GERMAN SWEET CHOCOLATE CHIP POUND CAKE



German Sweet Chocolate Chip Pound Cake image

This is one of our favorite cakes, moist and full of flavor. The recipe comes from "The Cake Mix Doctor" book by Anne Byrn. Her recipes use cake mixes to make great desserts, with that made-from-scratch taste! A really wonderful cookbook!

1 (4oz.) bar, german sweet chocolate
1 box yellow cake mix
1 (3.4 oz) box vanilla instant pudding
1 c whole milk
1 c vegetable oil
4 large egss
1 c semi-sweet chocolate chips

Steps:

  • 1. Place rack in the center of the oven and preheat to 325'F. Spray a 10" tube pan (or three 8" loaf pans) with cooking spray, then dust with flour. Shake out excess flour and set aside.
  • 2. Break the German chocolate bar into four pieces. Grate the bar using a food processor or a hand grater until it is finely grated. (If using a food processor, insert the steel blade and drop the chocolate pieces into the processor one at a time.) Set aside. (Time-saver tip- I found out, recently, that you can also melt the chocolate, and I'm thinking this has got to be easier!)
  • 3. Place the cake mix, pudding mix, milk, oil, and eggs in a large mixing bowl. Blend with an electric mixer on low for 1 minute. Fold in the grated chocolate, and scrape down the sides of the bowl with a rubber spatula. Increase the mixer speed to medium and beat 2 minutes more scraping the sides down again if needed. Fold in the chocolate chips. The batter should look well blended and the chocolate chips should be evenly distributed. Pour the batter into prepared tube pan (or loaf pans), smoothing out with the rubber spatula. Place pan in oven.
  • 4. Bake until golden brown and the center springs back when lightly pressed with your finger, 55-58 minutes for tube pan (50-52 minutes for loaf pans). Remove from the oven and place it on a wire rack to cool for 20 minutes for tube pan (5-8 minutes for loaves).
  • 5. Run a long, sharp knife around the edge of the cake and invert it onto a rack, then invert it again onto a cake/serving plate so it is right side up. Allow to cool 30 minutes more. Dust with confectioner's sugar if desired.

1 cup shortening
4 eggs
2 teaspoons vanilla extract
2 teaspoons butter flavored extract
1 cup buttermilk
3 cups sifted all-purpose flour
½ teaspoon baking soda
1 teaspoon salt
2 cups German sweet chocolate chips

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Grease and flour 2 - 9 inch loaf pans. Sift flour, baking soda and salt together and set aside.
  • In a large bowl, cream shortening and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla and butter flavoring. Add the flour mixture, alternating with the buttermilk, and mix well. Finally, stir in the chocolate chips.
  • Divide batter into 2 - 9 inch loaf pans. Bake at 300 degrees F (150 degrees C) for 1 hour and 30 minutes, or until a toothpick inserted into the center of cake comes out clean.

1 cup vegetable shortening
2 cups sugar
4 eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
1/2 teaspoon baking soda
1 teaspoon salt
1 cup buttermilk
4 ounces unsweetened baking chocolate, melted
2 unsweetened chocolate squares
2 tablespoons butter
1 cup confectioners' sugar
2 -3 tablespoons water

Steps:

  • Preheat oven to 300 degrees.
  • Grease and flour a 10-inch tube pan or bundt pan.
  • Cream shortening at medium speed of mixer.
  • Gradually add sugar until well mixed.
  • Add eggs one at a time, beating well after each egg.
  • Blend in vanilla extract.
  • Combine flour, baking soda and salt.
  • Add alternately with buttermilk to the creamed mixture.
  • Continue mixing well.
  • Mix in the melted chocolate last.
  • Pour batter into prepared pan and bake for about 90 minutes or until cake tests done.
  • Cool cake in pan on rack for about ten minutes, then turn out and let cake cool completely.
  • You may sprinkle with confectioners sugar or top with chocolate glaze.
  • For glaze, microwave chocolate and butter together, in a medium sized bowl, until melted.
  • Mix in confectioners sugar and just enough water to make a smooth glaze.
  • Pour glaze over cake and let trickle down the sides.

I got this recipe from our local band foundation cookbook. One of my coworkers told me she had it before and how good it was. I made this and took it to a family get together and everyone wanted the recipe.

