EGGPLANT AND SAUSAGE PASTA SALAD



Eggplant and Sausage Pasta Salad image

Kosher salt
1 pound bowtie (farfalle) pasta
2 tablespoons plus 1/4 cup olive oil
1 medium eggplant (1 pound), cut into 1-inch cubes
Freshly ground black pepper
3/4 pound Italian turkey sausage, casings removed
1 pint (10 ounces) grape tomatoes, sliced in half
4 cloves garlic, chopped
1/2 large lemon, juiced
1/4 cup fresh basil leaves, torn
2 tablespoons roughly chopped fresh parsley
1/2 cup pitted Kalamata olives, roughly chopped
1/2 cup crumbled feta cheese

Steps:

  • Preheat the oven to 400 degrees F. Line a rimmed baking sheet with foil.
  • Bring a large pot of salted water to a boil. Cook the pasta until al dente. Drain in a colander and let cool a bit before transferring the pasta to a large bowl. Drizzle with the 2 tablespoons olive oil and mix to combine.
  • Add the eggplant to the prepared baking sheet; drizzle with the 1/4 cup olive oil, sprinkle with salt and pepper, and toss it all together. Roast until golden, tender and caramelized, about 30 minutes.
  • Heat a nonstick skillet over medium-high heat. Add the sausage and saute until cooked through, using the back of a wooden spoon to crumble the sausage, 6 to 7 minutes. Add the tomatoes and garlic and cook until heated through and starting to soften a bit, 1 minute. Add the sausage mixture to the pasta bowl. Add the lemon juice, basil, parsley, olives and roasted eggplant to the bowl and toss together. Top with the feta cheese. Serve at room temperature.

I made this last night to serve over fusilli and my husband just scarfed it down, which is very rare for him. This make enough for two or three meals so is good for putting in the freezer.

1 lb eggplant, cubed
3/4 teaspoon salt
12 ounces hot Italian sausage
3 tablespoons extra virgin olive oil
1 onion, diced
1 celery rib, diced
2 garlic cloves, minced
1 teaspoon dried oregano
1/4 teaspoon ground black pepper
28 ounces whole tomatoes

Steps:

  • In a colander, toss the eggplant with 1/2 teaspoon of the salt and let stand for 10 minutes.
  • Pat dry with a paper towel and set aside.
  • Remove the casings from the sausage.
  • In a large, shallow Dutch oven, heat 1 tablespoon of the oil over medium-high heat.
  • Brown the sausage, breaking up any large chunks.
  • With a slotted spoon, transfer to a paper towel-lined plate.
  • Drain the fat from the pan.
  • Heat the remaining oil in the same pan over medium heat.
  • Cook the onion, celery, garlic, oregano, pepper, eggplant and remaining salt, stirring occasionally, until the eggplant is very soft, about 15 minutes.
  • Add the tomatoes, breaking up with a spoon.
  • Return the sausage to the pan and bring to a boil.
  • Reduce the heat and simmer until thickened, about 35 minutes.

2 lbs sweet Italian sausage
2 tablespoons olive oil
1 medium eggplant, about 1 1/2 lbs
1 large Spanish onion, chopped
1 garlic clove, chopped
2 teaspoons paprika
28 ounces crushed tomatoes
6 ounces tomato paste
1 tablespoon chopped fresh basil leaves or 1 teaspoon dried basil
salt
1 lb penne pasta
15 ounces ricotta cheese
16 ounces mozzarella cheese, shredded

Steps:

  • Using a sharp knife, cut sausage diagonally into 1" wide pieces. In large skillet heat oil over medium heat. Add sausage and cook for 8 minutes or until browned, stirring frequently.
  • While sausage browns, cut eggplant into 1/2" cubes. Add eggplant, onon and garlic to sausage in skillet; cook 5 minutes longer until eggplant is tender; stirring frequently. Stir in paprika; cook 1 minute longer.
  • Add tomatoes, tomato paste, basil and 1 tsp salt to eggplant mixture; bring to a boil over medium heat. Reduce heat to low, partially cover pot and simmer 35 minutes or until sauce is slightly thickened, stirring occasionally.
  • Preheat oven to 350. In large saucepan, cook pasta according to package. Drain; stir into sauce.
  • Spread half of the epplant-pasta mixture in a shallow 2 1/2 qt baking dish. Top mixture with ricotta cheese, spreading the cheese evenly. Sprinkle with half the mozzarella cheese. Top with remaining eggplant-pasta mixture; sprinkle with remaining mozzarella cheese. Bake on center rack for 40 minutes or until heated through. Remove from oven; let stand 10 minutes before serving.

