3 dozen hard shelled clams, well scrubbed
1 tablespoon cornmeal
2 tablespoons olive oil
8 cloves garlic, peeled & minced
1/4 cup water
1/4 cup wine
1/4 cup parsley, chopped
salt & pepper

Steps:

  • Discard any clams that are not firmly shut.
  • Place them in a bowl of cold water and sprinkle the cornmeal on the water, refrigerate for 1 1/2 hrs Drain& scrub the clams again under cold running water.
  • Heat the olive oil in a dutch oven or other heavy pot that has a firm fitting lid, throw in the garlic and saute for 5 minutes. Turn up the heat and pour in the water & wine.
  • Add clams close the lid, steam the clams for about 6 minutes, shake the pot a few times to redistribute the clams- do not remove the lid. Remove the clams with a slotted spoon, discard any clams that did not open Add the parsley, salt& pepper to the broth.
  • To serve, place the clams in a shallow bowl & pour the broth over them.

Large pinch of saffron
2 teaspoons extra-virgin olive oil
4 cloves garlic, minced
2 large shallots, finely chopped
1/2 cup dry white wine
3 dozen littleneck clams
1 tomato, seeded and cut into 1/4-inch dice
3 tablespoons chopped fresh flat-leaf parsley
Pinch of freshly ground pepper

Steps:

  • Crumble saffron into 1 cup of boiling water. Set aside to steep.
  • Heat olive oil in a large, shallow saucepan over medium heat. Add garlic and shallots, and cook until they begin to soften, about 3 minutes. Add wine, and stir to loosen any bits from pan. Add reserved saffron broth, and bring to a boil. Reduce to a simmer, and add clams, chopped tomato, and half the chopped parsley. Stir to combine. Cover, and let steam until clams are opened, 10 to 12 minutes. Sprinkle with remaining parsley and pepper, and serve immediately.

These beautiful clams are strongly flavored with the same kind of garlicky emerald-green butter that's used on escargots, also known as snail butter. It's just three ingredients - butter, garlic and parsley - so how you handle them matters: For an intense green color, use a food processor to chop the parsley as finely as possible. This is meant to be a small first course, just four or five clams per person, but feel free to increase the quantities for larger servings or to serve as a main course.

1/2 cup unsalted butter (1 stick), softened
1 cup roughly chopped parsley, leaves and tender stems
1 or 2 small garlic cloves, grated or minced
Kosher salt and black pepper
1 tablespoon extra-virgin olive oil
1 cup chopped leeks (from 2 medium leeks), white and light green parts only
24 littleneck clams, scrubbed and rinsed (about 2 to 3 pounds)
1 1/2 cups dry white wine
1/2 teaspoon grated lime zest
2 tablespoons lime juice
Lime wedges, for garnish

Steps:

  • Make the garlic butter: Combine butter, parsley and garlic in a food processor. Whiz until bright green and well incorporated, about 1 minute. Season lightly with salt and pepper. (You may make the garlic butter in advance and refrigerate it for up to 2 days or freeze for up to 2 weeks, but it tastes best freshly made.)
  • Set a wide, deep skillet or Dutch oven over medium-high heat, add olive oil and swirl to coat. Add leeks, stir to coat, and cook for 30 seconds, then add clams and wine.
  • Turn heat to high, cover and cook for 5 to 8 minutes, until all clams have opened. With a slotted spoon or tongs, transfer clams to individual bowls.
  • In the same skillet, over medium heat, add lime zest, lime juice and butter, and let simmer briefly, about 30 seconds, until warmed through. Pour sauce over clams, garnish with lime wedges and serve.

