EGG YOLK PASTRY:
5 cups all-purpose flour
4 teaspoons sugar
1/2 teaspoon salt
1/2 teaspoon baking powder
1-1/2 cups shortening
2 large egg yolks, lightly beaten
3/4 cup cold water
FILLING:
5 pounds tart apples, peeled and thinly sliced
4 teaspoons lemon juice
3/4 cup sugar
3/4 cup packed brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
Whole milk
Additional sugar

Steps:

  • In a large bowl, combine the flour, sugar, salt and baking powder; cut in shortening until the mixture resembles coarse crumbs. Combine yolks and cold water. Sprinkle over dry ingredients; toss with fork. If needed, add additional water, 1 tablespoon at a time, until mixture can be formed into a ball. , Divide dough in half. On a lightly floured surface, roll half of dough to fit a 15x10 x1-in. baking pan. , Sprinkle apples with lemon juice; arrange half of them over dough. Combine the sugars, cinnamon, nutmeg and salt; sprinkle half over apples. Top with remaining apples; sprinkle with remaining sugar mixture. , Roll remaining dough to fit pan; place on top of filling and seal edges. Brush with milk and sprinkle with sugar. Cut vents in top crust. Bake at 400° until crust is golden brown and filling is bubbly, 50 minutes.

5 pounds apples - peeled, cored and sliced
4 teaspoons lemon juice
¾ cup white sugar
¾ cup packed brown sugar
1 teaspoon ground cinnamon
5 cups all-purpose flour
4 teaspoons white sugar
2 teaspoons salt
½ teaspoon baking powder
1 ½ cups shortening
2 egg yolks
¼ cup water, or as needed
2 cups sifted confectioners' sugar
1 teaspoon vanilla extract
2 tablespoons butter, melted
4 tablespoons milk

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Place apples in a bowl, and toss with lemon juice.
  • Mix 3/4 cup white sugar and 3/4 cup brown sugar with cinnamon, set aside.
  • In a large bowl, mix flour, 4 teaspoons sugar, salt, and baking powder. Cut in shortening. Beat egg yolks in a 1 cup measuring cup, add water to make 1 cup. Stir into flour mixture to form the pastry.
  • Divide pastry in about half. Use the larger portion for the bottom crust. Roll out bottom crust to fit the bottom and extended up and over the sides of jelly roll pan (pan is about 10 X 15 inches). Place crust in the pan.
  • Alternate layers of apples and sugar mixture on the bottom crust.
  • Roll out the top crust slightly larger than the jelly roll pan, and place on top of the apple filling. Turn the extended top crust under the bottom crust at the edges and pinch to seal. Make small slits in top crust to allow steam to escape.
  • Bake at 400 degrees F (200 degrees C) for 50 minutes or until the top crust is browned.
  • To make glaze, combine confectioners sugar, vanilla, butter, and milk until mixture has consistency of a glaze. Drizzle glaze over the top of the pie while it is still warm. Cut into squares to serve.

FILLING:
5 lb tart apples-pared, cored, sliced
3/4 c brown sugar, firmly packed
1 Tbsp lemon juice
1 Tbsp ground cinnamon
1/4 tsp salt
1/2 tsp nutmeg
PASTRY:
5 c all purpose flour
1 Tbsp granulated sugar
1/2 tsp salt
cold water
1 1/2 c buttery crisco (i changed it instead of regular shortening)
2 large egg yolks

Steps:

  • 1. Pastry: Combine dry ingredients; cut in Crisco. Place egg yolks in measuringg cup and stir with fork until blended. Stir in enough very cold water to make just a cupful. Sprinkle gradually over dry ingredients; toss with fork to make soft dough. Roll out as usual. Makes pastry for three 9-inch 2-crust pies or one jelly roll pan (15x10-inch what I use) For this pie roll out 1/2 the pastry and line the jelly roll pan. Put in filling. Roll remaining pastry and place on top., sealing and crimping edges, Brush with milk, sprinkle with a little granulated sugar and cut a few vents here and there or prick with a fork. --- Filling: When cutting up the apple - cut them into a pan with cold water that has about 1 teaspoon of salt and stir to dissolve salt. This will keep the apples from turning brown and keep them crisp. Drain apples and place in a large bowl or put back into the previous pan. Sprinkle lemon juice on apples. Combine remaining dry ingredients and mix with the apples. Spread apples evenly in pastry lined pan. Dot with butter pats. Top with remaining crust. After crimping and venting top of crust, brush with milk and sprinkle on the sugar and a little cinnamon , if desired. Bake in a 400^ degree oven for 10 minutes. Then turn down the oven to 350^ and continue baking for 30-35 minutes or until apples become juicy. When cool: drizzle with: --- Icing: 1 cup powdered sugar and 2 Tablespoons of milk mixed well. Cut into squares to serve with whipped cream or ice cream if desired.. This is the best darn pie crust ever. Very old.

An old fashioned apple pie baked and served in a cookie sheet (or jellyroll pan) that can be cut into squares and served to a crowd. This recipe is many years old and was given to me by my Aunt Amy. (To save time, friends suggested I buy refrigerated pie crusts and roll them to fit pan, but I haven't tried it yet!)

