CROISSANT FRENCH TOAST

1 pint fresh blackberries
1 cup sugar
2 tablespoons cornstarch
8 croissants (a rounder shape is best)
1/4 cup half-and-half
2 tablespoons sugar
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
5 large eggs
Butter, for frying and serving
Warm maple syrup, for serving
Strawberries, for serving
Whipped cream, for serving

Steps:

  • For the blackberry syrup: In a saucepan, combine the blackberries, sugar and 1/2 cup water. Bring to a gentle boil and cook for 5 minutes on low. Stir in the cornstarch, then continue cooking, using a whisk or spoon to mash the larger pieces of blackberries. Remove from the heat when it's nice and thick.
  • For the croissant French toast: Split the croissants in half through the middle.
  • In a bowl, whisk together the half-and-half, sugar, vanilla, cinnamon and eggs. Dunk each croissant half into the mixture so that it's fully coated. Set the pieces aside on a plate.
  • Heat a large nonstick skillet over low heat, then melt a small amount of butter in it. Add as many croissant halves as will fit, cut-side down, then increase the heat very slightly (don't go above medium low). Allow the pieces to cook on the first side for 3 to 4 minutes. Move them around in the skillet a bit to make sure they don't burn. When they're deep golden brown on the bottom, flip them to the other side and let them cook for another 2 minutes or so. Remove from the pan and cook the rest of the croissant halves.
  • Serve a top and bottom piece together with butter, warm blackberry syrup and maple syrup, strawberries and whipped cream.

5 eggs, beaten
1 cup light cream
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 375°. Using cooking spray, grease a 13x9-in. baking dish and set aside. , Slice croissants in half lengthwise. , In a large mixing bowl, whisk together eggs, cream, vanilla paste, cinnamon, orange zest and maple syrup. 1 teaspoon vanilla extract
1/2 cup brown sugar
1/2 cup milk
4 teaspoons orange peel, grated
1/4 teaspoon salt

1/2 cup pecans, toasted rough chopped
1/4 cup butter, diced
maple syrup, warmed

Steps:

  • Butter casserole dish.
  • Cube 10 fresh croissants in large pieces.
  • Whisk eggs, milk, vanilla, brown sugar, spices, orange peel, salt.
  • Pour egg mixture over croissants, cover and refrigerate overnight.
  • Next day, preheat oven 350°F.
  • Toast pecans in dry pan until lightly browned and toasted.
  • Sprinkle nuts over cold casserole.
  • Dot with diced butter.
  • Bake uncovered 350F 30-35 minutes.
  • Allow to sit for 5 minutes then drizzle with warm maple syrup.
  • To make warm maple syrup boil a pan of water.
  • Take boiling water off heat and place maple syrup bottle in hot water for 15 minutes.
  • Serve with maple syrup or powdered sugar or fresh strawberries macerated in sugar.

Since croissants are naturally buttery, there is less need for butter or syrup as you would traditional French toast. Tastes especially great with either apricot pineapple jam or strawberries as shown.

Steps:

  • Whisk together the eggs, cream, Grand Marnier, vanilla, cinnamon, nutmeg, salt, and orange zest in a medium bowl, and set aside. Stir together the cream cheese and confectioners' sugar in a small bowl.
  • Halve the croissants crosswise. Spread bottom with cream-cheese mixture, then with marmalade. Place tops back on to seal. Place the stuffed croissants in a shallow baking dish large enough to hold them in a single layer. Pour egg mixture over croissants; soak 5 minutes.Turn croissants over; soak 5 minutes more or until they are soaked through.
  • Preheat oven to 250 degrees. Place a wire rack on a baking sheet; set aside. Heat 1 tablespoon butter and 1 tablespoon vegetable oil in a large skillet over medium heat. Fry half of the croissants until golden brown, about 3 minutes per side.Transfer to wire rack, and place in oven while cooking remaining bread.Wipe out skillet, and repeat with remaining butter, oil, and bread.   • Make the vanilla whipped cream: In a medium bowl, combine the heavy cream, powdered sugar, and McCormick® Vanilla Extract. Using an electric hand mixer, whip on medium-high speed until thickened and medium peaks form, 3-4 minutes. Cover and refrigerate until ready to serve.
  • Make the salted caramel: Combine the granulated sugar and butter in a small pot. Steps:

