Ratatouille-Style Garden Vegetable Sauce and Fusilli

Number Of Ingredients 32

1/4 cup EVOO Extra Virgin Olive Oil
1 cubanelle pepper
seeded and chopped
1 red bell pepper
seeded and chopped
1 small zucchini
halved lengthwise
seeded and chopped into a fine dice
1 firm eggplant
peeled and finely diced
1 carrot
peeled and finely chopped
1 onion
chopped
3 to 4 cloves garlic
finely chopped
2 tablespoons fresh thyme
finely chopped
2 tablespoons fresh rosemary
finely chopped
Salt and pepper
2 tablespoons tomato paste
1 cup vegetable or chicken stock
1 28- to 32-ounce can Italian tomatoes
A few leaves of basil
torn
1 pound whole wheat or whole grain fusilli
2 tablespoons butter
A handful of grated Parmigiano-Reggiano cheese
plus some to pass at table
A handful of chopped flat-leaf parsley
finely chopped

Steps:

  • Heat EVOO in a large pot over medium to medium-high heat
  • Add peppers, zucchini, eggplant, carrot, onion and garlic
  • Season with thyme, rosemary, salt and pepper
  • Cook, partially covered, for 7-8 minutes, stirring occasionally
  • Add tomato paste and stir to combine
  • Add stock and tomatoes
  • Break up tomatoes with wooden spoon or potato masher, bring sauce to bubble, add basil and reduce the sauce over low heat for 30 minutes
  • Bring a large pot of water to a boil for the pasta; salt the water, cook pasta to al dente
  • Reserve half a cup of starchy cooking water then drain pasta and add back to pot
  • Add butter, a few ladles of sauce, the reserved starchy water and toss to combine
  • Add cheese and toss to coat pasta
  • Serve pasta in shallow bowls topped with more vegetable sauce and parsley

8 oz. (2 1/2 cups) uncooked fusilli (curly spaghetti) or rotini (spiral pasta)
2 tablespoons olive oil
1 1/2 cups frozen bell pepper and onion stir-fry
2 cups diced eggplant
1 small zucchini, diced
1/4 teaspoon salt
1 (15-oz.) can black beans, drained, rinsed
1 (14.5-oz.) can diced tomatoes with Italian-style herbs, undrained
1 oz. (1/4 cup) shredded fresh Asiago or Parmesan cheese
2 tablespoons chopped fresh parsley

Steps:

  • Cook fusilli to desired doneness as directed on package. Drain; return to saucepan. Add 1 tablespoon of the oil; toss to coat.
  • Meanwhile, heat remaining tablespoon oil in large nonstick skillet over medium-high heat until hot. Add bell pepper and onion stir-fry; cook and stir 2 minutes. Add eggplant and zucchini; sprinkle with salt. Cook and stir 3 to 4 minutes or until zucchini is crisp-tender.
  • Stir in beans and tomatoes. Reduce heat to medium; cook until thoroughly heated, stirring occasionally. Stir in fusilli and 2 tablespoons of the cheese. Sprinkle with parsley and remaining 2 tablespoons cheese.

FUSILLI WITH FRESH POMODORO

3/4 teaspoon kosher salt, plus more
1 pound fusilli pasta
1 1/2 pounds beefsteak tomatoes (about 4 large tomatoes)
1/4 cup extra-virgin olive oil
2 cloves garlic, smashed
3 stems fresh basil, plus 1/4 cup chopped basil
1/2 cup fresh ricotta, plus more for garnish
1 1/4 cups freshly grated Parmigiano-Reggiano, plus more for garnish

Steps:

  • Bring a large pot of salted water to a boil over high heat. Cook the pasta 2 minutes less than the packaging suggests, about 8 minutes. Drain well, reserving 1 cup of the pasta water.
  • Using the large holes on a box grater, grate the flesh of the tomatoes, stopping when you are left with just the skin. Heat a large straight-sided skillet over medium-high heat and add the oil. Once the oil is hot, add the garlic and cook, stirring constantly, until the garlic is fragrant and beginning to brown, about 2 minutes. Add the grated tomatoes, whole basil and 3/4 teaspoon salt to the hot oil. Reduce the heat to medium-low and cook for 5 minutes.
  • Remove the garlic and basil stems from the pot and stir in the ricotta. Add the pasta followed by the Parmigiano-Reggiano. Stir to combine and coat everything in the sauce.
  • Cook for another 2 minutes to finish cooking the pasta and thicken the sauce slightly, adding pasta water if the sauce ever looks too dry. Stir in the chopped basil and serve topped with additional ricotta and Parmigiano-Reggiano.

One-Pot Super Easy Fusilli image

One 32-ounce box chicken stock
One 28-ounce can crushed fire-roasted tomatoes
One 1-pound box fusilli
One 8-ounce jar drained oil-packed sun-dried tomatoes, julienned, 2 tablespoons oil reserved
One 3.5-ounce jar capers, drained
4 cloves garlic, minced
1 small onion, small dice
Kosher salt and freshly ground black pepper
8 ounces whole milk ricotta
Olive oil, for garnish
12 fresh basil leaves, julienned

Steps:

  • Put the chicken stock, tomatoes, fusilli, sun-dried tomatoes plus the reserved oil, capers, garlic and onion in a large pot, then sprinkle with a pinch of salt and some pepper. Stir together. Cover and bring to a boil over high heat. Lower to medium-low heat and simmer, stirring occasionally, until the pasta is al dente and the sauce has thickened, about 25 minutes.
  • Place pasta on a large platter and dollop with ricotta. Garnish with olive oil, basil and more ground pepper.
