One 8-ounce package cream cheese, at room temperature
1 1/2 cups confectioners' sugar, plus more if needed
1 tablespoon pumpkin pie spice
Spiked Orange Whipped Cream, recipe follows
Crunchy Candied Pumpkin Seeds, recipe follows
Sliced green apples, for serving
Fried wonton chips, for serving
3/4 cup whipping cream, chilled
1 tablespoon honey
1 tablespoon orange liqueur
Zest from 1/2 orange
1 cup pumpkin seeds
Kosher salt
3 tablespoons butter, melted
3 tablespoons honey

Steps:

  • Whisk together the pumpkin puree, cream cheese, confectioners' sugar and pumpkin pie spice in a bowl. Adjust the sweetness if necessary with a little more sugar.
  • Place the mixture in a serving bowl, dollop a large portion of Spiked Orange Whipped Cream on top and sprinkle with Crunchy Candied Pumpkin Seeds. Serve with sliced green apples and fried wonton chips!
  • In a chilled bowl using an electric hand mixer or stand mixer with a whisk attachment, whip together the cream, honey, orange liqueur and orange zest until the mixture forms stiff peaks. Refrigerate until chilled, up to 2 hours.
  • Add the seeds to a bowl and just cover with warm water. Add 1 tablespoon salt, stir to dissolve and let sit overnight to draw out the pulp (this gives a super crunchy seed!).
  • Preheat the oven to 300 degrees F.
  • Strain and completely dry the seeds. Coat in the butter and honey and sprinkle with salt to taste. Spread on a baking sheet and bake, stirring every 10 to 15 minutes, until golden brown, about 1 hour. Let cool (they will crisp up further as they cool).

My boyfriend said they were better than the restaurant's! They're great with ice cream. Substitute any kind of liqueur you want for the Grand Marnier® - be creative! many different fruit flavors seem to go well with this dessert.

2 very ripe bananas
⅓ cup miniature semi-sweet chocolate chips
¼ teaspoon ground cloves
¼ teaspoon ground cinnamon
¼ teaspoon vanilla extract
½ (14 ounce) package wonton wrappers
oil for frying
½ cup butter
½ cup brown sugar
1 tablespoon brandy-based orange liqueur (such as Grand Marnier®)
2 tablespoons light corn syrup
2 tablespoons miniature semi-sweet chocolate chips

Steps:

  • Place the bananas, 1/3 cup chocolate chips, clove, cinnamon, and vanilla into a mixing bowl, and mash until evenly blended. Alternatively, chop the mixture in a food processor until the chocolate chips have been reduced in size. This will help prevent the chips from poking through the wonton skins as you handle them. It will also change the texture of the filling - you will not have pockets of melted chocolate in the wontons.
  • To make the wontons: Separate and place the wonton wrappers onto your work surface. Spoon about 1 teaspoon of the banana filling onto the center of each wrapper. Use your finger or a pastry brush to lightly moisten the edges of the wonton wrappers with water. Fold one corner of the wrapper over the filling onto the opposite corner to form a triangle. Press the edges together to seal. Repeat with the remaining ingredients.
  • Prepare the sauce by combining the butter, brown sugar, orange liqueur, and corn syrup in a small saucepan. Bring to a simmer over medium heat, and cook until the sugar has dissolved and the sauce is smooth, about 4 minutes. Set aside to cool slightly.
  • Fry the wontons in the hot oil a few at a time until golden brown, about 4 minutes. Turn the wontons over halfway through cooking so they brown evenly. 1 pound bulk hot Italian sausage

1 (16 ounce) package wonton wrappers
3 cups vegetable oil for frying
½ cup Asian sweet chili sauce, for dipping

Steps:

  • Beat the egg white and water together in a small bowl; set aside. Lightly mix the ground beef, sausage, 1 tablespoon sweet chile sauce, five-spice powder, garlic powder, green onion, and salt and pepper. Place about 1 teaspoonful of the meat mixture onto a wonton wrapper with one corner facing you. Fold in the left and right corners of the wrapper to slightly overlap the filling, then tightly roll the lower corner up to create a pocket around the filling. Continue rolling until just the tip of the remaining corner is visible; brush the corner with the egg white mixture to seal.

