Categories     Pork     Vegetable     Fry     Quick & Easy     Sausage     Fall     Summer     Winter     Cabbage     Gourmet

Yield Makes 4 main-course servings

Number Of Ingredients 9

1 (1-pound) package sauerkraut (not canned), rinsed and drained well (2 3/4 cups)
2 large eggs, lightly beaten
1/3 cup all-purpose flour
1/2 cup chopped scallion greens
3/4 teaspoon salt
1/2 teaspoon black pepper
1/2 to 3/4 cup vegetable oil
1 pound smoked beef and pork kielbasa, cut crosswise into 1/2-inch slices
Accompaniment: warm applesauce

Steps:

  • Preheat oven to 250°F.
  • Pat sauerkraut dry between paper towels to remove as much moisture as possible, then transfer to a bowl and stir in eggs, flour, scallion greens, salt, and pepper until combined.
  • Heat 1/4 inch oil in a 12-inch heavy skillet over moderate heat until hot but not smoking. Fill a 1/4-cup measure three-fourths full with sauerkraut mixture, then turn out into oil, using a fork to release, and flatten to 3 1/2 inches in diameter with fork. Form 2 more cakes in skillet, then fry, turning over once, until golden, about 4 minutes total. Transfer cakes with a slotted spatula to paper towels to drain. Keep cakes warm on a rack set in a shallow baking pan in oven. Fry more cakes in same manner with remaining mixture.
  • Brown kielbasa in 2 batches in oil remaining in skillet over moderate heat, turning, 2 minutes per batch, then transfer to paper towels to drain. Serve cakes topped with kielbasa.

KIELBASA AND FRIED BUTTERED SAUERKRAUT

Kielbasa and fried buttered sauerkraut image

Add some cornbread and you have one easy weeknight meal. Kielbasa and sauerkraut are great together, but adding the butter makes this recipe extra special. Browning the butter and sauerkraut adds tons of flavor. Make sure to let it get browned ... that's where the flavor is.

Categories     Pork

Time 1h

Number Of Ingredients 5

1 pkg kielbasa
1 can(s) sauerkraut, 28 oz.
1 tsp garlic powder
1 tsp onion powder
3 Tbsp butter

Steps:

  • 1. Use a large skillet. Put the butter in and melt it around the pan. When it starts to sizzle put in the whole can of sauerkraut.
  • 2. While the sauerkraut is cooking, cut up the kielbasa into 1 inch slices. Put aside.
  • 3. Stir the sauerkraut. Once it starts turning brown add the kielbasa.
  • 4. Continue to stir, add the spices, and stir some more. The sauerkraut should be golden brown with some darkened areas. Let it cook and stir often (sauerkraut burns easily, so you have to watch it. You only want a little bit darkened)
  • 5. Once everything is mixed and the sauerkraut is golden brown turn off the heat and let it sit until the burner is cool. (This will darken the sauerkraut further.) Serve and enjoy.

FRIED SAUERKRAUT CAKES WITH KIELBASA

Fried Sauerkraut Cakes With Kielbasa image

This is similar to a potato pancake in texture. The recipe was handed down to me by a local chef. This meal is best served with buttered noodles or mashed potatoes. I recommend serving this dish with a side of warm applesauce or recipe #3057 Daisy Mae's Fried Apples.

FRIED SAUSAGE SAUERKRAUT BALLS

Fried Sausage Sauerkraut Balls image

Do you have a dish that if it isn't served at a holiday meal you're a little upset? Sauerkraut balls is that dish for me; I expect my mom to make these every Christmas (and so does my uncle haha). Well, she got tired of me asking so she gave me the recipe and made my sister and I make it last Christmas. Now I have no excuse to beg for them, I have to make them on my own now. This recipe wraps up my family recipe themed streak of blog posts. But don't worry I will have more in the future, I just wanted to showcase some of my favorites back to back. These may be a bit time consuming but are so worth it! It's best to double the batch since they freeze well and will be gobbled up! This recipe will make 2 dozen balls. Also having a partner in the kitchen will also help. Someone to roll and dip the balls and someone to fry them up and take them out. These little 'kraut balls are delicious: crispy and crunchy on the outside - warm and creamy on the inside from the cream cheese. They are great for any party; like I said we usually have them around a holiday. Put that sauerkraut and sausage to good use and try these out because they are addictive, you'll just want to keep popping them in your mouth!

  • Roll balls in flour.
  • Add milk to egg mixture and dip flour coated balls into egg mixture.
  • Roll balls into bread crumbs.
  • Fry in at least 1/2 inch of oil or other fat to brown. Takes about 30-45 seconds on medium-high heat.

  • From Freezer: Bake in 375 degrees preheated oven for 15- 20 minutes.
  • Serve warm, but be careful they are piping hot right out of the oven/fryer.
