1 large cantaloupe, diced
3 large oranges, peeled and diced
1 pint blueberries
1 pint raspberries
1 pint strawberry
2 green apples, chopped
1 tablespoon fresh lemon juice
1/4 cup Grand Marnier or 1/4 cup orange juice

Steps:

  • Combine all the fruit in a large bowl.
  • Add orange liqueur/ orange juice/Grand Marnier and toss.
  • Chill before serving.

2 fresh ripe peaches, pitted and diced or 1 can whole peaches, drained and diced
1 ripe Bartlett or Anjou pear, diced
1 pint ripe strawberries, halved
2 kiwis, peeled and sliced
2 ounces orange liqueur, such as Grand Marnier
1 pint orange or strawberry sorbet

Steps:

  • Combine fruit in a bowl and douse with liqueur. Toss fruit with liqueur to combine. To serve, top dishes of fruit with scoops of sorbet.

I tossed this together at the last second for a fruit salad and it turned out wonderful. I did not have time to chill the salad, but it was fine at room temp. Use cold fruit so the salad does not have to be chilled before serving or bananas and apples may turn brown.

1 peeled orange, sectioned, seeds & white cover removed
1 granny smith apple, peeled and cut into small chunks
15 red seedless grapes or 15 green seedless grapes
1 banana, ripe but still firm, sliced
1 tablespoon light brown sugar
1 tablespoon orange-flavored liqueur (Grand Mariner etc.)
1 tablespoon sweetened flaked coconut (optional)

Steps:

  • Toss fruit together adding banana last to keep from mashing it.
  • Sprinkle brown sugar over fruit and toss gently.
  • Sprinkle orange liquor over fruit and toss again gently.
  • Chill and serve.
  • Sprinkle coconut over top if you like.

2 1/4 cups passion fruit (seeds removed via sieve)

Steps:

  • Place half of the vodka with the passion fruit.
  • Set it aside for 15 days.
  • After 15 days dissolve sugar in water.
  • Combine with the passion fruit mixture and add the remaining vodka.
  • Set it aside for another 15 days.
  • Enjoy.

2 tablespoons coffee liqueur (recommended: Kahlua)
1/2 cup sweetened condensed milk
1 pint vanilla ice cream
3 cups mixed berries or chopped seasonal fruit
Vanilla cookies (recommended: Marias) for garnish, optional

Steps:

  • Mix the coffee liqueur and condensed milk in a small bowl. Set aside.
  • Put 2 to 3 scoops of ice cream in each parfait glass. Scatter the berries or fruit evenly over the ice cream and drizzle with the coffee liqueur mixture. Garnish with a vanilla cookie, if desired, and serve immediately.

I have not tried this liqueur. I'm posting this for safe keeping. I found this recipe in Complete Book Of Small Batch Preserving. As well as being economical, the liqueurs are typically lighter and less sweet than the commercial ones. All of these liqueurs may be stored in the refrigerator for several months to enjoy at your leisure. Try a variety of fruits such as raspberries, strawberries, sour cherries, nectarines, peaches and plums. A splash of a fruit liqueur does wonders for fresh fruit to add elegance to a simple dessert. Added to soda water, it makes a refreshing summer spritzer. And of course pour some over ice cream or frozen yogurt. Either vodka or 40% alcohol may be used for these liqueurs.

2 cups fruit, cut in halves (or sliced if larger, 500 ml)
1 cup alcohol (250 ml) or 1 cup vodka (250 ml)
2 tablespoons brandy (25 ml)
1/2 cup granulated sugar (125 ml)

Steps:

  • Place fruit in a clean 1-quart (1 L) jar. Stir in alcohol and brandy. Marinate, covered, for several weeks in a cool, dark place.
  • Strain through a fine sieve lined with cheesecloth; reserve fruits for another use. Stir in sugar.
  • Pour into sterilized bottles, cork, label and store in a cool place for at least 4 weeks.

4 oranges, seeds removed
2 small lemons, seeds removed
1 cup pitted prune
1 cup raisins
7 -8 cinnamon sticks
20 cracked cardamom pods
24 whole almonds
20 whole cloves
4 (25 ounce) bottles california port wine
25 ounces vodka, 110-proof

Steps:

  • Cut oranges and lemons into eighths.
  • Combine all fruit and spices in a large pan.
  • Cook for 20-30 minutes into a "fruit soup," stirring occasionally.
  • While fruit is cooking, pour wine into a large porcelain pan.
  • Cover and bring to a boil, but do not cook.
  • Pour fruit mixture into wine pan.
  • Cover and bring to a boil again.
  • When mixture begins to boil, pour in the alcohol, cover and bring to a boil again.
  • Turn off heat.
  • Holding the cover of the pan at rim of pan as a shield, ignite the mixture with a match.
  • Let burn for 30 seconds, and replace cover on pan.
  • Strain fruit mixture for other use.
  • Bottle.
  • Tastes best when served warm.

thin peel from 1 orange, orange part only
thin peel from 1 lemon, yellow part only
1 cup freshly squeezed orange juice
1/4 cup freshly squeezed lemon juice
2 1/4 cups granulated sugar
1 (4 inch) piece vanilla bean, split
1 cup brandy
1 cup vodka
1/4 cup grapefruit juice

Steps:

  • 1. Thinly peel from orange and lemon; chop and set aside. In a medium saucepan, combine grapefruit, orange and lemon juice, chopped peel, sugar and vanilla bean. Bring to a boil. Reduce heat; simmer, stirring frequently for 10 to 12 minutes. Cool to lukewarm. Pour cooled mixture into aging container; add brandy and vodka. Allow liqueur to age for 3 weeks, then strain several times using successively finer strainers, or fine clothe. For maximum clarity, let liqueur stand for several days between straining. Pour liqueur into bottles and cap well.
