Fettuccine with Chicken, Leeks, and Gorgonzola image

This delicious, rich, and creamy Gorgonzola fettuccine pasta dish is one of my very favorites. It's also wonderful the next day if you are lucky enough to have leftovers! Omit the chicken for a delicious vegetarian dish. You can also use multi-colored fettuccine pasta.

1 (12 ounce) package dry spinach fettuccine
2 tablespoons olive oil, divided
1 tablespoon butter
2 large skinless, boneless chicken breasts, cut into bite-sized pieces
2 large leeks, chopped, or more to taste
2 cloves garlic, chopped, or more to taste
1 cup chicken broth
1 cup heavy whipping cream
⅓ cup crumbled Gorgonzola cheese
½ cup chopped toasted walnuts
salt and ground black pepper to taste
1 bunch chopped fresh parsley for garnish

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Cook fettuccine at a boil until tender yet firm to the bite, about 8 minutes. Drain and toss with 1 tablespoon olive oil. Set aside and keep warm.
  • Heat remaining tablespoon olive oil and butter in a skillet over medium heat. Add chicken and leeks; cook and stir until leeks are tender and chicken is no longer pink in the center and juices run clear, 5 to 7 minutes. Add garlic; cook and stir until fragrant, 1 to 2 minutes. Pour in chicken broth; continue cooking 2 to 3 minutes more. Pour in heavy cream. Reduce heat; let simmer until thickened, about 5 minutes.
  • Stir Gorgonzola cheese and walnuts into the skillet with the chicken; continue to simmer until cheese has melted, 2 to 3 minutes. Season with salt and pepper. Toss with cooked pasta. Top with parsley.

1 package (16 ounces) penne pasta
1 pound boneless skinless chicken breasts, cut into 1/2-inch pieces
1 tablespoon olive oil
1 large garlic clove, minced
1/4 cup white wine
1 cup heavy whipping cream
1/4 cup chicken broth
2 cups crumbled Gorgonzola cheese
6 to 8 fresh sage leaves, thinly sliced
Salt and pepper to taste
Grated Parmigiano-Reggiano cheese and minced fresh parsley

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large skillet over medium heat, brown chicken in oil on all sides. Add garlic; cook 1 minute longer. Add wine, stirring to loosen browned bits from pan., Add cream and broth; cook until sauce is slightly thickened and chicken is no longer pink. 400g dried spinach pasta (we used Seeds of Change spinach trottole pasta, available from Tesco)
2 leeks, cleaned and finely sliced
1 courgette, grated
3 tbsp pesto
2 tbsp low fat soft cheese
2 tbsp fine breadcrumbs
25g butter
25g plain flour
250ml milk
1 tsp olive oil
2-3 (depending on size) skinless chicken thigh fillets, cut into cubes
1 skinless chicken breast, cut into cubes
⅓ onion very finely chopped (optional)

Steps:

  • For the base, melt the butter in a saucepan, stir in the flour and cook for a few mins, stirring all the time. Now, using a whisk or spatula, carefully stir in the milk, a little at a time, making sure the sauce stays smooth. Bring the mixture to a simmer and cook for a couple of mins until it thickens - it will be very thick. Turn the heat right down and keep cooking for 5 mins, stirring often.
  • Meanwhile, heat the oil in a non-stick frying pan and fry all of the chicken in batches until it starts to colour lightly at the edges. Scoop out each batch of chicken and put it on a plate. Add the onion to the pan if you are using it, and cook over a low heat until soft. Add the chicken and any juices and the onion to the white sauce, fold it in and cook the mixture for a further 15 mins or until the chicken is cooked through. If you're making the base ahead of time, you can leave it to cool at this stage then freeze in an airtight container for up to a month. (Defrost fully before using in the next step.)
  • Cook the pasta following pack instructions. Put the leeks in a pan with a little water, cover and cook until very soft. Drain, then return to the pan with the courgette, pesto and soft cheese, stir everything together, add the chicken base and stir well, then heat until just bubbling. Add a splash of water if it's very thick.
  • Stir the pasta into the chicken mixture and tip into a large baking dish. Sprinkle over the breadcrumbs and grill the top until it browns.

This recipe is absolutely delicious, but not a calorie light dish. We save it for special occasions.

1 lb chopped cooked chicken meat
8 tablespoons butter, softened
1/4 cup cream
1/2 cup grated parmesan cheese
6 quarts water
1 teaspoon salt
1 lb fettuccine pasta (dried or fresh)
freshly grated pepper
grated parmesan cheese

Steps:

  • Cream the butter in a bowl with a wooden spoon until it is light and fluffy.
  • Beat in the cream a little at a time, and then beat in 1/2 cup grated Parmesan cheese, a few tbsp at a time.
  • Cover the bowl and set it aside (refrigerate if not ready to use, but bring to room temperature before use).
  • Prepare the chicken and keep it warm.
  • You can use leftover chopped cooked chicken, or dice skinless, boneless chicken meat and saute in olive oil or butter a few minutes until cooked but still tender.
  • Season as you like.
  • Set a large pasta bowl or casserole in a 250 oven to heat while you cook the fettucine.
  • Bring the water and salt to a rolling boil in a large stock pot.
  • Drop in the fettuccine and stir gently with a wooden spoon or fork for a few moments to prevent strands from sticking.
  • Boil, stirring occasionally until the pasta is tender (soft, but al dente or resistant to bite).
  • Immediately drain the pasta into a colander.
  • Make sure it's completely drained before transferring to the hot pasta bowl.
  • Add the chicken and the creamed butter and cheese mixture and toss with the fettuccine and chicken until every strand is well coated.
  • Season with salt and freshly grated pepper.
  • Serve at once and pass grated Parmesan cheese.

1 medium zucchini, peeled
1 medium carrot
1 tablespoon salted butter
½ pound chopped boneless chicken breast
1 medium leek, sliced
2 cups chicken broth, divided
1 cup heavy cream
¼ cup white wine
ground black pepper to taste
4 ounces tagliatelle pasta

Steps:

  • Use a vegetable peeler to peel zucchini and carrot into fine slices. Cut slices lengthwise into thin ribbons, similar to the tagliatelle; set aside.
  • Melt butter in a frying pan over medium heat. Add chicken and fry until seared, 3 to 4 minutes. Add leeks and continue to fry until softened, about 3 minutes.
  • Add 1 cup chicken broth, cream, white wine, and pepper. Bring to a simmer and cook until sauce thickens, 6 to 8 minutes. Keep warm.
  • Meanwhile, bring remaining chicken broth to a boil in a saucepan. Add vegetable ribbons and tagliatelle. Cook at a boil until tagliatelle is tender yet firm to the bite, about 8 minutes.
  • Drain tagliatelle and serve, adding warm chicken-leek mixture on top.

4 tablespoons olive oil
2 cups finely chopped onions
6 cups chopped leeks (, white and pale green parts only, about 6 medium leeks)
1 bunch green onion, sliced (white part only)
1/2 cup chopped shallot
1 cup crumbled gorgonzola (, or other blue cheese)

Steps:

  • Heat oil in heavy large skillet over medium heat.
  • Add chopped onions and saute until tender and beginning to brown, about 10 minutes.
  • Add leeks, green onions and shallots, saute until very tender, stirring often, about 10 minutes.
  • Meanwhile, cook pasta in large pot of boiling salted water until just tender but still firm to bite.
  • Drain well, reserve 1/2 cup pasta cooking liquid.
  • Return pasta to same pot.
  • Add onion mixture, toss to combine.
  • Mix in reserved cooking liquid by tablespoonfuls if pasta is dry.
  • Mix in cheese, season with salt and pepper.