1 (18.25 oz) german chocolate cake mix
1 (15 oz) can coconut pecan icing
4 eggs
1/2 cup oil
1 cup water

Steps:

  • 1. Preheat oven to 350*. Grease and flour a 12 cup tube pan or bundt pan. Mix all ingredients (including the icing) in mixer at medium speed for 2 minutes. Pour into prepared pan and bake 55-60 minutes. Remove from oven to wire rack and allow to cool 10 minutes. Invert onto serving plate and dust with powdered sugar.
  • 2. This makes a large cake so be sure to use the large 12 cup pan. Very moist and delicious.

This has always been one of my favorite pound cakes. I got this recipe from a friends Mom who would make 2 of these at a time. We would eat warm slices of this pound cake with a glass of cold milk. Enjoy.

2 c sugar
1 c butter
4 eggs
2 tsp vanilla extract
2 tsp butter flavoring
1 c buttermilk
3 c sifted all purpose flour
1/2 tsp baking soda
1 tsp salt
1 pkg german sweet chocolate

Steps:

  • 1. Preheat your oven to 300F. Grease and flour a bundt pan and set aside. In the bowl of your standing mixer, cream sugar & butter well, then add eggs one at a time letting it blend after each egg addition. Then add flavors and buttermilk blend together.
  • 2. Remove wrapper from chocolate and melt the chocolate in the top of a double broiler over hot water. * I have also placed the chocolate in a small ceramic dish in the oven a couple of minutes to soften, but watch it.
  • 3. Sift together the flour, baking soda, and salt and blend. Then add flour mixture to the buttermilk mixture, Then add the softened german chocolate to the batter. Blend well. Pour into Prepared bundt pan. Bake 1 hour 30 minutes or until cake tests done in the middle.
  • 4. Let cool 5 minutes then remove cake from pan, and place under a tight fitting cake cover and leave covered until cold. This is delicious warm as well! Just letting ya know! 8) Enjoy!

1 (18 1/4 ounce) package German chocolate cake mix
1 (4 ounce) package chocolate fudge instant pudding mix
1 cup sour cream
1/2 cup water
1/2 cup oil
4 eggs
1 1/2 cups miniature chocolate chips
1/2 cup miniature chocolate chip
2 tablespoons milk

Steps:

  • Preheat oven to 350. Grease and flour Bundt cake pan.
  • Place all cake ingredients except chocolate chips in large mixing bowl. Beat as directed on the cake mix box.
  • Stir in chocolate chips.
  • Pour batter into prepared pan.
  • Bake for 58-62 minutes, or until cake tests done.
  • Remove and cool for 20 minutes, then run a long, sharp knife around the edge of the cake and turn it out onto a wire rack to cool for about 20 more minutes.
  • Place glaze ingredients in microwaveable glass measuring cup. Microwave on 50% power for 1 minute, then stir until chips are melted and the mixture is smooth.
  • Place cake on serving platter and spoon the warm glaze over it. Let sit for at least another 10 minutes before slicing.

This is a great switch on dark chocolate once in awhile. You can use the glaze shown below, or just hit it with some powdered sugar. I think that the cinnamon is a welcome addition. Enjoy! I take my baking chocolate squares out of the box they come in and put them in zippered bags, but I think the name of the chocolate is "German's Sweet Chocolate."

1 (4 ounce) package sweet baking chocolate
1 cup butter or 1 cup margarine, softened
1 3/4 cups sugar
3 eggs
1 egg yolk
2 3/4 cups flour
1/2 teaspoon baking soda
1 teaspoon salt
3/4 teaspoon cream of tartar
1/4 teaspoon ground cinnamon
3/4 cup milk
1 teaspoon vanilla extract
1 (4 ounce) package sweet baking chocolate
1 tablespoon butter or 1 tablespoon margarine
1 egg white
1 cup sifted powdered sugar
1 -2 tablespoon water

Steps:

  • Grease and flour a 10-inch tube pan. Line bottom of pan with waxed paper. Set aside.
  • Place chocolate in top of a double boiler; bring water to a boil. Reduce heat to low; cook until chocolate melts. Let cool.
  • Cream butter; gradually add sugar, beating well at medium speed of an electric mixer. Add eggs and yolk, one at a time, beating well after each addition. Add chocolate, mixing well.
  • Combine flour and next 4 ingredients; add flour mixture to chocolate mixture alternately with milk, beginning and ending with flour mixture. Mix after each addition. Stir in vanilla. Pour batter into pan. Bake at 350°F for 1 hour and 5 minutes or until a wooden toothpick inserted in center comes out clean. Cool in pan 15 minutes; remove from pan, and let cool on a wire rack. Pour sweet chocolate glaze over top of cake, if using.
  • For the glaze:.
  • Combine chocolate and butter in top of a double boiler; bring water to a boil. Reduce heat to low; cook until chocolate melts. Cool.
  • Beat egg white (at room temperature) at high speed of an electric mixer 1 minmute or until stiff peaks form. Gradually add powdered sugar, beating until stiff peaks form and sugar dissolves,(2 to 4 minutes).
  • Fold chocolate mixture into egg whites. Add water, stirring until smooth.

