1/2 lb fresh mozzarella cheese (if all you can find is the tub, make sure to pat it real dry)
1/2 cup torn basil leaves
3 tablespoons olive oil
4 teaspoons balsamic vinegar
kosher salt or sea salt, to taste

Steps:

  • Cut up the tomatoes and mozzarella into large cubes.
  • Add basil leaves and drizzle w/ vinegar and olive oil.
  • Stir lightly.
  • Sprinkle with a little salt.
  • Chill at least one hour.
  • Store in refrigerator.

1/3 cup olive oil
2 tablespoons white wine vinegar
1 small shallot, minced
8 ounces dried fusilli
2 cups halved grape tomatoes
2 cups diced fresh mozzarella
1 cup torn fresh basil leaves

Steps:

  • Bring a large pot of salted water to a boil.
  • Whisk together the olive oil, vinegar, shallot, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.
  • Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool; add to the bowl with the dressing.
  • Add the tomatoes, mozzarella and basil to the bowl and toss to combine. Season with salt and pepper. The pasta salad is best if served right away.

3/4 cup diced fresh mozzarella cheese (about 3 ounces)
3 tablespoons minced shallots
2 teaspoons extra virgin olive oil
1/4 teaspoon lemon juice (white balsamic or champagne vinegar okay) or 1/4 teaspoon balsamic vinegar (white balsamic or champagne vinegar okay)
1/2 teaspoon salt, to taste
1/4 teaspoon fresh ground black pepper or 1/4 teaspoon tricolor pepper, to taste
1 garlic clove, crushed and minced
1 1/4 cups water
1 cup uncooked couscous
1/4 cup chopped fresh basil
basil leaves, for garnish (optional)

Steps:

  • In a large bowl combine the tomato, mozzarella, shallots, olive oil, lemon juice, salt, pepper, and garlic, toss well then refrigerate, covered, to marinate for 30 minutes.
  • In a saucepan bring the water to a boil and gradually stir in the couscous; remove from the stove, cover, and set aside for 5 minutes.
  • With a fork, fluff the couscous then let cool.
  • Add the cooled couscous and chopped basil to the tomato mixture in the bowl and toss.
  • Garnish with whole basil leaves and serve.

1/2 cup sun-dried tomato packed in oil, drained
1/4 cup red wine vinegar
1 tablespoon capers, drained
1 garlic clove, minced
1 lb medium pasta shell
2 cups cherry tomatoes, halved
8 ounces water-packed fresh mozzarella cheese, drained and cut into 1/2 inch pieces
1 cup fresh basil leaf, thinly sliced

  • Bring large pot of water to a boil.
  • Meanwhile, in a food processor, make dressing: combine all dressing ingredients.

8 -10 fresh basil leaves, cut into thin strips

2 tablespoons red wine vinegar, plus
2 teaspoons red wine vinegar
1 teaspoon Dijon mustard
1 teaspoon freshly grated lemon zest
1 -2 teaspoon lemon juice, to taste
1 -2 fresh basil leaf, cut into thin strips
1 tablespoon chopped fresh oregano leaves
1 tablespoon chopped fresh flat leaf parsley
3/8 cup extra virgin olive oil

Steps:

  • Preheat the oven to 400º F. Soak the corn in the sink or a bowl filled with cold water for 10 to 15 minutes. Place on a baking sheet with sides and roast for 20 to 25 minutes, until the kernels are tender. Cool to room temperature, then pull off and discard the husks and silks. Cut the kernels off the cob into a large bowl.
  • Add the mozzarella, avocados, tomatoes, basil, salt and pepper to the bowl with the corn. Drizzle 1⁄2 cup of the vinaigrette over the salad and toss gently. Be careful not to over-mix or mash the avocado. Season with more salt, pepper or vinaigrette to taste. Serve on a bed of the arugula or baby greens.

If you want a really cheese-a-licious pasta and aren't afraid of the added fat, feel free to toss in another mozzarella ball's worth of cheese as well.)

