Linguine with Tomatoes Basil and Brie image

5 large ripe tomatoes
16 ounces brie, (torn into small pieces)
1 cup fresh basil leaves, (cut into thin strips)
3 cloves garlic, (finely minced)
1/2 cup extra- virgin olive oil
several pinches crushed red pepper
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
24 ounces linguine

Steps:

  • Combine all ingredients (except pasta) in a serving bowl large enough to hold the cooked pasta and sauce. Stir gently to combine. Set aside at room temperature for at least two hours.
  • Cook linguine in salted water until al dente. Drain and add to the tomato mixture. Toss gently to distribute sauce. Serve immediately.

7 ounces brie cheese, cut into pieces (freeze for 5-10 minutes to make cutting easier)
2 cups fresh diced tomato
1/2 cup sliced fresh basil
2 cloves garlic, minced
1 tbsp olive oil
salt and pepper, to taste
1 lb dried pasta of your choice

Steps:

  • In a medium bowl, stir together the brie, tomatoes, basil, garlic and olive oil. Cover and let stand at room temperature for at least 30 minutes, stirring occasionally.
  • Cook the pasta, per package instructions, to al dente. Drain well.
  • Toss the hot pasta with the brie and tomato mixture. Season, to taste, with salt and pepper.
  • Serve immediately.

1 pound thin spaghetti
2 pounds beefsteak tomatoes (about 3 medium)
1/4 cup extra-virgin olive oil
1/4 cup fresh basil leaves, chopped, plus more for serving
8 ounces Brie, cut into 1/2-inch pieces

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions.
  • Meanwhile, grate the tomatoes on the largest holes of a box grater into a large bowl, discarding any big pieces of excess tomato skin. Whisk in the oil, basil and 2 teaspoons salt. Stir in the Brie.
  • Drain the pasta, reserving 1/4 cup of the pasta water. Add the pasta to the tomato mixture and toss to combine. Add the pasta water, a little at a time, to moisten the pasta and help the Brie partially melt, if needed.
  • Top with more basil before serving.

1 large onion, thinly sliced

4-1/2 cups water
1 cup grated Parmesan cheese