1 cup margarine or 1 cup butter, softened
2 cups flour
1 (4 ounce) package German chocolate
2 cups sugar
1/2 cup water
1 teaspoon vanilla
1 teaspoon baking soda
1 cup buttermilk
1/4 teaspoon salt
4 large egg whites
4 large egg yolks
coconut pecan frosting

Steps:

  • Preheat oven to 200°C.
  • Line the bottom of two round cake pans with wax paper.
  • Melt the chocolate squares until they are completely melted. Stir well.
  • Mix flour, baking soda and salt; set aside.
  • Beat margarine (butter) and sugar in large bowl with electric mixer on medium speed until light and fluffy.
  • Add egg yolks, 1 at a time, beating well after each addition.
  • Stir in chocolate mixture and vanilla. Add flour mixture alternately with buttermilk, beating after each addition until smooth.
  • Beat egg whites in another large bowl with electric mixer on high speed until stiff peaks form. Gently stir into batter.
  • Pour into prepared pans.
  • Bake 30 minutes or until cake springs back when lightly touched in center. Immediately run spatula between the cake and sides of the pan.
  • Cool 15 minutes and remove from the pan. Remove wax paper. Cool completely on wire racks.
  • Spread Coconut-Pecan Frosting between layers and over top of cake.

This is an old recipe from my mother's treasure trove. It is a wonderfully simple and delicious cake. As you know, if you follow any of my recipes, my mother was a very traditional cook, so some of the directions are of the old school. I have modernized somewhat, but still like to use her instructions for the sake of authenticity. Feel free to upgrade to suit your methods of mixing and baking.

1 bar - (4 oz) baker's german chocolate
1 cup(s) butter, softened
2 cup(s) granulated sugar
4 large eggs
2 teaspoon(s) pure vanilla extract
1 cup(s) buttermilk
3 cup(s) flour

1 teaspoon(s) salt

Steps:

  • Sift flour, baking soda and salt together and set aside. Grease and flour tube or bundt pan and set aside. Preheat oven to 300º
  • Place chocolate in microwave safe bowl and heat for 10-15 seconds (just until partially melted). Set aside.
  • Place softened butter in large mixing bowl and beat at medium speed until fluffy. Continue beating while you add the sugar gradually.
  • Add eggs one at a time while you continue beating. Add the vanilla extract and mix well.
  • Continue beating as you add flour mixture and buttermilk gradually, beginning with flour and ending with flour.
  • WHEW - ARE YOUR ARMS GETTING TIRED YET? YOU'RE ALMOST DONE ♥♥♥
  • When flour and buttermilk have been well blended into butter mixture, turn beater down to low and gradually blend in chocolate.
  • Transfer to pan and bake at 300º for about 1-1/2 hours (until toothpick stuck in densest part of cake comes out clean). Let rest in pan for about 5 minutes, then turn out onto serving dish. #1 Option - want to coat with a glaze, an easy one follows. #2 Option - if you want to serve "as is" with just ice cream, cover and let it cool completely before cutting.
  • Easy glaze: 1/4 cup lemon or orange juice 1-1/2 cup sugar Place in saucepan and heat over low temperature just until sugar is dissolved and mixture is well blended. Pour over warm cake.

1 box Pillsbury Yellow Cake Mix (the one that uses oil)
4 Eggs
1/2 cup water
1/2 cup Wesson oil
1 small instant vanilla pudding mix
1 cup sour cream
1 bar german chocolate, grated
1 cup chocolate chip morsels

Steps:

  • Mix the first five ingredients together and beat for 3 minutes. Add in sour cream and beat for an additional minute. Stir in grated German chocolate bar and chocolate chip morsels. Pour into Bundt pan and bake at 350 degrees until golden brown. Approximately 55 minutes.
