Whenever I serve my Corn Balls, it's just about certain someone will ask for the recipe-I've gotten more requests for it than any other I've ever tried. I usually make them when we have company as a nice change-of-pace side dish. They're great with ham, steak or roast beef. My husband and I have two young children, 3 and not quite 1. I grew up on a dairy farm. Today, we live on a small farm where I tend to chickens.

Number Of Ingredients 9

1/2 cup chopped onion
1 cup chopped celery
1/2 cup butter
3-1/2 cups herb-seasoned stuffing croutons
3 cups cooked whole kernel corn
3 large eggs, beaten
1/2 cup water
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a small saucepan, cook onion and celery in butter until tender; set aside to cool. , In a large bowl, combine the croutons, corn, eggs, water, salt, pepper and onion mixture. Shape into eight to 10 balls. , Place in an ungreased shallow baking dish. Bake, uncovered, at 375° for 25-20 minutes.

4 tablespoons butter
One 16-ounce bag frozen corn, defrosted
3 tablespoons white sugar or honey
1/3 cup heavy cream
Salt
1/2 teaspoon black pepper

Steps:

  • In a large skillet over medium-high heat, melt 4 tablespoons butter. When butter is foamy add the corn stirring to coat with the butter. Cook stirring frequently for 1 minute. Add sugar or honey and cook for 2 minutes more. Increase heat to high and add heavy cream-continue to stir so corn won't stick to pan. Add salt and pepper. Cook corn until most all of the cream has absorbed about 5 minutes more. Remove add serve hot.

1 can (8-1/4 ounces) cream-style corn
3/4 cup crushed saltines (about 22 crackers)
1/2 teaspoon sugar
1/2 teaspoon baking powder
Oil for deep-fat frying

Steps:

  • In a large bowl, combine the egg, corn, cracker crumbs, sugar and baking powder (batter will be soft)., In an electric skillet or deep-fat fryer, heat oil to 375°. Drop batter by rounded teaspoonfuls; fry in batches until golden brown, about 1 minute on each side. Drain on paper towels. Serve warm.

2 pounds frozen white shoepeg corn, thawed and drained
4 cups yellow cornmeal, or more as needed
1 ½ cups enriched flour, or more as needed
1 cup white sugar
2 ½ teaspoons salt
oil for frying

Steps:

  • Mix corn, cornmeal, flour, sugar, and salt together in a large bowl until it forms a paste. If the mixture is runny, add equal amounts of flour and cornmeal to reach a paste-like consistency.
  • Cover a sheet of waxed paper with a light dusting of flour. Place a tablespoon of the corn mixture on the waxed paper and roll into a ball. Repeat with remaining batter, adding more flour to the wax paper as needed.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Place batches of nuggets into the hot oil and fry until golden, 2 to 2 1/2 minutes. Transfer to a paper towel-lined plate to drain excess oil.

2 1/2 cups flour
1/2 teaspoon baking powder
1 teaspoon salt
1 tablespoon sweet basil
1/2 tablespoon paprika
1/2 tablespoon garlic, granulated
1/2 teaspoon black pepper
1 cup milk
3 eggs
1 chicken bouillon cube
1 (15 1/4 ounce) can corn, drained

Steps:

  • Heat deep fryer to 375°F.
  • Stir all ingredients together.
  • If too thin, add more flour.
  • If too thick, add a little more milk.
  • You want mixture to be the consistency of a thin dough.
  • Drop by teaspoonfuls in hot oil.
  • Cook until golden brown on all sides.
  • Remove from oil to paper towels to drain.
  • Sprinkle with salt to desired taste. Chicken bouillon cube can be omitted if chicken flavor is not desired or beef bouillon cube can be substituted.
  • Just dissolve cube first. For spicy cornball fritters, add 1/4 cup of diced jalapeno peppers.