2 cups shortening
5 cups flour, siftedd
1/4 cup sugar
1 teaspoon salt
2 egg yolks, beaten
1 cup cold water
1 teaspoon vinegar
6 cups tart apples, peeled and sliced
3 tablespoons lemon juice
3/4 cup brown sugar
3/4 cup white sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 cup butter (1/2 stick)
milk
white sugar
1 cup powdered sugar
3 tablespoons water

Steps:

  • With 2 forks or pastry blender, mix first four ingredients to the consistency of cornmeal.
  • Beat egg yolks and add water and vinegar.
  • Sprinkle over dry mixture and work until it is well mixed and forms a ball. Divide into 2 balls and let rest in refrigerator.
  • Combine sugars and spices and set aside.
  • In another bowl, soak apple slices in lemon juice.
  • Take one ball of dough and roll out to fit the bottom and up sides of a large cookie sheet or jellyroll pan, 11 x 15" or 11 x 17". Trim off edges.
  • Place half the apples on dough and sprinkle with half the sugar mixture. Repeat with remaining apples and sugar mixture.
  • Dot with 1/2 stick butter pieces.
  • Roll remaining dough for top and cover pie, making a slit in the middle.
  • Crimp edges of pie, brush with milk and sprinkle with a little white sugar.
  • Bake at 450 dg. for 15 minutes, reduce heat to 350 dg. for 25 to 30 minutes until golden brown.
  • Cool 20 minutes, then drizzle glaze of powdered sugar and water over top of pie.

For crumble:
1 cup rolled oats
¾ cup brown sugar
1/3 cup all-purpose flour
½ cup butter
For pie:
6 cups finely sliced apples
1/3 cup sugar
1 teaspoon ground cinnamon
2 tablespoons 35 per cent cream

Steps:

  • Preheat oven to 350 degrees F. Place a baking sheet on the lower rack of the oven. Remove dough from fridge five to 10 minutes before rolling so that it is not too stiff to work with. On a lightly floured surface, between two sheets of lightly-floured waxed paper, roll out the disk of dough to form a circle of about 12 inches in diameter, one-quarter inch thick. To transfer the dough to a 9-inch glass pie plate, slowly pull away the top sheet of waxed paper, lift the dough and flip it over into the pie plate. Carefully remove the second sheet of wax paper. Gently press it into the bottom and up the sides. Use scissors to trim off all but a half-inch of the overhanging dough then tuck it under and pinch with your fingers to form a rim. Place in fridge until ready to fill. In a medium bowl, combine apples, sugar and cinnamon. Set aside. In another bowl, combine crumble ingredients and blend well, using a fork or pastry cutter. Remove pie crust from fridge and fill with apples, packing them down slightly and piling them twice as high as you want the finished pie to be to compensate for shrinkage during baking. Then top with the crumble. Drizzle cream all over the top. Place the pie on the preheated baking sheet in the oven. Bake for 45 minutes, or until crumble is firm and golden and crust is nicely browned. Check the pie halfway through baking. If the crust edge seems to be overbrowning, cover it with a ring of aluminum foil. Remove from oven and cool on a wire rack before serving so that the juices don't run. Our Farm Fresh Apple Pie uses simple, no-frills ingredients that have stood the test of time for three generations. The generation before mine never gave out the recipe. But, since my generation is up to bat, I think it should be shared. It's just that good. No need for ice cream or whipped topping. The fresh, simple flavors stand alone. It's truly delicious and you're free to share our simple, farm fresh recipe as well. Enjoy!

6 cups of apples (i like granny smiths)
3/4 c. white sugar
1/2 c. brown sugar
2 tb. corn starch
1 tsp. cinnamon
1/4 tsp. allspice (this is literally my secret ingredient. you can use ginger or nutmeg, but it won't taste the same.)
1/4 tsp. salt
2 tb. butter
milk, cinnamon and sugar for sprinkling
pie crust for a two crust pie, prepared or homemade. for this pie, i used pillsbury deep dish pie crust found in the freezer section, an excellent product.

Steps:

  • Preheat oven to 425 degrees.
  • Peel, slice and core apples uniformly and place in large bowl. Add sugars, corn starch, cinnamon, allspice or your choice of spice (...see above) and salt. Mix thoroughly until apples begin to give off a little bit of moisture.
  • Place apple mixture into the bottom crust, mounding higher in the center. Dot with butter.
  • Add top crust. I chose to make a lattice crust. Dampen edges with water and seal. If you don't make a lattice top, cut small slits to allow steam to escape.
  • Bake for 15 minutes at 425 degrees, placing a piece of foil or cookie sheet underneath to catch drips later on.
  • Remove pie from oven. Decrease temp to 375 degrees. Brush top of pie with milk, then sprinkle with additional cinnamon and sugar. Very loosely tent the entire pie with foil. If you prefer, you can cut a hole in a piece of foil allowing the center to be exposed. I find it gets too brown if I do this. It all depends on your oven. Place back in oven and continue to bake for 45-60 minutes, or until apples are tender and the syrup begins to bubble from the top of the pie. Allow to cool slightly before slicing.