8 ounces andouille or smoked sausage, sliced
1 shallot, thinly sliced
2 cloves garlic, chopped
1/8 teaspoon crushed red pepper
1 cup dry white wine
1/3 cup coconut milk
1 tablespoon salted butter
1 teaspoon kosher salt
1/4 teaspoon black pepper
1/8 teaspoon ground ginger
1/8 teaspoon ground turmeric
1 pound clams, shells scrubbed
1 tablespoon lime juice
3 sprigs lemon thyme or thyme, leaves stripped
Spicy Garlic Bread, recipe follows
One 12-ounce loaf French bread
1/4 cup unsalted butter, softened
3 cloves garlic, minced
1/4 teaspoon crushed red pepper
Pinch kosher salt

Steps:

  • Heat the oil in a large skillet over medium heat. Add the sausage and cook, stirring often, until golden brown, about 5 minutes. Drain on paper towels, reserving the drippings in the skillet. Place the sausage in a large serving bowl.
  • Add the shallots to the skillet; cook, stirring often, until translucent and tender, 3 to 4 minutes. Stir in the garlic and crushed red pepper; cook for 1 minute. Add the wine, stirring and scraping to loosen the browned bits from the bottom of the skillet. Stir in the coconut milk, butter, salt, pepper, ginger and turmeric. Add the clams, cover the skillet, and steam until the clams open, 6 to 7 minutes.
  • Transfer the clams to the bowl with the sausage. Stir the lime juice into the broth and pour over the clams and sausage. Sprinkle with the lemon thyme.
  • Serve immediately with Spicy Garlic Bread.
  • Preheat the oven to 350 degrees F. Cut the bread in half lengthwise through the top of the loaf without cutting all the way through to the bottom. Cut the bread crosswise into 1-inch slices without cutting all the way through to the bottom.
  • Stir together the butter, garlic, crushed red pepper and salt. Spread over the bread and between the slices.
  • Place the loaf on a baking sheet and bake until golden brown, 5 to 7 minutes. Serve warm.

2 lbs littleneck clams (or other small clam)
1 (12 ounce) bottle beer (something light like Sam Adams Summer Ale)
2 large garlic cloves, smashed
1/2 lemon, sliced into wedges
2 tablespoons butter
1 tablespoon Old Bay Seasoning
fresh ground pepper
salt

Steps:

  • Clean clams by sprinkling with corn meal, covering with cold (iced) water, and letting sit for 1-1 1/2 hours. Drain, scrub, and rinse before cooking.
  • Combine all ingredients, except clams, in a large pot.
  • Bring to slow boil over medium heat.
  • Add clams, turn up heat to medium-high, and cover.
  • Cook for 5-6 minutes, until shells are wide open.
  • Discard any clams that do not open with the others, this means they are bad.
  • Serve with broth (either poured over clams in a large bowl or for dipping in smaller bow(s). (strain through cheesecloth, if desired, to remove any remaining grit.).

½ teaspoon chicken bouillon granules, or to taste
¼ cup water
¼ cup dry white wine
1 ½ pounds clams in shell, scrubbed
¼ cup chopped fresh parsley
salt and ground black pepper to taste

Steps:

  • Heat olive oil in heavy pot over medium-low heat. Add garlic and bouillon; saute for 5 minutes. Increase heat and add water and wine.
  • Add clams and cover with a glass lid. Steam until clams open, shaking to pot gently to redistribute the clams, about 6 minutes; do not open the lid.
  • Use a slotted spoon to remove clams to a serving bowl; discard any that did not open.
  • Add parsley, salt, and pepper to the broth. Pour broth over the clams and serve.

1 pound Mussels
1 pound Razor Clams
1 pound Quahogs
1 tablespoon olive oil
3 sprigs of thyme
1 leek, sliced into thin half rings
3 garlic cloves, minced
Sea salt and fresh ground black pepper to taste
1 bottle of Ale
1 to 3 tablespoons butter, to taste
1 tablespoon cilantro
juice from 1/2 lemon
1 teaspoon Dijon mustard
Crusty bread, for serving.

Steps:

  • 1. clean and scrub all of your shell fish under cold running water removing the beards. 2. In a soup pot, heat olive oil. Sauté leeks for about minute and a half on medium heat then add garlic and thyme before the leeks start to brown. Add your garlic and salt & pepper, continue sautéing until the edges of the leaks get a little dark. Careful not to burn your garlic. It should take around 4 minutes or so. Add the bottle of ale and bring to a simmer then add the clams and mussels. Steam them for around 7 to 10 minutes, stirring occasionally. Remove clams and mussels to a large bowl, leaving behind the liquid. Throw away any broken or unopened ones. 3. Add the butter, cilantro, lemon juice and mustard and stir until the butter is melted. Add a little more butter if the liquid is bitter. Pour the sauce over your calms and mussels and serve with bread.

