This is a recipe I just kind of fooled around with and made up. When I first tasted it I was proud! I felt like I was eating a meal from a gourmet Italian restaurant!

3 tablespoons olive oil
1 pound shrimp, peeled and deveined
5 cloves garlic, minced
1 tablespoon white wine
1 pound linguine pasta
2 tomatoes, chopped
1 teaspoon dried oregano
½ teaspoon dried basil
1 (6 ounce) package crumbled feta cheese

Steps:

  • In a medium skillet over medium heat, heat 2 tablespoons olive oil. Cook shrimp, garlic and white wine for 5 minutes, or until shrimp is pink. Remove shrimp with slotted spoon and set aside.
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • While pasta is cooking, cook tomatoes with remaining 1 tablespoon oil, oregano and basil over medium heat in wine mixture until tender, 10 minutes.
  • Toss hot pasta with shrimp, tomato sauce and feta. Feta will melt slightly. Serve.

1 medium onion
2 tablespoons olive oil
3 garlic cloves, minced
2 cups canned whole tomatoes in puree
1 teaspoon oregano
1/2 teaspoon basil
1/4 teaspoon pepper
3/4 lb pasta (linguine)
1 lb medium shrimp
1/2 cup pitted black olives (chopped)
1 cup crumbled feta cheese

Steps:

  • Bring a large pot of water to a boil.
  • Cut onion into thin slices and mince garlic cloves.
  • In a large skillet, warm the olive oil over medium-high heat until hot but not smoking. Add the onion and garlic and cook until the mixture is golden, about 5 minutes.
  • Add the tomatoes, oregano, basil and pepper, and bring to a boil over medium-high heat , breaking up the tomatoes with a spoon. Reduce the heat to low, cover and simmer, stirring occasionally, while you cook the pasta and prepare the shrimp.
  • Add the pasta to the boiloing water and cook until al dente 10 to 12 minutes, or according to package directions .
  • Shell and devein the shrimp.
  • Uncover the sauce and bring to a boil over medium-high heat. Add the shrimp, reduce the heat to low, cover and simmer for 3 minutes.
  • Add the olives and half the feta cheese and stir to combine.
  • Drain the pasta and serve topped with the shrimp and sauce. Garnish each serving with remaining feta cheese.

1 gallon water

1 pound medium pasta shells

¾ cup coarsely chopped, pitted Kalamata olives

½ small red onion, cut into small dice
2 teaspoons dried oregano

Steps:

  • To make the vinaigrette, whisk together the rice wine vinegar, mustard, garlic, pinch of salt, and pepper; slowly pour in 2/3 cup olive oil, whisking constantly. Pour into a jar with a tight-fitting lid to transport it to the picnic.
  • Adjust oven rack to highest position and turn broiler on high. Toss zucchini and bell pepper with 2 tablespoons olive oil and salt and pepper to taste, and arrange on a large baking sheet with sides. Broil until spotty brown, 8 to 10 minutes, turning zucchini slices and pepper halves once. Set aside in a large bowl to cool, then cut into bite-sized pieces.
  • Bring 1 gallon of water and 2 tablespoons of salt to boil. Add pasta; boil using package times, until just tender. Drain thoroughly (do not rinse) and dump onto the baking sheet. Set aside to cool.
  • Put vegetables, pasta and remaining ingredients (except dressing) in the bowl or a gallon-sized zipper bag (can be refrigerated for several hours). When ready to serve, add dressing; toss to coat.

1/4 cup extra-virgin olive oil
1 medium onion, chopped
3 garlic cloves, minced

1/3 cup pitted Kalamata olives, chopped

Steps:

  • Set a large pot of salted water to boil. In a medium saucepan, heat 2 tablespoons oil over medium-high. Add onion and garlic. Cook until soft, 5 minutes. Add tomato paste and oregano. Cook until fragrant, 30 seconds. Add tomatoes, tomato sauce, olives, and capers, if using. Cook, breaking up tomatoes with a spoon, until sauce thickens, 10 minutes. Season with salt and pepper. 2 tablespoons Dijon mustard
1 -2 teaspoon fresh minced garlic

1 large zucchini (sliced lengthwise into about 1-inch thick slices)
1 large yellow bell pepper (halved lengthwise then seeded, can use 2 medium peppers)
1 medium eggplant (chopped into about 1-inch cubes)

1 lb uncooked medium pasta shell
1 -1 1/2 lb cooked small shrimp
8 ounces large cherry tomatoes, halved

1 small red onion, diced
2 -3 teaspoons dried oregano (or to taste)

Steps:

  • For the vinaigrette; in a blender process vinegar with mustard, garlic and salt for about 5 seconds.
  • Slowly drizzle in the oil until blended.

My best French friend Cecile introduced me to Espelette pepper powder and I can't get enough of it! It's a red pepper powder from French commune of Espelette that is mildly spicy and full of flavor. This pasta dish combines Espelette pepper with shrimp and feta and the three ingredients work together beautifully. I like to call this dish Les Pates de Cecile (Cecile's Pasta). For additional flavor and a nice presentation, you can crumble some additional feta over each serving and drizzle with extra-virgin olive oil.