2-inch piece fresh ginger, grated
2 shallots, chopped
1/2 carrot, chopped
1 green onion, chopped
2 tablespoons chopped fresh cilantro leaves
1 tablespoon peanut oil
1/2 lemon, juiced
2 tablespoons mayonnaise
1 pound lump crabmeat (Dungeness, if you can get it), picked through for shells
1 (12-ounce) package square wonton wrappers
1 egg white, for brushing
Salt and freshly ground black pepper
Cornstarch, for dusting
Vegetable oil, for deep-frying
3/4 cup soy sauce
3 tablespoons dark sesame oil
3 tablespoons rice wine vinegar
2 teaspoons minced fresh ginger

Steps:

  • Combine in a food processor the ginger, shallots, carrot, green onion, cilantro, peanut oil and lemon juice. Pulse until fine. Put vegetable mixture in a mixing bowl, add the mayonnaise and the crabmeat and season with salt and pepper. Be careful not to mash the crabmeat, you want that texture when you bite into the wonton.
  • Lay a wonton wrapper on a flat surface and brush with the beaten egg white. Drop 1 tablespoon of the crab filling onto the center of the wrapper. Fold the wonton in half, corner to corner, to form a triangle. Press around the filling to knock out any air bubbles, then press the seam together to seal so the filling doesn't seep out. You can leave them this shape or continue on by brushing the 2 side points with beaten egg white. Lay your index finger in the center so you have something to press up against, then fold the 2 sides into the center, slightly overlapping, and press the dough against your finger with your thumb to form a tight seal. Lightly dust the filled wontons with cornstarch to keep them from sticking together and place them on a cookie sheet. (When these are folded they look like Pope hats.)
  • Heat 2 to 3 inches of oil in a deep heavy saucepan to 370 degrees F on a deep-fry thermometer. Add a few of the wontons to the oil and cook, turning them 3 or 4 times to get them nicely browned all over. Carefully lift them out of the pan with a slotted spoon and onto a paper towel-lined platter to drain. Keep going to cook all of the wontons.
  • Stir together the dipping sauce and serve with the wontons.

1 avocado
8 oz goat cheese
½ cup cilantro aioli:
1 egg yolk
2 tsp. freshly squeezed lemon juice

  • Couldn't be easier: stuff a wonton wrapper with a little scoop of avocado and goat cheese. Seal with as little water as possible, and the fry in hot oil. Serve with cilantro aioli dipping sauce. These are easy to assemble in advance, and then fry when ready. They keep well in a covered container in the fridge. Infusing Aioli Aioli is very easy to make, all you need is a large bowl, whisk, and muscle power. Of course, a food processor or blender will do it for you. Cilantro Aioli Recipe Beat the egg yolk with the lemon. Toss it into a medium-sized bowl with the lemon juice & salt. Add the olive oil by the teaspoon and beat with a whisk until the olive oil is completely combined. The mixture should be yellow, frothy, and opaque. You want to beat it until all the droplets of olive oil have disappeared. Repeat this process-adding a teaspoon, then beating to emulsify it-until you've added about 1/4 cup of the oil. As you go, the mixture should begin to turn a creamy yellow, and become more and more opaque. When you've added 1/4 of a cup of oil by the spoonful, your emulsion should be off to a really good start. It should coat the back of a spoon, but should still be pretty thin. Start to drizzle the oil in, beating it as you go to incorporate it completely. Go slowly, and be patient. If you add the oil too fast, or dump it in all at once, the oil will overwhelm the emulsion you've built and it will separate. After a minute or two of drizzling and beating, the aioli should start to look very creamy. Now it is time to flavor. What will knock the socks? 50 wonton wrappers
3 (12 fluid ounce) bottles tzatziki sauce
2 (8 ounce) packages feta cheese, crumbled
1 egg
1 tablespoon water

Steps:

  • Place chicken breasts in a pot; cover with 1 inch water. Bring to a boil. Reduce heat and simmer, covered, until chicken is no longer pink in the center, 10 to 14 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

1 teaspoon fresh ginger, minced
1 teaspoon soy sauce

2 tablespoons cold water
20 wonton skins
oil, for deep frying

Steps:

  • Combine the ingredients for the mustard sauce in a small bowl and mix well. Set aside.
  • Mix filling ingredients together in a medium bowl. Beat the egg with the water in a small bowl.
  • To assemble the wontons, brush the edges of each wrapper with the egg wash. Place 2 teaspoons of the filling into each wrapper. Fold the wonton in half to make a triangle. 4 teaspoons honey
4 teaspoons toasted sesame seeds

When I was a child, my mom often kept me busy making wontons, putting three or four packages of the skins and a big bowl of pork-and-shrimp filling in front of me. (That's 150 to 200 wontons!) She served the fried wontons to family and guests alike, who delighted in dipping the crispy morsels into our homemade sweet-and-sour sauce, a lighter version of the Chinese classic flavored with fish sauce instead of soy sauce.

1/4 pound medium shrimp, peeled, deveined, and cut into pea-sized pieces
1 small scallion, white part only, finely chopped
1 small clove garlic, finely minced

  • To make the filling, in a bowl, combine the pork, shrimp, scallion, garlic, cornstarch, sugar, salt, and pepper and use chopsticks or a fork to mix well.
  • To fill the wontons, work in batches of 6 to 8 wonton skins. Place them on a work surface, such as large cutting board, inverted baking sheet, or tray. Using 2 teaspoons or demitasse spoons, place a scant teaspoon of filling (about the size of a 1/2-inch marble) in the center of a wonton skin. Dip a pastry brush in water and lightly brush the entire edge of the skin. Pick up a corner of the wonton skin and fold it over, enclosing the filling and forming a triangle. Press the edges of the triangle firmly with your finger to seal. Make sure that there are no air bubbles, or the wontons will bob around in the hot oil, and that the edges are well sealed, or the wontons will split open when they hit the hot oil. Place the finished wonton on a large plate or tray. Repeat until all the filling is used up.
  • Put a wire rack on a baking sheet and place the sheet next to the stove. Pour oil to a depth of 1 1/2 inches into a wok or 5-quart Dutch oven and heat over medium-high heat to 350°F on a deep-frying thermometer. (If you don't have a thermometer, stand a dry bamboo chopstick in the oil; if small bubbles immediately gather on the surface around the chopstick, the oil is ready.)
  • Working in batches of 4 to 6, slide the wontons into the hot oil and fry, turning once, for about 2 minutes on each side, or until golden brown. Using a skimmer, transfer to the rack to drain.
  • Arrange the wontons on a platter. Serve hot as finger food along with the sauce for dipping.

This is a great appetizer that is a nice change of pace. Can be prepared ahead of time. It makes lots so it helps to have a buddy to to some folding! Serve with sweet & sour sauce for dipping.

100 wonton skins
1 lb ground pork
1 bunch green onion, chopped fine
1/2 head green cabbage
1 teaspoon minced garlic
2 inches gingerroot, chopped fine
1 teaspoon red pepper flakes (optional)
2 tablespoons soy sauce

Steps:

  • Combine pork, onions, garlic, ginger, red pepper flakes & soy sauce in bowl. Set aside.
  • Grate cabbage into another bowl. Cover with
  • boiling water. Stir. Drain & Squeeze out as much water as possible.
  • Combine cabbage with pork mixture.
  • Place about 1 tsp of this mixture in center of wonton skin and fold, wonton style*.
  • Deep fry at 375 for about 3 minutes. Drain. Serve hot with dipping sauce.
  • * Wonton skins packages have folding directions printed on them. If not - try this:.
  • Lay skin on board with corners pointing North, south, east & west (Diamond shape).
  • Place filling a little north of center. Moisten edges. Fold south tip up to north tip. Press edges to seal. Bring east & west tips in to center. Bring the north tip down towards eat/west tips. Oh Heck -- If you are old enough to remember, make it look like a diaper!