  • Make the batter for the French toast by whisking together the eggs, milk, vanilla, and cinnamon until evenly blended. Cover and refrigerate.
  • Pay close attention while you make the caramel apples - put the sugar in a large dry skillet and place it over medium-low heat. Stir constantly with a wooden spoon until the sugar melts and begins to caramelize, about 5 minutes. Be careful; the sugar is really hot at this point. Still stirring, add the butter, which will foam a little. Once the sugar and butter become a caramel sauce, fold in the apple wedges. Now, because the apples are cooler than the sugar, the sugar may start to seize and harden, but don't freak out -- keep stirring, once the apples warm up the caramel will smooth out again. When the caramel sauce starts to form around the apples, pour in the maple syrup. Give it a stir and simmer for about 10 minutes until the apples are fork tender. Pull them off the heat and keep warm until you are ready to serve.
  • For the French toast itself, warm the butter in a large non-stick skillet over medium-low heat. You probably will only be able to fit a couple of croissants in the pan at once, so prepare these in batches. Take a croissant half and quickly dredge it in the batter. The key word here is quickly; the croissants are very soft and will disintegrate if soaked in the batter. Lay the croissants in the pan, cut-side down, and cook for 4 to 5 minutes. Carefully flip them over with a spatula and brown the other side.
  • The presentation is like a caramel apple sandwich - take the bottom half of the croissant and put it on a plate, spoon some of the caramel apples on top of that, and cover with the top 1/2 of the croissant. Dust with confectioners' sugar and cinnamon and serve.

1/2 cup bourbon

Steps:

  • Prepare coals on a grill and let heat reduce to a moderate heat.
  • In a blender, combine eggs, cream, vanilla, cinnamon, and nutmeg. Blend until the ingredients are smooth. Set aside.
  • Slice peaches in half and remove the pit. Brush the flesh side of each half with melted butter. Place the peaches on the grill for 5 minutes, or until the flesh side is evenly caramelized and begins to soften. Remove the peaches from the grill and dice them. Transfer to a bowl and add lemon juice and sugar, to taste. Set the peach mixture aside.
  • Pour the egg batter into a pie plate. Dip the croissant halves into the batter, making sure that each side is coated. Place the croissants on the grill, flat side down. Grill for 1 to 2 minutes, or until the batter appears cooked and the croissant begins to darken; watch carefully, as they will cook quickly. Flip the croissants and grill on the other side for 1 to 2 minutes. Remove the croissants from the grill.
  • Place the bottom half of 1 croissant on a plate. Add 1/4 of the peach mixture and place the top half of the croissant over the peaches. Pour Bourbon Pecan Maple Syrup over the top and garnish with fresh mint. Repeat with remaining croissants.
  • Melt butter in a medium saucepan over medium heat. Once the butter begins to brown, remove the pan from heat and add bourbon. Flambe the mixture until the alcohol has burned off and then add the syrup and pecans. Return the pan to the heat and simmer for 10 minutes.

I decided the other day I would try and make some Croissant. So I looked through the Internet for a recipe that sounded delicious and easy to follow. There are loads. I choose this one. Don't be put off by all the instruction, it is very easy to follow. I only made a little change. Insted of using 2 packages of dry yeast I only used 1, thought that would be too much for the amount of flour used. It come out great. This recipe I got on a website and come from the book of Bernard Clayton's Complete Book of Small Breads. The time to prepare is an estimate.

3 tablespoons flour
1 1/2 cups butter
4 cups flour
2 teaspoons salt
2 tablespoons sugar
2 (7 g) packages dry yeast
1/4 cup warm water
1 1/2 cups milk, warmed to 80 F to 90 F (27 C to 32 C)
1/2 cup half-and-half, warmed
1 egg
1 tablespoon water

Steps:

  • (3/4 pound) of butter and margarine, equally divided and softened at room temperature.
  • Sprinkle 3 Tbsp flour over butter and blend together on the work surface. On a length of foil, fashion a 6" square of soft butter; fold over the sides of the foil to enclose. Place in the refrigerator to chill for 2 to 3 hours.
  • While the butter is chilling, prepare the dough. To mix by hand, in a large mixing or mixer bowl, blend 2 cups of the flour with salt and sugar. Dissolve yeast in warm water and add it and the warmed milk and half-and-half to the flour mixture. Stir with a wooden spoon or the flat blade of an electric mixer to thoroughly blend the batterlike dough, about 2 minutes.
  • Stir in additional flour, 1/4 cup at a time, to make a soft but not sticky dough (it will stiffen when chilled.) Knead by hand or under a dough hook for 5 minutes to form a solid mass.
  • If using a food processor, attach the steel blade. Place 2 cups flour in the work bowl and add the dry ingredients. Pulse to mix. Pour the 1/4 cup water, milk, and half-and-half through the feed tube. Pulse once or twice to be certain that all dry ingredients are moistened. Add the balance of the flour, 1/2 cup at a time, turning the machine on briefly after each addition. When the mixture forms a mass and begins to clean the sides of the bowl, knead for 30 seconds. Don't overknead!
  • This begins the process of cooling the dough and at the same time allowing it to rise. Cover the bowl with plastic wrap and place in the refrigerator for at least 1 hour.
  • Determine that both butter and dough are about the same temperature - 65°F (23°C) is ideal. The block of butter should bend but not break (too cold) nor be oily (too warm) when bent slightly. This may mean taking the butter out of the refrigerator an hour or so early to reach workable temperature. Likewise for the dough. Place the dough on a floured work surface and with the hands press it into a 10" square. Unwrap the block of butter and lay the block diagonally on the dough. Bring each point of dough into the center, overlapping the edges at least 1". Press the dough into a neat package. With a heavy rolling pin, roll the dough into a rectangle, approximately 8" x 18". This dimension is not critical.
  • Caution: If the butter seems to be breaking into small pieces under the dough rather than remaining solid, allow the dough/butter to warm a few minutes. But if the butter softens, becomes sticky, and oozes while making the turns, put the dough back into the refrigerator for several minutes.
  • Fold the length of dough into thirds, as for a letter. Turn so that the open ends are at twelve and six o'clock. Roll again into a rectangle. This time, fold both ends into the middle and then close, as one would a book. The dough will now be in 4 layers. Wrap the package of dough in a cloth (an old tea towel is good) that has been soaked in cold water and wrung dry. Place the wrapped dough in the refrigerator to relax and chill for 1 or 2 hours.
  • Remove the dough from the refrigerator and place on the floured work surface. Unwrap, roll out, and fold in thirds, as for a letter. This is the final turn before it is rolled out and cut into croissants. Dampen cloth again and wrap loosely around the dough. Place the package in a plastic bag so moisture will be retained (not pulled out of the cloth). Leave in the refrigerator 4 to 6 hours or overnight.
  • Mix together the egg and 1 Tbsp of water. Have ready the egg wash, a knife or pastry cutter, and a wooden yardstick if you wish the pieces to be cut precisely otherwise, plan to cut them freehand. You may have or can borrow a French croissant cutter that cuts the dough into triangles.
  • Sprinkle work surface with flour. Roll the dough until it is a generous 10"-x-38" rectangle, and, most importantly, about 1/4" thick. This is a crucial dimension, since it determines the size and texture of the croissants. Trim irregularities to make the strip uniform in width. Cut the strip lengthwise to make two 5" pieces. Mark the strip into triangles, 5" wide on the bottom. Using a yardstick as a guide, cut through the dough with a pastry or pizza cutter or knife. Separate the triangles, place them on a baking sheet, and chill for 15 to 20 minutes. Roll the dough into the traditional croissant shape, by rolling the triangle from the bottom to the point.
  • Place the croissants on a baking sheet and allow to rise for 1 to 2 hours, in which they will double in volume.
  • Preheat the oven to 425°F (220°C). Bake the croissants for 22 to 25 minutes. Allow them to cool on a rack before serving.
  • Yield: 24 to 30 croissants.

8 croissants, halved lengthwise
8 ounces cream cheese, softened
2 cups sliced strawberries, plus extra for garnish
3 large eggs
1 cup milk
1 teaspoon cinnamon
1/2 cup sugar
1 teaspoon nutmeg
1 teaspoon almond extract

Steps:

  • Spread croissant bottoms with cream cheese. Top with fresh strawberries, then sandwich with croissant tops.
  • In a deep dish, beat together eggs, milk, cinnamon, sugar, nutmeg and almond extract.
  • Dip croissants in egg mixture and cook on a hot, buttered griddle or skillet until golden brown on both sides (be careful-croissants burn easily).
  • Garnish with fresh strawberries to serve.
  • NOTE: This recipe can easily be halved- just use 2 eggs instead of 3.

I got this recipe from my grandma. I love to make this recipe when we have company. It's easy but they think I worked very hard on it.

5 eggs
2/3 cup heavy cream
1/3 cup triple sec
2 tablespoons sugar
1 orange, zest of, finely grated
2 teaspoons cinnamon
6 day old plain croissants, cut in half length-wise
6 tablespoons unsalted butter
confectioners' sugar

Steps:

  • Beat eggs and cream together, add triple sec, granulated sugar, orange zest and cinnamon and whisk together.
  • Pour into a shallow bowl or pie plate.
  • Dip each croissant half in mixture, turning once.
  • Melt a few tablespoons of butter in skillet over medium heat, add as many croissant halves that will fit and fry until golden brown, repeat with any remaining croissants.
  • Put on plate and sprinkle with powdered sugar, I also like to add a slice or two of oranges to each plate.
  • Syrup and butter is optional, I like it with both, but my mom eats it plain.
  • Cooking time is approximate.

