ITALIAN MEATLOAF WITH GARLIC HERB GLAZE

1 1/2 pounds ground meatloaf mix
1 cup plain dry breadcrumbs
3/4 cup shredded mozzarella
1/2 cup drained and chopped sundried tomatoes packed in oil
1/4 cup grated Parmesan
2 tablespoons chopped fresh flat-leaf parsley
1 tablespoon chopped fresh basil
2 teaspoons chopped fresh oregano
2 teaspoons Worcestershire sauce
2 large eggs, lightly beaten
1 medium onion, grated
1/2 cup ketchup
2 cloves garlic, finely grated
Kosher salt and freshly ground black pepper
2 teaspoons balsamic vinegar
2 teaspoons light brown sugar
1/2 teaspoon Italian seasoning

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
  • Combine the meatloaf mix, breadcrumbs, mozzarella, sundried tomatoes, Parmesan, parsley, basil, oregano, Worcestershire, eggs, onion, 1/4 cup of the ketchup, half of the garlic, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large bowl. Use your hands and mix together until combined well.
  • Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf, about 9-by-5-inches. Bake the meatloaf for 30 minutes.
  • Meanwhile, stir together the vinegar, brown sugar, Italian seasoning, the remaining 1/4 cup ketchup and garlic in a small bowl. Brush the top and sides of the meatloaf all over with the garlic-herb glaze. Continue to bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.

1 lb lean ground beef
1 lb lean ground turkey
2 eggs
1/4 c bread crumbs
1/2 tsp oregano
1/2 tsp basil
1/2 tsp thyme
1-2 minced garlic cloves
1 small minced onion
1/2 tsp salt
1/4 tsp pepper
1/2 c grated parmesan cheese
1/2 c marinara pasta sauce
1/2 c italian cheese mix

Steps:

  • 1. Combine meats, seasonings, eggs, bread crumbs, garlic, and onions. Don't over handle, but combine. Place in a greased loaf pan and form a loaf. Top with sauce and then place on a baking sheet and bake in an oven preheated to 350, for 45 minutes-60 minutes. Remove and add the cheese on top and place back in the oven until it melts. Let rest 5-10 minutes before serving.

Ground veal and pork, provolone, pecorino and Parmesan mingle with herbs, broccoli rabe and bread crumbs in what is essentially a sliceable meatball. It is doused with tomato sauce and baked until bubbly, aromatic and mouthwatering.

1 pound ground veal, or substitute ground beef or turkey
1 pound ground pork
2 teaspoons kosher salt
1/2 teaspoon black pepper
Healthy pinch of red-pepper flakes
1 teaspoon crushed fennel seed
1/8 teaspoon nutmeg
1 cup dry bread, cut in 1/2-inch cubes, soaked in 1 cup milk until softened
2 eggs, beaten
3 tablespoons chopped parsley
1/2 teaspoon dried oregano
5 ounces cooked broccoli rabe or spinach, blanched, squeezed dry and chopped (about 3/4 cup)
1 cup pitted green olives, roughly chopped
1 ounce grated Parmesan (about 1 cup)
5 ounces provolone, cut in 1/4-inch dice (about 1 cup)
5 bay leaves
4 tablespoons olive oil
1 cup diced onion
1 whole garlic clove
Salt, to taste
2 1/2 cups tomato purée
1 1/2 cups crushed tomatoes
Pinch of red-pepper flakes
1 basil sprig
1 ounce grated pecorino (about 1 cup)
4 ounces grated provolone (about 3/4 cup)
1/2 cup dry bread crumbs
Basil leaves, for garnish (optional)

Steps:

  • Put veal and pork in a large mixing bowl. Add salt, black pepper, red pepper, fennel seed and nutmeg. Knead mixture with hands to incorporate.
  • Add soaked bread with milk, eggs, parsley, oregano, broccoli rabe, olives, Parmesan and provolone. Mix again with hands and knead to make sure all ingredients are distributed evenly. Pat mixture into a free-form loaf and place in a 9-by-13-inch baking dish. Press bay leaves on top. You may complete this step several hours, or a day in advance, of baking.
  • Make tomato sauce: Put olive oil in a nonreactive pan over medium heat. Add onions, garlic clove and a little salt, then cook, stirring, until translucent, about 8 to 10 minutes. Add tomato purée, crushed tomatoes, red-pepper flakes and basil sprig. Simmer for 10 minutes. Taste and adjust seasoning. Sauce may be made in advance, if desired.
  • Heat oven to 400 degrees. Spoon sauce over meatloaf, letting it spill over into the baking dish to surround loaf. Sprinkle top of loaf with grated pecorino and provolone, then sprinkle with bread crumbs.
  • Bake at 400 degrees for 30 minutes, then cover, reduce heat to 350 and cook for 30 to 45 minutes more, until internal temperature is 150 degrees. Let rest at least 10 minutes before slicing. Top each serving with a good spoonful of sauce and garnish with basil leaves, if using.

