FLAVORFUL BEEF STIR-FRY

- In a large resealable plastic bag, combine the cornstarch, sugar, soy sauce and wine, apple juice or water until smooth; add beef. Seal bag and turn to coat; set aside. , In a large skillet, stir-fry the broccoli, carrots, pea pods and onion in 1 tablespoon oil for 1 minute. Stir in water chestnuts. Cover and simmer for 4 minutes; remove and keep warm. , In the same skillet, stir-fry beef in remaining oil until meat reaches desired doneness. Return vegetables to pan; toss. Serve with rice.

- Season the steak with salt and pepper. In a medium bowl, whisk together the soy sauce, chile pepper, sugar and lime juice until the sugar is dissolved. Add the beef, toss to coat and set aside.
- In a large skillet over medium-high heat, heat the oil until shimmering, about 1 minute. Add the beef and cook, stirring, until cooked through, 3 to 5 minutes.
- Remove the beef from the skillet and set aside. Allow the liquid in the pan to reduce until thickened, about 4 minutes. Add the garlic and scallions and cook 1 minute more. Add the mushrooms and cook for 2 to 3 minutes more. Add the snow peas, baby corn and bell pepper and continue cooking until all the vegetables are crisp-tender, about 2 minutes. Return the beef to the skillet and toss to combine.

Steps:
- Combine beef and marinade in zipper-type plastic bag.
- Marinate in refrigerator at least 3 hours.
- Heat 2 T oil in wok.
- Stir-fry/pan-fry the meat in 2 batches until cooked through.
- Remove meat to a warm dish.
- Add chopped vegetables and a bit of oil to wok.
- Stir-fry until crisp-tender.
- Return meat to wok.
- Add tofu if desired.
- Stir-fry until heated through.
- Add sauce; cook to desired thickness.
- Serve with steamed jasmine rice, if desired.