1/2- 3/4 cup canned black olives, kalamata olives, or mixture

  • Soak the sun-dried tomatoes in warm water for 20 minutes or so, until softened. Drain. 3/4 pound Garganelli Pasta
28 ounce Whole toms, can
1/2 pound Mozzarella, fresh
3 ounce Arugula
4 clove Garlic
2 Orange, Navel
1 Onion, yellow
1 bunch Parsley
2 tablespoon butter
2 tablespoon Vinegar, red wine
1/3 cup Parmesan cheese, grated

Steps:

  • Wash and dry the fresh produce. Heat a medium pot of salted water to boiling on high. Peel and mince the garlic. Peel and small dice the onion. Place the tomatoes in a bowl; gently break apart with your hands. Pick the parsley leaves off the stems; discard the stems and roughly chop the leaves. Tear the mozzarella cheese into bite-sized pieces. Cut off and discard the tops and bottoms of the oranges so they sit flat on the cutting board. Cut off and discard the orange rinds and piths; halve the oranges, then thinly slice.
  • In a large, high-sided pan, heat 1 tablespoon of olive oil on medium until hot. Add the garlic and onion; season with salt and pepper. Cook, stirring occasionally, 2 to 4 minutes, or until softened and fragrant. Add the tomatoes. Simmer, stirring occasionally and breaking the tomatoes apart with a spoon, 12 to 14 minutes, or until the liquid is slightly reduced in volume; season with salt and pepper to taste.
  • While the sauce simmers, in a bowl, combine the vinegar and a pinch of the Parmesan cheese; season with salt and pepper to taste. Slowly whisk in 2 tablespoons of olive oil until well combined.
  • While the sauce continues to simmer, add the pasta to the pot of boiling water. Cook 8 to 10 minutes, or until just shy of al dente (still slightly firm to the bite). Reserving 1 cup of the pasta cooking water, thoroughly drain the cooked pasta.
  • Add the cooked pasta and half the pasta cooking water to the pan of sauce. Increase the heat to medium-high and cook, stirring occasionally, 2 to 3 minutes, or until the pasta is thoroughly coated. (If the sauce seems dry, gradually add the remaining pasta cooking water to achieve your desired consistency.) Turn off the heat. Add the butter, half the parsley and half the mozzarella cheese. Stir until thoroughly combined; season with salt and pepper to taste. Transfer to a serving dish.
  • Just before serving, in a large bowl, combine the arugula and oranges; season with salt and pepper. Add enough of the vinaigrette to coat the salad (you may have extra vinaigrette). Toss to combine; season with salt and pepper to taste. Transfer to a serving dish. Garnish the finished pasta with the remaining Parmesan cheese, parsley and mozzarella cheese.

This is a wonderful salad! Fresh mozzarella may be hard to find so regular may be substituted, although it won't be exactly the same. Fresh mozzarella is submerged in water to retain it's moisture content and preserve it's soft, slightly elastic texture. Best when only a few days old, it has a delicate, milky texture. This recipe is from the Wisconsin Milk Marketing Board.

1 (16 ounce) package bow tie pasta, cooked
1 cup fresh mozzarella cheese, cubed (this is the very soft mozarella cheese, not your standard Kraft-type cheese)
1 cup parmesan cheese, shredded
1 cup fresh basil, torn into small pieces
2 large tomatoes, diced
1 lemon
1/2 cup olive oil
salt and pepper

Steps:

  • Cook Pasta and rinse in cool water.
  • Toss together pasta, cheeses, basil, and tomato.
  • Squeeze the juice from a lemon and mix with olive oil. Toss in pasta.
  • Add salt and pepper as desired.
  • I actually never measure the ingredients. I just toss until it looks the way I like it. Adjust to your likings. Sometimes it needs to be freshened with a little more olive oil.

