CHICKEN PINWHEELS

Number Of Ingredients 9

8 boneless skinless chicken breasts
6 ounces sliced ham
8 ounces smoked bacon
4 eggs beaten
3 diced pickles (dill, sweet, or sours, your preference)
1/2 cup butter
3 tablespoons flour
2 cups chicken stock
2 tablespoons chopped tarragon

Steps:

  • Place chicken in between plastic wrap and pound out until 1/4-inch thick. Place 1 slice of ham and 1 slice of bacon onto each breast of chicken. Lightly scramble the eggs and let cool. Divide eggs evenly over chicken and spread out. Top with diced pickles and roll into pinwheels. Once chicken is rolled, tie with string to secure. Heat the butter in a saute pan and brown chicken rolls. Remove chicken rolls from the pan and set aside. Add flour to the same saute pan, and cook until light brown. Add the chicken stock, making sure to stir out any lumps. Return chicken to pan and place in a preheated 350 degree oven for 1 hour. Remove from oven and sprinkle with chopped tarragon. Slice each breast into 4 pieces and serve with 2 tablespoons of sauce.

CHICKEN QUESADILLA PINWHEELS

4 large 10 to 12-inch flour tortillas
2 cups shredded Monterey Jack
1 cup chipotle salsa
2 cups chopped rotisserie chicken meat, still warm from store or warmed in microwave

Steps:

  • Heat a large skillet over medium heat. Add a flour tortilla, blister it on 1 side then turn it over. Scatter cheese on top and cook 1 minute. Remove to cutting board. Top the tortilla with 1/4 cup salsa, spreading it gently with the back of a spoon back to edges. Top with 1/2 cup chicken, then roll tortilla into a log. Let stand a minute before cutting. Repeat with remaining ingredients. Cut pinwheels into 1/2-inch slices and arrange on platter.

2 Old El Paso™ flour tortillas for burritos (from 11.5-oz package)
1 cup fresh spinach
1/4 lb thinly sliced deli roast beef
6 slices (3/4 oz each) provolone cheese
1 medium tomato, thinly sliced
24 toothpicks

Steps:

  • Mix mayonnaise and garlic in small bowl. Spread mixture evenly over tortillas.
  • Top tortillas with layers of spinach, beef, cheese and tomato; roll up tightly. Cut each tortilla into 12 pieces; secure with toothpicks. Serve immediately, or refrigerate until serving.

½ cup sour cream
¼ cup picante sauce
2 tablespoons taco seasoning mix
1 pinch garlic powder
1 (4.5 ounce) can chopped black olives, drained
1 (4 ounce) can chopped green chilies
1 cup finely shredded Cheddar cheese
8 flour tortillas

Steps:

  • Beat cream cheese, sour cream, picante sauce, taco seasoning, and garlic powder together in a small bowl until smooth. Stir olives, chilies, and Cheddar cheese into the cream cheese mixture.
  • Spread about 1/2 cup of cream cheese mixture onto each tortilla. Roll each tortilla like a jelly roll; wrap in plastic wrap. Refrigerate for 2 hours to overnight. Cut into 1-inch slices.
