1 tablespoon vegan margarine
2 cups cooked corn kernels
1/4 cup chopped red bell pepper
1/4 cup chopped celery
1/4 cup chopped peeled cucumber
2 tablespoons chopped scallions
1/2 small jalapeno, seeded and minced, optional
1 tablespoon minced fresh dill weed
1/2 teaspoon ground cumin
Juice from 1/2 lemon
2 tablespoons red wine vinegar
2 teaspoons olive oil
Salt and black pepper

Steps:

  • 1. Heat the margarine in a medium skillet over medium-high heat. Add the corn, stirring to coat with the margarine. Cook, stirring occasionally, 10 to 12 minutes, or until golden brown. Remove from the heat and transfer the corn to a medium bowl. Add the bell pepper, celery, cucumber, scallions, and jalapeno, if using. Toss to combine. 2. In a small bowl, combine the dill, cumin, lemon juice, vinegar, olive oil, and salt and pepper to taste. Mix well, then pour over the vegetables and toss to combine. Taste and adjust the seasonings. Serve warm or cold

Take advantage of summer's seasonal bounty with Ina Garten's easy Fresh Corn Salad recipe from Barefoot Contessa on Food Network, made with fresh basil.

5 ears of corn, shucked
1/2 cup small-diced red onion (1 small onion)
3 tablespoons cider vinegar
3 tablespoons good olive oil
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup julienned fresh basil leaves

Steps:

  • In a large pot of boiling salted water, cook the corn for 3 minutes until the starchiness is just gone. Drain and immerse it in ice water to stop the cooking and to set the color. When the corn is cool, cut the kernels off the cob, cutting close to the cob.
  • Toss the kernels in a large bowl with the red onions, vinegar, olive oil, salt, and pepper. Just before serving, toss in the fresh basil. Taste for seasonings and serve cold or at room temperature.