Batter:
3 large eggs
1/4 c. whole milk
1/2 tsp. vanilla extract
Pinch of ground cinnamon
Apples:
1/2 c. sugar
3 tbsp. unsalted butter
6 granny smith apples, peeled, cored, and cut into 1/2 inch slices
1/2 c. real maple syrup
3 tbsp. unsalted butter
4 large croissants, split in half lengthwise
Powdered sugar, for dusting
Cinnamon, for dusting

Steps:

  • Whisk the eggs, milk, vanilla, and cinnamon. Cover and refrigerate. Put sugar in a large, dry skillet over medium heat. Stir constantly with a wooden spoon until the sugar begins to melt and caramelize, about 5-8 minutes. While still stirring, add in the butter. Once the sugar and butter become saucy, fold in the apple wedges. (The caramel will seize a bit, but continue to stir, and it will eventually coat the apples.) Once the caramel sauce has smoothed out, pour in the maple syrup. Let it gently simmer for 10 minutes, until the apples are fork tender. Remove from heat, cover and keep warm until ready to use. Meanwhile, warm half the butter in a large, non-stick skillet over medium-low heat. Take the bottom halves of the four croissants and dip them in the egg mixture (very quickly as not to absorb too much of the batter). Lay the croissants, cut side down in the pan, and cook until just golden brown about 4 minutes. Flip over and repeat. Repeat with the tops of the croissants as well. To serve, place the bottom of the croissant on a plate. Top with the caramel apples. Place the top half of the croissant over the apples. Drizzle with the caramel sauce. Dust with confectioners sugar and cinnamon. Enjoy!

1/4 cup milk
1/2 teaspoon vanilla extract
1 pinch ground cinnamon
1/2 cup sugar
3 tablespoons unsalted butter
6 granny smith apples, peeled, cored, and cut in 1/2-inch-thick wedges
4 large plain croissants, split in half lengthwise
confectioners' sugar, for dusting

Steps:

  • use granny smith apples because of their low water content. juicy apples, like McIntosh, fall apart and turn to mush (He wasn't lying. That's the worse batch I made!).
  • Make the batter for the French toast by whisking together the eggs, milk, vanilla, and cinnamon until evenly blended. Cover and refrigerate.
  • Pay close attention while you make the apples.
  • Put the sugar in a large, dry skillet and place it over medium-low heat.
  • Stir constantly with a wooden spoon until the sugar melts and begins to caramelize, about 5 minutes. Be careful; the sugar is really hot at this point.
  • Still stirring, add the butter, which will foam a little.
  • Once the sugar and butter become a caramel sauce, fold in the apple wedges. Now, because the apples are cooler than the sugar, the sugar may start to seize and harden, but don't trip out- KEEP STIRRING! Once the apples warm up the caramel will smooth out again.
  • When the caramel sauce loosens up and coats the apples, pour in the maple syrup.
  • Give it a stir and simmer for about 10 minutes, until the apples are fork tender.
  • Pull them off the heat and keep them warm.
  • For the french toast itself, warm the butter in a large nonstick skillet over medium low heat.
  • You'll probably only be able to fit a couple of croissants in the pan at once, so make them in batches.
  • Take a croissant half and dredge it quickly in the batter. Do this QUICKLY or else the croissant will disintegrate if soaked in the batter.
  • Lay the croissants in the pan, cut side down and cook for 4-5 minutes. Carefully flip them over with a spatula and brown the other side.
  • The presentation is like a caramel apple sandwich. Put the bottom half of the croissant on a plate; spoon some of the caramel apples on top of that and cover with the top half of the croissant.
  • Dust with confectioners' sugar and cinnamon and enjoy!

Pure maple syrup, warmed
Fruit compote (optional)

Steps:

  • Whisk eggs, half-and-half, sugar, cinnamon, orange zest, and nutmeg in a large bowl to blend. Add croissants to egg mixture; turn to coat evenly on both sides.
  • Heat a griddle or large skillet over medium-low heat. Brush with melted butter. Lift croissants from batter, allowing excess to drip back into bowl. Cook croissants on griddle until browned on both sides and just cooked through, about 5 minutes per side. Place 2 halves on each plate.