36 littleneck clams (I make about 3 dozen for 2 people)
6 -8 minced fresh garlic cloves
2 teaspoons thyme
1 tablespoon crushed red pepper flakes
white wine
3 tablespoons olive oil

Steps:

  • Heat olive oil in large pan (use enough to lightly coats bottom -- about 3 TBSP).
  • Saute garlic until a little soft (DO NOT let it brown).
  • Place clams in pan on top of oil & garlic (try to place in single layer, but can be double on top of each other).
  • Add enough white wine to barely cover/meet the middle of the clams.
  • Add crushed red pepper and thyme (you can change the amounts to your liking -- I usually make it pretty spicy).
  • Cover with a tight lid and steam until all clams have opened (I use a clear glass top so I can watch them and not have to take the lid off, but you don't have to).
  • Poor into large bowl and serve.
  • Enjoy with some crusty bread for dipping in the sauce.

2 green garlic bulbs, white and pale-green parts only, or 2 garlic cloves, thinly sliced
1/2 cup dry white wine
1 cup heavy cream
1 tablespoon fresh lemon juice
4 pounds Manila or littleneck clams, scrubbed
1 (15.5-ounce) can chickpeas, rinsed
1/2 cup crème fraîche
1/4 cup loosely packed dill
1/4 cup loosely packed tarragon leaves
Kosher salt, freshly ground pepper
3 (2x1-inch) strips lemon zest, cut lengthwise into thin strips
Grilled or toasted bread (for serving)

Steps:

  • Heat oil in a large skillet over medium. Cook garlic, stirring, until beginning to soften, about 2 minutes. Add wine, bring to a boil, and cook until reduced by half, about 3 minutes. Stir in cream and lemon juice. Add clams and chickpeas and increase heat to medium-high. Cover and cook, shaking occasionally, until clams open, about 5 minutes; discard any that don't open. 3/4 cup coarsely chopped fresh coriander
1/4 teaspoon pepper
crusty bread as an accompaniment

Steps:

  • In a heavy large wide bottomed kettle combine the boiling water, the wine and the oil and bring the mixture to a boil. Add the calms and steam them, covered over moderated heat for 5 minutes. Sprinkle the clams with the garlic, the parsley, the coriander and the pepper and steam them covered for 5 to 10 minutes more or until they have opened. Stir the clams gently, discard any unoopened ones and serve them in largew soup plates with some of the liquid and the bread.

5 tablespoons Unsalted butter
1 tablespoon Garlic, minced
1 cup White wine
1 tablespoon Lemon juice

Steps:

  • In a large skillet that has a lid melt 2 1/2 tablespoons of the butter over medium heat. Add garlic and cook, stirring constantly, until fragrant (about 30 seconds).
  • Add wine and lemon juice. Bring to a boil.
  • Add clams and remaining butter. Cover and steam until clams have opened (about 7-8 minutes). Occasionally shake skillet while steaming.
  • Discard any clams that do not open. Sprinkle evenly with parsley and garnish with lemon wedges, if desired. Serve with a French baguette or over a bed of cooked pasta.

4 lbs clams in the shells for steaming
6 cups water
1/3 c white vinegar
1/2 c boiling water
GARLIC AND HERB BUTTER SAUCE
1/2 c butter (do not use margarine)
1 t mixed herbs (optional) (like basil, oregano,thyme,chives)
2 teaspoons lemon juice
2 cloves garlic, crushed

Steps:

  • 1. Go thru the clams and remove any open clams, (these clams are dead) and remove any broken shelled clams.
  • 2. Put remaining good clams in a large bowl and cover with the 6 cups water and vinegar. Allow to stand for about 30 minutes. Drain clams in colander and scrub them with cold water.
  • 3. put clams in steamer with boiling water. (or use dutch oven with an inch of boiling water in it and cover it tightly) Steam clams for 6 to 8 minutes. Clams need to open at least an inch. Remove clams that open from steamer as they open up . Throw away any clams that do not open after this time period. Serve hot with the garlic and herb butter sauce
  • 4. Garlic and herb butter sauce:Melt butter in skillet over medium heat.
  • 5. Stir in lemon juice, herbs (if desired) and crushed garlic. Serve in small bowl along side of clams for dipping
