Saw a few recipes called for this dressing and that it wasn't posted on this site. Nice easy southwest dressing for salads. Used it on our last camping trip; it was quick and easy to prepare in our trailer.

½ cup plain yogurt
¼ cup light sour cream
2 tablespoons ketchup
2 tablespoons minced onion
1 tablespoon lime juice
1 tablespoon finely chopped cilantro
1 teaspoon ground cumin
½ teaspoon chili powder, or to taste
½ teaspoon garlic powder
¼ teaspoon salt

Steps:

  • Stir yogurt, sour cream, ketchup, onion, lime juice, cilantro, cumin, chili powder, garlic powder, and salt together in a bowl with a whisk until smooth.
  • Cover bowl with plastic wrap and refrigerate until chilled, at least 10 minutes.

1 lb fusilli (uncooked)
1 1/2 tablespoons olive oil
4 large tomatoes, seeded and diced
3 cups corn kernels (fresh or frozen, thawed)
3 large carrots, thinly sliced on diagonal, slices cut lengthwise into thin strips
1/2 large red onion, chopped
1/2 cup mayonnaise
2 tablespoons Dijon mustard
2 tablespoons fresh lime juice
2 jalapeno peppers, seeded and minced
1 1/4 teaspoons chili powder
1 1/4 teaspoons ground cumin
1/2 cup fresh cilantro, chopped
salt & pepper

Steps:

  • Cook fusilli pasta according to package directions, until just tender but firm to the bite.
  • Drain pasta and rinse with cold water to cool.
  • Transfer drained pasta to a large bowl.
  • Add 1 1/2 Tablespoons olive oil and mix thoroughly to coat.
  • Add diced tomatoes, corn kernels, carrot strips and chopped onions; toss well.
  • In a small bowl, whisk together mayonnaise, Dijon mustard, and fresh lime juice.
  • Mix in minced jalapenos, chili powder, ground cumin and chopped cilantro.
  • Add dressing to pasta mixture and mix well to blend.
  • Season to taste with salt and pepper.
  • Chill at least 1 hour before serving.

3 seedless oranges, divided
1/2 cup KRAFT Real Mayo
2 Tbsp. sugar
1 medium jicama, cut into matchlike sticks
3 Granny Smith apples, thinly sliced
2 large beets, cooked, peeled and cut into wedges
1/3 cup pomegranate seeds
1/2 cup coarsely chopped walnuts, toasted

Steps:

  • Grate zest from 1 orange; place in small bowl. Holding oranges over same bowl, section all oranges, reserving juice in bowl. (See Tip.) Set orange sections aside.
  • Add mayo and sugar to juice mixture; mix well.
  • Place jicama in center of platter; surround with oranges, apples and beets. Drizzle with mayo mixture. Top with pomegranate seeds and nuts.

We loved the result so much that we just started dipping everything we could find in it even before we got it on our vegetable salad! This would also be delish on a meat, chicken, or shrimp salad. The dipping possibilities are endless! So simple; just 3 ingredients that you probably have in your pantry right now.

1 1/2 cup(s) regular or buttermilk ranch salad dressing, homemade or store bought. if using bottled dressing, you will need 12 ounces.
1/4 cup(s) or more (according to taste) salsa or picante sauce. you pick the heat. i used medium, chunky salsa
1 tablespoon(s) taco seasoning mix. may use more according to taste but use judiciously; taco seasoning quickly over powers other flavors

Steps:

  • Mix 3 ingredients together and serve as salad dressing or dipping sauce. Refrigerate leftover. BOOM! You are out of the kitchen and ready to eat. Hope you enjoy.
