Number Of Ingredients 12

1 fresh pineapple
2 cups cubed cantaloupe
1 cup halved fresh strawberries
1 cup fresh blueberries
1 tablespoon lime juice
SAUCE:
1 cup fresh strawberries, mashed
1 cup reduced-fat plain yogurt
2 tablespoons honey
1 tablespoon lime juice
1-1/2 teaspoons grated lime zest
1/2 teaspoon vanilla extract

Steps:

  • Stand pineapple upright; vertically cut about a third from 1 side, leaving the top attached. Remove fruit and discard outer peel from the smaller section. Remove fruit from the large section, leaving a 1/2-in. shell., Chop fruit; place in a large bowl. Add the cantaloupe, strawberries, blueberries and lime juice; toss to coat. Place in pineapple shell., In a small bowl, combine the sauce ingredients. Serve with fruit.

1 whole pineapple
1 papaya, peeled, seeded and cut in chunks
1/4 lb seedless grapes
1 apple, peeled cored and cut into chunks
1/4 cup pecans
1 banana, sliced
1/4 cup lime juice
1 lime, quartered, as garnish

Steps:

  • Cut pineapple, lengthwise into quarters.
  • Cut away and discard core.
  • Remove pineapple flesh by carefully cutting between it and the outer skin of pineapple to use the shell for a salad bowl.
  • Cut pineapple into chunks and combine with remaining ingredients, except lime wedges, in a bowl.
  • Gently toss and chill if desired.
  • Serve fruit salad in a pineapple shell topped with lime garnish.

1/3 cup vegetable oil
2 tablespoons lemon juice
1 tablespoon soy sauce
1 teaspoon brown sugar, packed (might need 2)
1 small fresh pineapple
1 red apple, sliced
3 green onions, with tops sliced
1 bunch romaine lettuce, shredded

Steps:

  • Shake oil, lemon juice, soy sauce and brown sugar in tightly covered jar.
  • Cut off top of pineapple; cut pineapple into fourths.
  • Cut fruit from rind, remove core and "eyes".
  • Slice each fourth lengthwise and then crosswise into chunks.
  • Toss pineapple chunks, apple and green onions with dressing.
  • Place romaine in bowl, mound fruit in center.