10 Roma tomatoes
1 red bell pepper, julienned
1 tablespoon honey
1 teaspoon Italian seasoning
1 pound fresh mozzarella, cut into 3/4-inch cubes
1/4 cup olive oil
1 tablespoon lemon zest
Juice of 1 lemon

7 fresh basil leaves, chiffonade, for garnish

Steps:

  • Peel the tomatoes by first scoring them on the bottom with an "x" and then submerging them in boiling water for 15 seconds. Immediately plunge the tomatoes into a bowl of ice water. The skins will peel right off.
  • Quarter the tomatoes, then cut out the cores and remove the seeds. Add the tomatoes to a heavy medium pot, along with the red peppers, honey and Italian seasoning. Stir and cook over medium heat until the flavors have combined and the peppers and tomatoes have softened, about 10 minutes. Remove from the heat and allow to cool to room temperature¿the mixture can be frozen at this at this stage.
  • While the tomatoes cool, marinate the mozzarella. In a medium bowl, combine the mozzarella, olive oil, lemon zest and lemon juice.
  • When the tomato mixture is completely cooled, strain off and discard the excess juice, and then add the mixture to the marinated mozzarella. Season with salt and pepper to taste. Allow to marinate in the refrigerator for 1 hour. Garnish with basil before serving.

We are buying tomatoes this summer in huge amounts so this is what we are eating pretty much every day. This is the base version, but I also sometimes throw avocado or green onion in. You can do pretty much anything you want with this. It's sooo easy. The amounts are just approximates - it will vary by taste.

3 -4 tomatoes
1 large fresh mozzarella ball
5 -10 fresh basil leaves, chopped
salt
pepper
olive oil
balsamic vinegar (optional)

Steps:

  • Take the skin off the tomatoes - a huge difference. If the skin is tough to come off, I cut the skin slightly and pour hot water over them and keep the tomatoes covered for a couple of minutes.
  • Slice or cut the tomatoes in as big pieces as you like them.
  • Cut the mozarella into small cubes (1/4 inch).
  • Mix the tomatoes, mozarella, basill and season it with salt and pepper.
  • Drizzle with olive oil.

4 ears sweet corn, in the husk
1⁄2 lb fresh mozzarella cheese, cut into 1/4-inch cubes or 1⁄2 lb bocconcini
2 ripe avocados, halved, peeled, and cut into 1/4-inch cubes
1⁄2 pint grape tomatoes or 1⁄2 pint other small tomatoes, halved
8 -10 fresh basil leaves, cut into thin strips
sea salt & freshly ground black pepper
3 handfuls of young arugula or 3 baby greens
2 tablespoons red wine vinegar, plus
2 teaspoons red wine vinegar
1 teaspoon Dijon mustard
1 teaspoon freshly grated lemon zest
1 -2 teaspoon lemon juice, to taste
1 -2 fresh basil leaf, cut into thin strips
1 tablespoon chopped fresh oregano leaves
1 tablespoon chopped fresh flat leaf parsley
3⁄8 cup extra virgin olive oil
sea salt, to taste
fresh ground black pepper, to taste

Steps:

  • Preheat the oven to 400º F. Soak the corn in the sink or a bowl filled with cold water for 10 to 15 minutes. Place on a baking sheet with sides and roast for 20 to 25 minutes, until the kernels are tender. Cool to room temperature, then pull off and discard the husks and silks. Cut the kernels off the cob into a large bowl.
  • Add the mozzarella, avocados, tomatoes, basil, salt and pepper to the bowl with the corn. Drizzle 1⁄2 cup of the vinaigrette over the salad and toss gently. Be careful not to over-mix or mash the avocado. Season with more salt, pepper or vinaigrette to taste. Serve on a bed of the arugula or baby greens.
  • Summer Herb Vinaigrette:.
  • Combine the vinegar, mustard, lemon zest and juice, basil, oregano, and parsley in a small bowl, and stir to mix. Whisk in the olive oil in a slow, steady stream until all of the oil is incorporated. Season with salt and pepper. Use immediately or store refrigerated in an airtight container for up to three days.

4 medium tomatoes, cut into 1/4-inch slices
1/4 cup olive or vegetable oil
1 tablespoon chopped fresh basil leaves or 1 teaspoon dried basil leaves
3 tablespoons red wine vinegar
1 tablespoon water
1/8 teaspoon salt
3 drops red pepper sauce
2 large garlic cloves, finely chopped
8 ounces fresh mozzarella cheese, sliced
Salad greens, if desired

Steps:

  • Place tomatoes in glass or plastic dish.
  • Shake remaining ingredients except cheese and salad greens in tightly covered container. Pour over tomatoes.
  • Cover and refrigerate, turning occasionally, at least 3 hours to blend flavors. Layer tomatoes alternately with cheese on salad greens.
