Flounder Fillets With Mushrooms and Tomatoes image

1 tablespoon butter
1 tablespoon olive oil
1/3 pound mushrooms cut into small cubes
2 teaspoons finely chopped garlic
4 ripe plum tomatoes, cored, peeled and cut into small cubes
1 tablespoon fresh lemon juice
2 sprigs fresh thyme or 1 teaspoon dried
Salt and freshly ground pepper to taste
6 tablespoons sesame seeds
1 1/4 pounds fillet of flounder
2 tablespoons corn or vegetable oil
3 tablespoons chopped fresh parsley

Steps:

  • Heat butter and olive oil in a skillet. Add mushrooms, and cook briefly over medium-high heat, shaking the pan until mushrooms are lightly browned. Add garlic; do not brown. Add tomatoes, lemon juice, thyme and salt and pepper to taste. Cook, stirring, for 5 minutes. Remove from heat and keep warm.
  • Spread sesame seeds on a large platter. Season fillets with salt and pepper. Lay them over the sesame seeds on one side, then on the other to coat them lightly.
  • Heat corn oil in a large nonstick skillet, and place fillets in it without crowding. Cook over high heat until fillets and seeds are lightly browned on both sides. Time will vary depending on thickness of fillets.
  • Spoon sauce onto warmed serving plates. Place fish fillets over sauce, sprinkle with parsley and serve.

1 lb sole or 1 lb other delicate fish fillet, about 3/4 inch thick
1/2 teaspoon paprika
1/2 teaspoon salt
1/8 teaspoon pepper
1 tablespoon butter
1/2 cup mushroom, sliced
1/3 cup leek, sliced
1/3 cup dry white wine or 1/3 cup chicken broth
1/4 cup sliced almonds
1 tablespoon parmesan cheese, grated

Steps:

  • Heat oven to 375 degrees.
  • If fish fillets are large, cut into 4 serving pieces. Arrange in ungreased square baking dish, 8 x 8 x 2 inches. Sprinkle with paprika, salt and pepper.
  • Melt butter in 10-inch skillet over medium heat. Cook mushrooms and leeks in butter, stirring occasionally, until leeks are tender. Stir in wine. Pour mushroom mixture over fish. Sprinkle with almonds and cheese.
  • Bake uncovered 15 to 20 minutes or until fish flakes easily with fork.

12 ounces slender green beans (preferably haricots verts), trimmed
12 ounces mushrooms, sliced
4 heads Belgian endive, cut crosswise into 3/4-inch-thick slices
3 tablespoons white wine vinegar
1 1/2 tablespoons Dijon mustard
1/2 cup olive oil
1 fresh chive bunch, sliced

Steps:

  • Blanch green beans in large pot of boiling salted water until just crisp-tender, about 2 minutes. Drain. Rinse with cold water to stop cooking; drain well. Pat green beans dry. Transfer to large bowl. Add mushrooms and endive.
  • Mix white wine vinegar and Dijon mustard in small bowl. Gradually mix in olive oil. Mix in sliced chives. (Can be prepared 6 hours ahead. Cover vegetables and refrigerate. Let dressing stand at room temperature.)
  • Pour dressing over vegetables and toss to coat. Season with salt and pepper.

1 (3 1/2 ounce) bag boil-in-bag long-grain rice
1/2 teaspoon salt, divided
1/4 teaspoon black pepper, divided
4 (6 ounce) flounder fillets
2 tablespoons all-purpose flour
2 teaspoons olive oil
1/3 cup dry white wine
2 tablespoons fresh lemon juice
1 tablespoon drained capers, chopped
2 tablespoons butter
4 cups fresh Baby Spinach

Steps:

  • Cook rice according to package directions, omitting salt and fat. Place rice in a medium bowl; stir in 1/4 teaspoon salt and 1/8 teaspoon pepper.
  • Sprinkle fish with remaining salt and pepper. Dredge fish in flour.
  • Heat oil in a large nonstick skillet over medium-high heat. Add fish to pan; cook 1 1/2 minutes on each side or until fish flakes easily when tested with a fork or until desired degree of doneness.
  • Add wine, juice and capers to pan; cook 1 minute. Add butter to pan, stirring until butter melts. Remove fish and sauce from pan; keep warm. Wipe pan clean with a paper towel. Add spinach to pan; saute 1 minute or until wilted. Place 1/2 cup rice onto each of 4 plates. Top each serving with about 1/3 cup spinach, 1 fillet and 1 tablespoon sauce.

4 large shallots, halved, thinly sliced
1 teaspoon chopped fresh thyme
1 1/4 pounds fresh wild mushrooms (such as chanterelles, stemmed shiitake, and oyster), trimmed, thickly sliced
1/2 pound button mushrooms, thickly sliced
1/3 cup Madeira
3/4 pound haricots verts or small slender green beans, trimmed
3 tablespoons (about) low-salt chicken broth (optional)

Steps:

  • Melt 1/4 cup butter in large pot over high heat. Add shallots and thyme; sauté until shallots begin to brown, about 4 minutes. Add all mushrooms; sprinkle with salt and pepper. Sauté until juices evaporate, about 10 minutes. Add Madeira; toss until evaporated, about 1 minute. Set aside.
  • Cook haricots verts in medium pot of boiling salted water until crisp-tender, about 4 minutes. Drain. Let stand until ready to use, up to 2 hours.
  • Add remaining 1 tablespoon butter to mushrooms in pot. Add haricots verts. Toss over medium-high heat until butter melts and vegetables are heated through, adding broth by tablespoonfuls if mixture is dry, about 3 minutes. Season to taste with salt and pepper. Transfer vegetables to bowl and serve.
