Scalloped Cabbage with Ham and Cheese image

A cheesy scalloped cabbage and ham casserole. Great for potlucks. A bag of slaw can be substituted for the cabbage.

1 medium head cabbage, chopped
1 onion, chopped
1 ½ cups cooked ham, diced
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup milk
1 teaspoon salt
¾ cup processed American cheese
2 tablespoons dry bread crumbs

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Steam cabbage and onion in a small amount of water until tender. Add the ham. Place into a buttered baking dish.
  • In a skillet, melt butter over low heat. Stir in flour until smooth. Add milk, stirring until smooth. Add salt, cheese and stir until melted. Pour over the cabbage mixture. Sprinkle with bread crumbs and dot with butter. Bake for 30 minutes.

FRENCH CABBAGE AND HAM GRATIN

This dish is very typical of southern France. Adapted from a recipe by Stephanie Alexander. After we made duck stew, we used the rendered duck fat for this recipe and it turned out well. Dont forget to scatter the salt and pepper as you go along.

350 g cabbage (6-8 pcs. of cabbage leaves)
2 teaspoons duck fat
fresh ground black pepper
200 g creme fraiche
100 g gruyere or 100 g cheddar cheese, coarsely grated
200 g cooked ham, cut into thin strips
2 tablespoons breadcrumbs
salt

Steps:

  • Preheat oven to 200°C/400°F.
  • Bring a large saucepan of lightly salted water to a boil.
  • Separate cabbage leaves and blanch for 5 minutes in the boiling water.
  • Drain and squeeze hard in a clean cloth.
  • Rub duck fat on the bottom and sides of a gratin dish.
  • Layer the dish with 1/3 of the cabbage, 1/3 of the creme fraiche, 1/3 of the cheese and half the ham, adding pepper and a little salt as you go along (remember ham has salt already).
  • Repeat the layers once, then cover with a last layer of cabbage and finish with the rest of the cheese and creme fraiche.
  • Scatter with the breadcrumbs and drizzle with the remaining duck fat.
  • Place the gratin dish on top of a baking tray to catch overflow and bake for 25 minutes until crust is golden and the gratin is bubbling at the edges.
  • To serve, cut the layers with a sharp spoon.

2 tablespoons unsalted butter
1 medium onion, sliced
8 ounces ham steaks, cut into 1/2-inch pieces
1 1/2 cups heavy cream
1/2 cup whole milk
4 ounces goat cheese, crumbled
kosher salt
ground pepper
1 head cauliflower, cut into florets
3 tablespoons breadcrumbs
8 sprigs thyme

Steps:

  • Heat oven to 400°F.
  • Melt the butter in a large saucepan over medium-high heat. Add the onion and cook until softened and light golden brown, about 6 minutes.
  • Add the ham and cook, 2 minutes. Add the cream, milk, cheese, 1/4 teaspoon salt, and 1/4 teaspoon pepper and bring to a boil. Reduce heat to medium-low.
  • Simmer until thickened, about 4 minutes. Add the cauliflower. Transfer to a 2-quart casserole dish and sprinkle with the bread crumbs and thyme.
  • Cover with aluminum foil. Bake for 20 minutes.
  • Uncover and continue baking until the cauliflower is tender, 15 to 20 minutes. Remove from oven and let rest at least 5 minutes before serving.
  • Tip: Make this a vegetarian side dish by skipping the ham.

2 tablespoons butter
12 ounces chopped cooked ham
1 medium onion, chopped
3 cloves garlic, minced
½ medium head cabbage, cored and chopped
1 cup chicken broth
salt and ground black pepper to taste

Steps:

  • Melt butter in a large skillet over medium-high heat. Add ham and onion; cook, stirring occasionally, until onion is translucent, about 8 minutes. Add garlic and cook until fragrant, about 2 minutes.
  • Add cabbage; cook and stir for 5 minutes. Add broth and season with salt and pepper. Cover and cook for 8 minutes.
  • Uncover and continue to cook until cabbage is tender, about 5 more minutes.

6 tablespoons butter
1 small onion, minced
1 garlic clove, minced
1/4 cup all-purpose flour
2 cups milk
1/2 cup parmesan cheese
1/2 cup grated swiss cheese
1 lb broccoli, trimmed, cooked in boiling, salted water until just tender, and chopped coarse, about 4 1/4 cups
5 ounces cooked ham, chopped
1 cup coarse dry breadcrumbs

Steps:

  • Heat the milk in a small saucepan until scalding.
  • Take off heat.
  • In a saucepan, melt 4 tlbsps butter over moderately-low heat and saute the onion and garlic for 3-4 minutes. Add the flour and cook the roux, stirring, for 3 minutes more.
  • Add the heated milk in a stream, whisking, and simmer it, stirring, for 5 minutes.
  • Remove from heat and stir in the cheeses and season to taste.
  • Keep stirring just until the cheeses are melted and incorporated into the sauce.
  • In a well-buttered 14 inch gratin dish, combine the broccoli and ham and pour sauce over.
  • Sprinkle breadcrumbs over top, dot with remaining 2 tblsps butter and bake in a preheated 375F (190C) oven for 30 minutes, or until it is browned and bubbly.

4 lbs chicken pieces, skin on
1 teaspoon coarse salt
3 tablespoons flour
1 slice smoked bacon (1/4 inch thick)
1/2 cup vegetable oil
1 medium onion, finely chopped
1 teaspoon white pepper
1/2 teaspoon crumbled dried tarragon
1 (8 ounce) can stewed tomatoes
1/2 cup dry white wine
1 chicken bouillon cube, broken into pieces
1 (8 ounce) package frozen green peas, thawed
3 medium carrots, peeled and cut into 1 inch rounds
12 small red potatoes
3 tablespoons flat leaf parsley, finely chopped
salt

Steps:

  • Prepare the chicken but don't skin.
  • Salt the pieces and dredge them lightly in the flour, brushing off and saving the excess.
  • Trim off and discard the bacon rind.
  • Slice the bacon across the width into 1/4 pieces Heat the oil in a large kettle and brown the bacon lightly.
  • Remove and set aside.
  • Brown the chicken pices in batches, removing them as they finish browning.
  • Remove and discard all but 3 Tbs of the fat.
  • Add the onion, pepper, tarragon, and the remaining flour.
  • Scrape these back and forth in the hot fat until the onion is transparent.
  • Add the tomatoes and their juice and continue the scraping action until most of the juice has evaporated.
  • Add 1 1/2 cups of water, the wine, and the crumbled bouillon cube.
  • Add the bacon, chicken, peas, and carrots.
  • Cover and simmer gently for 30 minutes Scrub the new potatoes under cold water and pare off a one inch strip around the middle of each one, leaving the peel on the ends.
  • Add them to the stew and simmer for 20 minutes.
  • Stir in the parsley.
  • Salt to taste, and serve hot.

  • Bake uncovered for 30 to 35 minutes.