1/2 pound lean ground beef (90% lean)
1 tablespoon butter
1 tablespoon olive oil
2 garlic cloves, minced
1-1/2 teaspoons chopped shallot
1 cup each chopped fresh shiitake, baby portobello and white mushrooms
1/4 cup dry red wine
1 tablespoon minced fresh parsley
1/2 teaspoon salt
1/4 teaspoon pepper
1 package (12 ounces) wonton wrappers
1 large egg
1 tablespoon water
Oil for deep-fat frying

Steps:

  • In a small skillet, cook beef over medium heat until no longer pink, breaking into crumbles, 4-5 minutes; transfer to a large bowl. In the same skillet, heat butter and olive oil over medium-high heat. Add garlic and shallot; cook 1 minute longer. Stir in mushrooms and wine; cook until mushrooms are tender, 8-10 minutes. Add to beef. Stir in parsley, salt and pepper., Place about 2 teaspoons filling in the center of each wonton wrapper. Combine egg and water. Moisten wonton edges with egg mixture; fold opposite corners over filling and press to seal., In an electric skillet, heat oil to 375°. Fry wontons, a few at a time, until golden brown, 60-90 seconds on each side. Drain on paper towels. Serve warm., Freeze option: Place filled wontons on a baking sheet and place in the freezer until they're firm, then transfer to an airtight container and freeze. Thaw overnight in the fridge and cook as directed.

STIR-FRIED WONTONS WITH SICHUAN SAUCE



Stir-Fried Wontons With Sichuan Sauce image

1/4 pound raw medium shrimp (in shells)
2 ounces lean ground pork
3 whole water chestnuts finely chopped
2 green onions, (with tops) chopped
1 teaspoon cornstarch
1/2 teaspoon salt
1/4 teaspoon sesame oil
1 dash white pepper
1/3 cup ketchup
1/4 cup hoisin sauce
2 teaspoons chilli paste
1 tablespoon soy sauce
24 wonton wrappers (about 1/2 pound)
1 egg white slightly beaten
5 cups water
2 tablespoons vegetable oil

Steps:

  • Peel shrimp. Make a shallow cut lengthwise down back of each shrimp wash out vein. Chop shrimp finely. Mix shrimp, pork, water chestnuts, green onions, cornstarch, salt, sesame oil and white pepper. Mix ketchup, Hoisin sauce, chili paste and soy sauce.Place 1/2 teaspoon shrimp mixture in center of wonton skin. (Cover remaining skins with plastic wrap to keep them pliable.) Fold bottom corner of wonton skin over filling to opposite corner, forming a triangle. Brush right corner of triangle with egg white. Bring corners together below filling pinch left corner to right corner to seal. Repeat with remaining wonton skins. (Cover filled wontons with plastic wrap to keep them from drying out.) Heat water to boiling in Dutch oven add wontons. Heat to boiling reduce heat. Simmer uncovered 2 minutes drain. Immediately rinse wontons in cold water cover with iced water to keep them from sticking together.Heat vegetable oil in 12-inch skillet, over high heat, add ketchup mixture. 2 (6 ounce) cans water chestnuts, finely chopped
1/4 cup chopped green onion
1 teaspoon cornstarch
1 teaspoon salt
1/8 teaspoon sesame oil
1 dash white pepper
1 lb wonton skins
1 beaten egg
vegetable oil

Steps:

  • Peel and devein shrimp. Chop shrimp finely.
  • Mix shrimp, pork, water chestnuts, green onions, cornstarch, salt, sesame oil and white pepper.
  • Place 1/2 teaspoons shrimp mixture in center of wonton.
  • Fold bottom corner of wonton skin over filling to opposite corner, forming a triangle.
  • Brush right corner of triangle with egg.
  • Bring corners together below filling; pinch to right corner to seal. Repeat with remaining wonton skins.
  • Heat oil (1 1/2 inches) in wok to 350 degrees. Fry 8-10 wontons at a time until golden brown.
  • Drain on paper towel.
