until done. Crumble in bacon.
  • Cool and refrigerate for flavors to blend. It can be serve with sandwiches, if you like.
  • UPDATE - MY PERSONAL NOTE: I made this recipe and liked the combination of flavors, except for the vinegar that is a little acid for my taste buds, so next time I will mix the cornstarch with water instead of the apple cider vinegar.

I grew up eating this salad and love it. It's a bit different than most North American cucumber salads I've seen as there is no sour cream in it, only a simple oil and vinegar dressing. Usually it's been made using only cucumbers but sometime cooked green and/or yellow beans and/or tomatoes are added. The quantity of oil and vinegar dressing may need to be adjusted if additional veggies are used.

Althogh I have tweaked the recipe just a bit from the way Grandpa made it, it is still just as delicious as the way my grandfather made it. Making it several hours before serving it gives it time to marry the flavors. It is one of my favorite salads. I can sit down and eat a bowl of this salad all by itself in no time!

2 English cucumbers peeled and thinly sliced
1/2 medium red onion sliced thinly
2 tablespoons salad oil
2 tablespoons cider vinegar
1/2 cup sour cream
1 1/2 teaspoons kosher salt
1 teaspoon granulated sugar
2 tablespoons dried chives
2 tablespoons dill weed
dried or fresh parsley to taste

Steps:

  • Place the sliced cucumbers in a bowl with lid. Add all the other ingredients and combine gently. Chill overnight, stirring once or twice. Add more salt to taste. Serve cold. The salt will draw out the water from the cucumbers and thin the dressing considerably. The dressing should be thin and tart.

kilo - cucumbers (about 2 pounds)
- fresh dill
- sugar
- kosher salt
- vinegar
- olive oil, extra virgin

Steps:

  • Peel cucumber with a vegetable peeler, peel and slice with a vegetable slicer into thin slices. Finely chop the dill and add to the beautiful cucumbers. Anything with 3 tablespoons sugar, 2 teaspoons salt, 6 tablespoons of vinegar, a little pepper and a dash of olive oil and season with infuse. Before serving, taste again.
  • This is just how she translated it to English for my grandmother.

2 large cucumbers, sliced thin
1 - onion, sliced thin
1 teaspoon(s) salt
2 - 3 tablespoon(s) sugar, or to taste
2 tablespoon(s) cider or white vinegar
dill - to taste
pepper - to taste

Steps:

  • Place cucumbers and onion in a colander and sprinkle with salt. Mix up. Let set for about 30 minutes. ( I don't always do this if in a hurry, but they are better if you don't skip this part.) If you skip the salt soak...add some salt to the dressing or salt to taste as served. Squeeze out any excess moisture and place in a bowl.
  • Mix the sour cream, sugar, vinegar, dill and pepper.
  • Pour over the cucumbers and toss to evenly coat. Best if refrigerate overnight. I sometimes sprinkle with paprika before serving. Enjoy!
