8 oz ramen noodles preferably fresh (or spaghetti noodles)
2 tbsp low-sodium soy sauce
2 tbsp olive oil
1 tbsp sesame oil
5 garlic cloves (minced)
4 green onions (chopped)

Steps:

  • Cook the fresh or dry noodles by following the instructions on the package. Drain and set aside.
  • Heat the pan up to medium high.
  • Add oil and wait 30-45 seconds.
  • Add minced garlic and cook for 1 minute or until fragrant.
  • Turn up the heat to high. Add green onions and cook for 10 seconds.
  • Add soy sauce, sesame oil and mix.
  • Add cooked noodles and mix well. Remove the pot from the heat.

8 ounces noodles (angel hair or spaghetti)
4 tablespoons butter
2 scallions, finely chopped
5 garlic cloves, minced
1 -2 tablespoon brown sugar
2 tablespoons soy sauce

Steps:

  • Cook pasta according to package directions. Drain and rinse.
  • In a heavy skillet over medium heat, melt butter.
  • Add scallions and garlic.
  • Stir and cook without browning the garlic.
  • Cook until the garlic smell is fragrant and filling the room (about 5 minutes).
  • Add brown sugar and soy sauce and cook for another minute.
  • Increase the heat a bit and throw in the noodles.
  • Quickly saute the noodles until they are all coated with the garlicky butter mixture.
  • Serve immediately.
  • Garnish with additional scallions if desired.

3-4 packages ramen noodles or instant noodles (or use pasta noodles, udon noodles, yakisoba noodles, etc. Whatever you want.)
6 tbsp peanut or vegetable oil
4-5 stalks scallions (sliced)
½ tsp salt
2 tbsp minced garlic
1 tbsp soy sauce (low sodium)
2 tbsp oyster sauce

Steps:

  • Bring a pot of water to a boil and cook your ramen noodles 1 minute under the instructions on the package. Mine cooks in 4 minutes so I cook it to 3 minutes. Drain and set aside.
  • Add oil into a skillet or a wok on medium-high heat. Once the oil is hot (slightly shimmer-y) add in the green onions. Stir the green onions in the oil until the colour has changed and they start looking toasty.
  • Add in a pinch of salt.
  • Add in minced garlic and continue to stir until the green onions and garlic are fragrant.
  • Add in the cooked ramen noodles.
  • Add in the soy sauce and oyster sauce.
  • Toss to coat the noodles evenly with the garlic scallion oil.
  • Serve with more green onions as a garnish if desired.
