14 ounces quartered artichoke hearts (, drained and patted dry )
1 tablespoon extra virgin olive oil
2 eggs (, lightly beaten )
1 teaspoon garlic powder
1/3 cup parmesan cheese (, finely grated )
1/3 cup panko breadcrumbs
1 teaspoon Italian seasoning
1/4 teaspoon fine sea salt
1/4 teaspoon ground black pepper
1/2 cup herb lemon aioli sauce

Steps:

  • Preheat oven to 425°F and line a rimmed baking sheet with parchment paper or coat lightly with cooking spray.
  • Place the artichoke hearts in a bowl and coat with the olive oil.
  • In a medium bowl, mix together the garlic powder, parmesan cheese, panko, Italian seasoning, salt and pepper.
  • Dip each artichoke in the egg mixture, then in the cheese mixture.
  • Place on baking sheet and bake for 20 minutes, flipping halfway.
  • Serve hot with aioli dipping sauce.

for quick aioli:
1 can whole artichoke hearts
1/4 cup freshly grated Parmesan cheese
1/2 cup Panko breadcrumbs (or seasoned Italian breadcrumbs)
1/4 tsp salt
1/4 tsp pepper
1 egg
1/4 cup mayonnaise
1 garlic clove, minced
tiny pinch paprika
1/2 lemon, juiced

Steps:

  • Preheat oven to 375 degrees. Drain and rinse the artichoke hearts then pat dry thoroughly with paper towels. In a small bowl, combine the breadcrumbs, cheese, salt and pepper. In another smaller bowl, crack the egg and beat lightly with a fork. Line a baking sheet with tin foil or parchment paper and give a quick spray with non-stick cooking spray. Lightly drench each heart in the egg then cover with the breadcrumbs. Bake for 25-30 minutes, flipping halfway through. While hearts are baking, prepare the sauce. Mix together the mayonnaise, lemon juice, garlic and paprika until smooth. Serve with artichoke hearts.

A boyfriend's mother taught me this great dipping sauce for artichokes and asparagus. It's somewhat like aioli. Replace dried basil for fresh, and garlic salt for the garlic. If you do use dried basil, cut the original amount in half. Use low-fat mayonnaise if you like.

I'm not much of a deep fried person but these were advertised at stands all over my roadtrip through artichoke country in Northern California and I just had to try them! So glad I did!

2 (9 ounce) packages frozen artichoke hearts
1 1/2 cups flour
3 egg yolks
salt
pepper
Tabasco sauce
1/4 teaspoon nutmeg
1 1/4 cups milk
3/4 teaspoon baking powder
oil, for deep-frying

Steps:

  • Thaw the artichoke hearts.
  • Place flour in a bowl and add egg yolks, nutmeg and salt, pepper and tabasco to taste. Gradually beat in 1 cup milk. Stir in baking powder. Coat artichokes in batter. Adjust the consistancy with the extra milk if needed.
  • Drop the artichokes one at a time into oil (deep enough to cover artichokes), heated to 360 degrees. Cook, turning, until golden brown. Remove with a slotted spoon and drain on paper towels.
  • Serve hot with your favorite dipping sauce (I like ranch or flavored mayo)!
