Although it's commonly made with cocoa powder (chocolate liquor that has been pressed and ground), this classic French-style hot chocolate is richer -- a luxurious blend of bittersweet and semisweet chocolate, hot milk, cream, and a smattering of brown sugar.

5 ounces bittersweet chocolate (preferably 70 percent cacao), chopped
4 ounces semisweet chocolate (preferably 55 percent cacao), chopped
4 cups milk
1 cup heavy cream
2 tablespoons packed light-brown sugar, plus more to taste
Pinch of salt

Steps:

  • Heat all ingredients in a large saucepan over medium heat, whisking, until chocolate has melted and mixture is hot. Stir in more sugar, if desired.

4 ounces unsweetened chocolate pieces
4 cups milk
3/4 cup half-and-half
1/2 cup sugar
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1 teaspoon vanilla
1/2 teaspoon almond extract
1/2 cup heavy cream, whipped for topping

Steps:

  • Melt chocolate in 1 cup of milk, over low heat, stirring constantly.
  • Gradually add remaining milk and half and half, followed by remaining ingredients, except vanilla and almond extract.
  • Cook over medium heat, stirring constantly, until completely heated.
  • Stir in vanilla and almond extract.
  • Serve with whipped cream and sprinkle with nutmeg if desired.
