The Cabbage Diet Soup is a long time known great soup. However, recently, I have been trying to keep the sodium down in all my cooking to keep the blood pressure in check. When I looked at how much salt was in this recipe the way it was made, I realized that I could cut it down dramatically. But, would it taste as good??? (I think so...)

5 large tomatoes
1 red onion
6 scallions
2 green peppers
2 medium zucchini
2 jalapeno peppers
3 carrots
10 ounces fresh mushrooms
1 bunch celery
1/2 head cabbage
3 low-sodium beef bouillon cubes
24 ounces low-sodium V8 juice
2 tablespoons fresh parsley
4 garlic cloves
2 tablespoons olive oil

Steps:

  • Blanch tomatoes by putting them in a pan with about half an inch of water in the bottom.
  • Cook over medium heat until skins split.
  • Place in a strainer and run under cold water, skin the tomatoes. and set aside.
  • Chop all the vegetables into bite sized pieces.
  • Sauté the onions, peppers, celery and carrots in your soup pot along with the spices (including the beef bouillon) until slightly soft.
  • Add cabbage and continue stirring until the cabbage wilts down.
  • Add mushrooms and zucchini, the blanched tomatoes, and the V8.
  • Cook on low for about 45 minutes.
  • If there is not enough liquid, you can either add more V8 or water if desired.

1/2 small cabbage
2 lbs fresh kielbasa
8 ounces fresh mushrooms
2 -3 cups chicken broth
1/2-1 teaspoon caraway seed
2 teaspoons minced garlic
salt
pepper
2 tablespoons tomato paste
1 medium onion

Steps:

  • In a 3 quart stock pot:.
  • • Brown the kielbasa, remove and cut into bite size portions then return to pot. NOTE: While browning the sausage you made need to add a small amount of oil to aide in browning.
  • • Slice onion into shreds and add to pot.
  • • Slice mushrooms and add to pot.
  • • Sauté sausage, onion and mushrooms at medium / med low heat for approximately 10 minute in the oils in the pot left by the browning of the sausage.
  • • While sautéing sausage, onions and mushrooms, prep the cabbage by slicing into long thin shreds.
  • • Add the cabbage to the sauté mix and continue to sauté.
  • • Add the caraway seed.
  • • Salt and pepper to taste.
  • • Add enough chicken broth to cover the ingredients in the pot plus.
  • • Stir in the tomato paste.
  • • Bring to a boil, and then reduce to a simmer. Simmer for approximately 20 minutes.

1 medium onion, sliced thin
2 tablespoons olive oil
6 cups chicken broth
1/2 small green cabbage, shredded very fine
salt and pepper
1 teaspoon minced fresh thyme
3 medium potatoes, chopped

Steps:

  • In a large saucepan over med. Heat, saute onion in oil until translucent, about 3 min,.
  • Add broth and potatoes. Bring to boiling; cover, reduce heat, and simmer until potatoes are tender, about 15 minute
  • Puree in a blender; 2 cups at a time.
  • Return to pan, bring to a boil, add cabbage and cook 3 minute uncovered.
  • Add salt and pepper.
  • To serve; Ladle into soup bowls and garnish with thyme.

Another hearty low-fat soup from Lynn Fischer's "Fabulous Fat-Free Cooking" I've altered it slightly, adding the use of fresh herbs for additional flavor.

1 cup chopped onion
8 cups low-fat vegetable broth
5 cups shredded green cabbage
2 large potatoes, diced
8 tablespoons diced lean ham
1 teaspoon crushed dill seed
2 tablespoons cider vinegar
3 fresh parsley sprigs
3 fresh sage sprigs
1 bay leaf
salt & freshly ground black pepper
chopped fresh parsley, for garnish

Steps:

  • Tie together the sprigs of sage, parsley and bay with cooking twine to make an herb bundle; set aside for later use.
  • Coat a large non-stick pot with cooking spray.
  • Add the onions, cover and cook over medium heat, stirring occasionally, for 5 to 6 minutes, or until the onions start to turn color.
  • Uncover and cook for an additional 3 to 4 minutes, until golden.
  • If necessary, add 1 to 2 tablspoons water to prevent sticking.
  • Add the vegetable broth, cabbage, potatoes, ham or bacon, dill seed and herb bundle.
  • Cover and bring to almost a boil.
  • Reduce the heat to low and simmer for 15 to 20 minutes, or until the potatoes are tender.
  • If a slightly thicker soup is desired, mash some of the potatoes against the side of the pot with the back of a large wooden spoon.
  • Remove the herb bundle and stir in the vinegar.
  • Season to taste with salt and freshly ground black pepper.
  • Serve each bowl garnished with freshly chopped parsley.
