3/4 cup butter, softened
1/2 cup confectioners' sugar
1-1/2 cups all-purpose flour
FILLING:
1 package (10 to 12 ounces) white baking chips, melted and cooled
1/4 cup heavy whipping cream
1 package (8 ounces) cream cheese, softened
1 can (11 ounces) mandarin oranges
1 can (8 ounces) pineapple chunks
1 pint fresh strawberries, sliced
2 kiwifruit, peeled and sliced
GLAZE:
3 tablespoons sugar
2 teaspoons cornstarch
1/2 teaspoon lemon juice
Minced fresh basil or fresh mint, optional

Steps:

  • In a small bowl, cream butter and confectioners' sugar until light and fluffy. Gradually add flour and mix well. , Press into an ungreased 11-in. fluted tart pan with removable bottom or 12-in. pizza pan with sides. Bake at 300° for 25-30 minutes or until lightly browned. Cool on a wire rack., For filling, in a small bowl, beat melted chips and cream. Add cream cheese; beat until smooth. Spread over crust. Refrigerate for 30 minutes. , Drain oranges and pineapple, reserving 1/2 cup fruit juices. Arrange the oranges, pineapple, strawberries and kiwi over filling., For glaze, in a small saucepan, combine sugar and cornstarch. Stir in lemon juice and reserved fruit juices until smooth. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Cool., Brush glaze over fruit. Refrigerate for 1 hour before serving. If desired, sprinkle with fresh basil or mint. Refrigerate leftovers.

1 tube (16-1/2 ounces) refrigerated sugar cookie dough
1 package (8 ounces) cream cheese, softened
1/4 cup confectioners' sugar
1 carton (8 ounces) frozen whipped topping, thawed
2 to 3 kiwifruit, peeled and thinly sliced
1 to 2 firm bananas, sliced
1 can (11 ounces) mandarin oranges, drained
1/2 cup red grape halves
1/4 cup sugar
1/4 cup orange juice
2 tablespoons water
1 tablespoon lemon juice
1-1/2 teaspoons cornstarch
Pinch salt

Steps:

  • Pat cookie dough into an ungreased 14-in. pizza pan. Bake at 350° for 15-18 minutes or until deep golden brown; cool. , In a bowl, beat the cream cheese and confectioners' sugar until smooth. Fold in whipped topping. Spread over crust. Arrange fruit on top. , In a saucepan, bring the sugar, orange juice, water, lemon juice, cornstarch and salt to a boil, stirring constantly for 2 minutes or until thickened. Cool; brush over fruit. Chill. Store in refrigerator.

3/4 cup butter, softened (1 1/2 sticks)
1/2 cup powdered sugar
1 1/2 cups all-purpose flour
1 package (10 to 12 ounces) white chocolate chips, melted and cooled
1/4 cup heavy or whipping cream
1 package (8 ounces) cream cheese, softened
1 teaspoon vanilla, optional
1/2 teaspoon salt, optional
1 1/2 to 2 cups fresh strawberries, halved (or cut into chunks if huge)
1 cup fresh blueberries
1 cup fresh blackberries
about 2 tablespoons jelly, melted

Steps:

  • Preheat oven to 300°F. Use a 12″ pizza or tart pan, preferably non-stick. If not non-stick, spritz very lightly with cooking spray.
  • Cream butter and powdered sugar until light and fluffy. Beat in flour (mixture will be crumbly). Pat evenly into pan. Bake until light golden brown, turning about 1/2 way through if needed, for 25 to 28 minutes. Cool.
  • With an electric mixer, beat melted chips and cream until smooth. Add cream cheese and beat until smooth. Add salt and vanilla if using. Immediately spread over crust then refrigerate for 30 minutes.
  • Arrange berries over cream cheese layer and brush with the melted jelly. If there is more than one layer of berries, brush with the jelly before adding subsequent layers. Set aside for the jelly to cool or place in the refrigerator for a few minutes.

This is a recipe I came up with from several different recipes. The white chocolate in the filling makes it extra special, and the fruit can be used to spell words or arranged beautifully for fancier occasions! This is always a hit at parties...

1/2 c softened butter or margarine
1 egg
1 pkg sugar cookie mix
1 c white chocolate chips
1 pkg softened cream cheese
assorted fresh fruit
1/4 c apricot jelly

Steps:

  • 1. For Crust: mix together softened butter, egg and sugar cookie mix until dough forms. Press evenly in the bottom of a 13x9 greased pan. Bake crust at 350 for 14-17 mins, or until lightly browned around edges. Do not overcook. Cool.
  • 2. In microwave-safe bowl, melt white chocolate chips 20 seconds at a time, stirring after every 20 second intervals. Melt until smooth. Add softened cream cheese to melted chips and mix with mixer. Spread on cooled crust.
  • 3. Place assorted fresh fruit in any pattern or just randomly. Have fun with this(kids like to help with this step!) After all fruit is on, brush apricot jelly over fruit for glaze. There will be no left overs!

¾ cup white sugar
1 egg
1 ¼ cups all-purpose flour
1 teaspoon cream of tartar
½ teaspoon baking soda
¼ teaspoon salt
1 (8 ounce) package cream cheese
½ cup white sugar
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, cream together the butter and 3/4 cup sugar until smooth. Mix in egg. combine the flour, cream of tartar, baking soda and salt; stir into the creamed mixture until just blended. Press dough into an ungreased pizza pan.
  • Bake in preheated oven for 8 to 10 minutes, or until lightly browned. Cool.
  • In a large bowl, beat cream cheese with 1/2 cup sugar and vanilla until light. Spread on cooled crust.

1 (12 ounce) package white chocolate chips
1/4 cup whipping cream
1 (8 ounce) package cream cheese, softened
20 ounces canned pineapple chunks in juice, drained but reserve 1/2 cup of juice
1 pint fresh strawberries, sliced
8 ounces mandarin oranges, drained
2 kiwi fruits, peeled and sliced
3 tablespoons sugar
2 teaspoons cornstarch
1/2 teaspoon lemon juice
1/2 cup pineapple juice

Steps:

  • Crust:.
  • Blend Butter and confectionary sugar, than gradually add flour. Press into ungreased 11" tart or 12" pizza pan with sides. Bake at 300 degrees for 25-30 minutes or until golden brown. Cool.
  • Filling:.
  • Melt white chocolate chips in double boiler or other method just until melted. Beat in whipping cream, then beat in softened cream cheese. Spread over cooled crust, chill for thirty minutes.
  • Topping:.
  • Add fruits in whatever design desired.
  • Glaze:
  • Combine all glaze ingredients in medium saucepan over medium high heat, boil for two minutes or until thickened. Brush over fruit.
  • Chill for 1 hour before serving.
