We discovered this easy French toast recipe in Mexico. We couldn't figure out what made the French toast so delicious until we learned the secret was vanilla. - In a small bowl, mix brown sugar and butter. Spread onto bottom of a greased 8-in. square baking dish. Layer with pear, raisins, bread cubes and pecans., In a large bowl, whisk eggs, ice cream, cinnamon and vanilla until blended; pour over top. - Preheat oven to 350 degrees F.
- Arrange bacon on slotted broiler pan. Sprinkle with brown sugar and place in oven to bake until crisp, 20 to 22 minutes.
- Preheat a large nonstick skillet over medium heat.
- In a shallow dish, beat together with a wire whisk: eggs, half-and-half, vanilla, salt, nutmeg, cinnamon. In a second shallow dish combine flakes and nuts. Add 2 tablespoons butter to warm skillet. Place a cookie sheet lined with foil (for easy clean-up) near the stove. Coat 4 to 6 slices of bread in egg, depending on the size of your skillet, then coat bread in cornflakes and nuts. Cook slices 2 minutes on each side and transfer toast to cookie sheet. Repeat with remaining slices and transfer toast to oven. Bake 10 minutes, with already cooking bacon.
- While bacon and toast are in oven, combine fruit, sugar and liqueur in a serving bowl and reserve.
- Remove toast and bacon from oven. Warm syrup in a small pitcher in microwave 15 seconds on high. Serve toast and bacon on plates with optional garnish of mint and edible flowers.
- Pass syrup and topping at the table.
FRENCH VANILLA TOAST
French Toast at its best! Just substitute French Vanilla Coffee Creamer for the milk. You can also substitute Hazelnut Coffee Creamer, Low Fat Flavored Coffee Creamers, or ANY Flavored Coffee Creamer in place of the milk and have a different french toast flavor everytime. Don't use powdered versions of Flavored Coffee Creamers for this. It must be the liquid version. Serve with maple syrup or fruit spread, warmed. Fresh sliced fruit. Dust with powdered sugar if you like, as well. And of course, dot with butter before your other topping choices. You can also get a loaf of French Bread and do thick slices, cut a pocket in the middle, put fresh fruit of your choice inside and follow the rest of the directions and have Stuffed French Vanilla Toast! I have used sliced bananas, sliced strawberries, black raspberries(I like the flavor better but they are hard to find, unless you live where they are grown). Fresh sliced Peaches or Papaya or Mangoes are good. Blueberries are good, even peeled and sliced oranges are good and top with warmed orange marmalade. I usually use the fruit I put inside as my topping. Sometimes making a simple heated fruit/juice and sugar syrup. It's ALL GOOD, any which way you make it! I love the versatility of the different flavors and since I love French Toast, something different every time I make it, is a real treat! Haven't found a flavor I DON'T like yet!

- Preheat the oven to 400 degrees F (200 degrees C). Lightly grease a baking sheet.
- Slice bread into 1-inch thick slices, then cut each slice into thirds, making sticks.
- Beat eggs, milk, and vanilla extract together in a shallow bowl.
- Mix sugar, baking mix, and cinnamon together on a shallow plate.

VANILLA-CARDAMOM CAST-IRON SKILLET FRENCH TOAST WITH PAN-ROASTED APPLES AND DATE MOLASSES

- For the date molasses: Combine the dates and 3 1/2 cups water in a medium saucepan on medium-high heat. Bring to a boil, then reduce the heat to medium-low. Simmer until softened, stirring occasionally and skimming foam every few minutes, about 15 minutes. Once the dates start to soften, use a wooden spoon to mash them. Strain into a clean saucepan through a fine-mesh sieve. Bring to a boil over high heat, stirring occasionally, and cook until slightly thickened, about 5 minutes.
- For the pan-roasted apples: Melt the butter in a large skillet over high heat. Add the sugar and cook until starting to brown. Add the apples, lemon juice, cardamom and cinnamon. Cook, tossing constantly, until very well caramelized and soft, about 5 minutes. Add the apple cider; cook until thickened, about 5 minutes. Keep warm.

- In a baking dish, whisk together the eggs and yolks. Add the half-and-half, vanilla and cardamom; mix until combined.
- Add 4 slices of bread to the egg mixture; soak for about 30 seconds on each side. In a large cast-iron skillet over medium heat, heat half of the butter and oil until shimmering. Add the soaked bread and cook until golden brown on both sides, about 3 minutes per side. Transfer the French toast to the rack and keep warm in the oven. Soak and cook the remaining slices of bread, using the remaining butter and oil.
- To serve: Place a slice of French toast on a serving plate; top with a spoonful of pan-roasted apples, a drizzle of date molasses, a dollop of yogurt-whipped cream, another slice of French toast, more apples, more yogurt and a final drizzle of date molasses. Serve immediately.