4 ounces fresh green beans, trimmed and cut into 1- to 1 1/2-inch pieces
8 ounces dried rotini pasta (or any similar size pasta)
1 lb medium cooked shrimp, peeled and deveined
2 -4 tablespoons chopped fresh dill
2 tablespoons red wine vinegar
1 tablespoon lemon juice
4 ounces crumbled feta cheese
salt
fresh ground black pepper

Steps:

  • Have ready a large bowl of ice water.
  • In pot of boiling salted water, cook green beans until they turn bright green and start to soften.
  • Transfer beans to ice water immediately. When cool, drain them and pat them dry with a clean towel.
  • Meanwhile, prepare pasta according to package directions (cook until al dente.).
  • Drain pasta and rinse with cold water until pasta is completely cool and drain again until free of excess water. Set aside.
  • In large bowl, combine cooked green beans, pasta, shrimp, dill to taste, vinegar, lemon juice, olive oil, feta cheese, salt and pepper to taste.

Steps:

  • Heat oven to 350°F.
  • Mix first 8 ingredients until blended; set aside.
  • Layer half each pasta, shrimp, peppers and mozzarella in 13x9-inch baking dish sprayed with cooking spray. Top with remaining pasta, shrimp and peppers. Cover evenly with feta mixture; sprinkle with remaining mozzarella.
  • Bake 30 min. Let stand 10 min. before serving.

24 oz. angel hair pasta, cooked al dente and drained
5 tsp. minced garlic
4 tbsp. olive oil
1 lb. small shrimp, peeled and deveined, tails intact
1/4 cup white wine
4 vine ripe tomatoes, chopped
1 pkg. fresh basil, slivered, 1/2 oz.
8 oz. feta cheese, crumbled
large grind pepper to taste

Steps:

  • 1. While pasta is cooking, in heavy large skillet, saute garlic in olive oil over medium high heat til fragrant. Add shrimp and saute til pink and cooked through
  • 2. Add white wine, stir and reduce slightly. Add tomatoes and lower heat. Add basil and feta cheese and stir to blend. season with salt and pepper to taste. Don't overcook shrimp or they become rubbery. Set shrimp mixture aside til pasta is done. Drain pasta and add to the sauce. Mix thoroughly and heat til warmed. Serves 4 to 6

3 tablespoons olive
1 teaspoon crushed garlic
6 plumb tomatoes, peeled,seeded and chopped
1/2 cup white wine
1/2 cup chicken broth
1/2 cup fresh basil, julianned
1 tablespoon fresh oregano
1/2 teaspoon red pepper flakes
1 1/2 lbs raw shrimp, peeled, deveined
1 pound cooked linguine

Steps:

  • Heat oil over moderate heat. Add garlic and saute until pale brown, about 30 seconds. Add tomatoes and cook until tender. Add wine, broth, basil, oregano, red pepper and simmer, stirring, 2 minutes. Add shrimp, heat for another 3 minutes, until the shrimp are cooked. Add the feta and stir until starting to melt. Serve immediately over hot pasta.

12 oz. penne pasta
1/4 cup olive oil
2 tbsp butter
2 large shallots, diced
6 large garlic cloves, minced
3/4 lb shelled, deveined, uncooked medium shrimp
2 lb plum tomatoes, seeded and chopped (about 5 cups)
1/4 tsp salt
1/4 tsp freshly ground pepper
1/2 cup (2 oz) feta cheese
2 tbsp chopped fresh Italian parsley

Steps:

  • 1. Cook penne in large pot of boiling salted water according to package directions; drain. 2. Meanwhile, heat oil and butter in large skillet over medium heat until butter is melted. Add shallots; cook 3 to 4 minutes or until translucent and softened. Add garlic; cook 1 minute. Add shrimp; cook 3 to 4 minutes or until shrimp turn pink. Stir in tomatoes; cook 5 minutes or until heated through. Stir in salt and pepper. 3. Top penne with shrimp mixture. Sprinkle with feta cheese and parsley.

1/4 cup Lemon Juice

1/4 teaspoon Pepper

Steps:

  • Combine Shrimp, Feta, and Spring Onion. Mix dressing ingredients. Add to Shrimp mixture. Cover and refrigerate at least one hour. Cook pasta, drain, and toss with above mixture. Serve at room temperature.

1 medium yellow onion, chopped
1 tablespoon finely chopped garlic
28-ounce can whole tomatoes, chopped, with 2/3 cup of the juice reserved
1/2 cup dry white wine
3 tablespoons chopped flat-leaf parsley, divided
1/2 teaspoon dried oregano
1 pound medium raw shrimp, peeled and deveined
12 black olives, coarsely chopped
1/2 teaspoon grated lemon zest
1/4 teaspoon salt
Ground black pepper, to taste
1 pound whole-grain linguine
1/2 cup crumbled feta cheese

Steps:

  • In a large saucepan over medium, heat the oil. Add the onion and saute until it begins to color, about 4 minutes. Add the garlic and stir for 30 seconds more. Add the tomatoes with reserved juice, wine, 2 tablespoons of the parsley and the oregano. Bring to a simmer. Cook over low, stirring occasionally, for 20 minutes. Bring a large pot of salted water to a boil. While the water heats, add the shrimp, olives and lemon zest to the tomato sauce and simmer until the shrimp are opaque at the center, about 3 to 5 minutes. Season with salt and pepper. Cook the linguine according to package directions. Drain and serve topped with the sauce and sprinkled with the feta cheese and the remaining 1 tablespoon of chopped parsley.
