A neighbor brought over a pan of these rich fudge brownies along with the recipe when I came home from the hospital with our baby daughter. I asked her how to make brownie frosting like that, and I've made them ever since for family occasions, potlucks and parties at work. -Sue Soderlund, Elgin, Illinois

1 cup plus 3 tablespoons butter, cubed
3/4 cup baking cocoa
4 large eggs, room temperature
2 cups sugar
1-1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon vanilla extract
FROSTING:
6 tablespoons butter, softened
2-2/3 cups confectioners' sugar
1/2 cup baking cocoa
1 teaspoon vanilla extract
1/4 to 1/3 cup 2% milk

Steps:

  • In a saucepan, melt butter. Remove from the heat. Stir in cocoa; cool. In a large bowl, beat eggs and sugar until blended. Combine flour, baking powder and salt; gradually add to egg mixture. Stir in vanilla and the cooled chocolate mixture until well blended. , Spread into a greased 13x9-in. baking pan. Bake at 350° until a toothpick inserted in the center comes out clean, 25-28 minutes (do not overbake). Cool on a wire rack. , For frosting, in a large bowl, cream butter and confectioners' sugar until light and fluffy, 5-7 minutes. Beat in cocoa and vanilla. Add enough milk for the frosting to achieve spreading consistency. Spread over brownies. Cut into bars.

1/2 cup Land O Lakes® Butter
2 ounces unsweetened baking chocolate
1 1/4 cups sugar
1 teaspoon vanilla
2 large Land O Lakes® Eggs
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 tablespoon instant espresso powder
2 teaspoons hot water

Steps:

  • Heat oven to 350°F. Grease bottom only of 8-inch square baking pan. Set aside.
  • Melt butter and chocolate in 2-quart saucepan over low heat, stirring occasionally, 4-7 minutes or until smooth. Remove from heat.
  • Stir in sugar and vanilla. Add eggs, one at a time, mixing well after each addition. Add flour, baking powder, and salt; mix just until all ingredients are moistened and brownie mixture is smooth.
  • Dissolve espresso powder in hot water. Stir into brownie mixture.
  • Spread brownie mixture into prepared baking pan. Bake 25-33 minutes or until brownies just begin to pull away from sides of pan. (Do not overbake.) Cool completely.

1 cup unsalted butter, cut into pieces
4 ounces unsweetened chocolate, chopped
1 cup all-purpose flour
1/4 cup unsweetened Dutch-process cocoa powder, sifted
2 tablespoons finely ground espresso
1/4 teaspoon salt
1 3/4 cups packed brown sugar
1/2 cup granulated sugar
4 large eggs
Peanut Butter Fudge frosting, recipe follows
3/4 cup unsalted butter, room temperature
1/2 cup creamy peanut butter
Pinch salt
2 cups confectioners' sugar
3/4 cup unsweetened Dutch-process cocoa powder

Steps:

  • Preheat the oven to 350 degrees F. Line standard cupcake pans with 24 cupcake liners.
  • Combine the butter and chocolate in a small microwave-safe bowl. Microwave on high, uncovered, stirring every 30 seconds, until the butter and chocolate are melted and smooth. Set aside to cool. Mix the flour, cocoa powder, espresso, and salt in another bowl. In the bowl of an electric mixer fitted with the paddle attachment, mix both sugars and reserved chocolate mixture until well combined. Add the eggs, 1 at a time, beating until each is smooth, scraping down the sides of the bowl if needed. Add the flour mixture until blended. Fill the cupcake liners 2/3 full. Bake until golden, rotating the pans halfway though, 18 to 20 minutes. Transfer the pans to wire racks to cool completely before removing the cupcakes.
  • To assemble: Frost the cooled cupcakes with Peanut Butter Fudge Frosting.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the butter, peanut butter, and salt on medium-high speed until creamy. Turn the speed to low and beat in the confectioners' sugar, 1/2 cup at a time. Add the cocoa powder and beat until extremely smooth and creamy.

There are a zillion brownie recipes out there. This one remains my favorite after nearly 40 years. Some of us have unsweetened cocoa powder and powdered sugar that have been sitting in the cupboard for a year or more, and with their age, can give baked goods and frosting a flat, cardboard taste. As with all recipes, the quality of ingredients determines the quality of the finished product. *Make sure to use cocoa powder, NOT hot cocoa mix in this recipe.*

3/4 cup butter
1 1/2 cups sugar

1/4 cup unsweetened cocoa powder (I like Hershey's)

1 pinch salt
1/4 cup butter

2 tablespoons whole milk
1 1/4 cups sifted powdered sugar

Steps:

  • Grease a 9x9 inch pan and preheat the oven to 350*.
  • Beat the butter and sugar together until fluffy.
  • Beat in the vanilla, then the eggs one at a time.
  • Sift together the flour, cocoa powder, and salt, and blend into butter mixture.
  • Pour into greased pan and bake ABOUT 30 mins., depending on your oven. *BAKE LESS TIME IF YOU LIKE YOUR BROWNIES FUDGEY AND MORE TIME IF YOU LIKE THEM CAKEY*.
  • While brownies are baking, make the frosting: In a saucepan over low heat, melt butter and stir in cocoa powder and milk.
  • Off heat, beat in the sugar.
  • Spread evenly over brownies while they are still warm (not immediately out of the oven).
  • When cool, cut into small squares.
  • The yield depends on how large you cut them.
  • This recipe is easily doubled (bake in a 9x13 pan) and nuts may be added to both the brownies and the frosting.