1 carrot, coarsely chopped
1 rib celery, coarsely chopped
½ onion, coarsely chopped
½ red bell pepper, coarsely chopped
4 white mushrooms, coarsely chopped
3 cloves garlic, coarsely chopped
2 ½ pounds ground chuck
1 tablespoon Worcestershire sauce
1 egg, beaten
1 teaspoon dried Italian herbs
2 teaspoons salt
1 teaspoon ground black pepper
½ teaspoon cayenne pepper
1 cup plain bread crumbs
1 teaspoon olive oil
2 tablespoons brown sugar
2 tablespoons ketchup
2 tablespoons Dijon mustard
hot pepper sauce to taste

Steps:

  • Preheat the oven to 325 degrees F.
  • Place the carrot, celery, onion, red bell pepper, mushrooms, and garlic in a food processor, and pulse until very finely chopped, almost to a puree. Place the minced vegetables into a large mixing bowl, and mix in ground chuck, Worcestershire sauce, and egg. Add Italian herbs, salt, black pepper, and cayenne pepper. Mix gently with a wooden spoon to incorporate vegetables and egg into the meat. Pour in bread crumbs. With your hand, gently mix in the crumbs with your fingertips just until combined, about 1 minute.
  • Form the meatloaf into a ball. Pour olive oil into a baking dish and place the ball of meat into the dish. Shape the ball into a loaf, about 4 inches high by 6 inches across.
  • Bake in the preheated oven just until the meatloaf is hot, about 15 minutes.
  • Meanwhile, in a small bowl, mix together brown sugar, ketchup, Dijon mustard, and hot sauce. Stir until the brown sugar has dissolved.
  • Remove the meatloaf from the oven. With the back of a spoon, smooth the glaze onto the top of the meatloaf, then pull a little bit of glaze down the sides of the meatloaf with the back of the spoon.
  • Return meatloaf to oven, and bake until the loaf is no longer pink inside and the glaze has baked onto the loaf, 30 to 40 more minutes. An instant-read thermometer inserted into the thickest part of the loaf should read at least 160 degrees F (70 degrees C). Cooking time will depend on shape and thickness of the meatloaf.

  • Preheat the oven to 350 degrees. Lightly grease a loaf pan with cooking spray, set aside. In a large bowl, combine the ground turkey and beef, eggs, breadcrumbs, thyme, oregano, basil, garlic, onion, salt, pepper and Parmesan cheese. To not over handle the mixture otherwise it will get tough. Place the mixture in the greased loaf pan and form into a loaf. Top the meatloaf with pasta sauce. 1 ½ pounds beef cube steak
1 onion, sliced into thin rings
1 green bell pepper, sliced in rings
1 cup Italian seasoned bread crumbs
½ cup grated Parmesan cheese
2 tablespoons olive oil
16 ounces Classico® Tomato and Basil Sauce
½ cup shredded mozzarella cheese
12 ounces angel hair pasta
2 teaspoons minced garlic
¼ cup butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cut cube steak into serving size pieces. Coat meat with the bread crumbs and parmesan cheese. Heat olive oil in a large frying pan, and saute 1 teaspoon of the garlic for 3 minutes. Quick fry (brown quickly on both sides) meat. Place meat in a casserole baking dish, slightly overlapping edges. Place onion rings and peppers on top of meat, and pour pasta sauce over all.
  • Bake at 350 degrees F (175 degrees C) for 30 to 45 minutes, depending on the thickness of the meat. Sprinkle mozzarella over meat and leave in the oven till bubbly.
  • Boil pasta al dente. Drain, and toss in butter and 1 teaspoon garlic. For a stronger garlic taste, season with garlic powder. Top with grated parmesan and parsley for color. Serve meat and sauce atop a mound of pasta! HINT: make the meat ahead of time, and refrigerate over night, the acid in the tomato sauce will tenderize the meat even more. If you do this, save the mozzarella till the last minute.

This meat loaf is so flavorful, but doesn't require endless ingredients! It is simple and soooo good. I almost always have the ingredients on hand straight from the pantry. My family loves it, it tastes even better leftover, and it makes the house smell delicious! Can be frozen for OAMC. I have adjusted the breadcrumbs per the reviews, the key is to use only as much as you need to make a moist dough. If your ground beef is very low in fat, like sirloin, you will need fewer breadcrumbs, however higher fat beef, like chuck, will absorb a larger amount of breadcrumbs.

1/2-1 cup seasoned bread crumbs
5 tablespoons grated dry parmesan cheese (Romano is a good choice, also)
5 tablespoons minced parsley (I use dried to save effort)

  • Add the meat and use a fork to mix the ingredients uniformly.
  • Add the eggs and knead it with your hands until a "dough" ball forms, it should hold its shape and not be too dry and crumbly (add some water) or too sticky sloppy (add more bread crumbs).
  • Mold the meat mixture into the loaf pan and top with a layer of ketchup as desired.
  • Bake for 70 minutes. Slices best when cooled and tastes even better reheated as leftovers!
  • For OAMC: Slice cooled loaf and flash freeze slices on a cookie sheet. Once frozen, store in a freezer bag or container. To reheat: remove as many slices as necessary and reheat in microwave.