1 large eggplant, cut into 1-inch pieces
1 tablespoon salt
7 tablespoons olive oil
1 3/4 pounds spicy Italian sausages, casings removed, meat shaped into 1 1/4-inch meatballs (about 46)
1 pound cherry tomatoes, halved
6 garlic cloves, finely chopped
1 1/2 serrano chilies, seeded, finely chopped (about 1 tablespoon)
1 1/4 cups canned low-salt chicken broth
2/3 cup whipping cream
1 pound cavatapi or penne pasta
1 cup freshly grated Parmesan cheese
1 cup (lightly packed) fresh basil leaves, torn into 1/2-inch pieces
2/3 cup pine nuts, toasted
Additional grated Parmesan cheese

Steps:

  • Toss eggplant with 1 tablespoon salt in large colander. Place over bowl and let stand 30 minutes.
  • Heat 3 tablespoons oil in heavy large skillet over medium-high heat. Working in batches, add eggplant; saut until golden, about 5 minutes. Transfer to bowl. (Can be made 8 hours ahead. Cover; chill.)
  • Heat 2 tablespoons oil in heavy large skillet over medium-high heat. Working in batches, cook meatballs until brown, about 5 minutes. Transfer meatballs to paper-towel-lined plate. Wipe out skillet.
  • Heat 2 tablespoons oil in same skillet over medium-high heat. Add tomatoes, garlic and chilies; sauté until fragrant, about 2 minutes. Add meatballs, broth and cream. Simmer until meatballs are cooked through, about 5 minutes. Add eggplant and simmer 1 minute.
  • Meanwhile, cook pasta in large pot of boiling salted water until tender but still firm to bite. Drain. Transfer to large bowl.
  • Toss pasta with sauce and 1 cup Parmesan cheese. Mix in basil and pine nuts. Season to taste with salt and pepper. Serve pasta, passing additional Parmesan cheese separately.

1 pound sweet or hot Italian sausage links
1/2 pound sweet red peppers, such as frying peppers, cubanelles or bell peppers
1 medium Italian eggplant (about 8 ounces), sliced lengthwise 1/2- inch thick
2 tablespoons extra-virgin olive oil, plus more, for brushing
Kosher salt
Freshly ground black pepper
8 ounces farfalle, cassarecce or other short pasta
1 ounce freshly grated Parmigiano-Reggiano cheese (about 1/3 cup), plus more for serving
1/4 cup basil leaves, torn

Steps:

  • Light a grill and preheat for at least 10 minutes or preheat a grill pan. Arrange the grill so half cooks over high heat and the other half can cook over moderately low heat. Meanwhile, soak 1 small bamboo skewer for 10 minutes.
  • Prick the sausage links in a few places with a fork. Brush the peppers and eggplant slices all over with olive oil and season with salt and pepper.
  • Oil the grill grates, then grill the sausage over moderate heat, turning frequently, until browned and cooked through, about 15 minutes. Transfer to a cutting board and let cool slightly.
  • Meanwhile, grill the peppers over high heat, turning occasionally, until blackened all over, 10 to 15 minutes. Transfer to a bowl, cover with plastic wrap and let cool slightly.
  • Grill the eggplant over high heat until dark brown grill marks form, about 4 minutes. Flip and grilled until charred and the eggplant is tender, 3 to 4 minutes longer. Transfer to the cutting board.
  • Slice the sausages about 1/3 inch thick and transfer to a large serving bowl. Dice the eggplant and add it to the sausage. Peel the peppers, then discard the stems and seeds; slice into bite-sized strips and add it to the sausage and peppers.
  • Meanwhile, in a large pot of boiling salted water, cook the pasta until al dente. Reserve 1/2 cup of the cooking water and drain. Add the pasta and the 2 tablespoons olive oil to the bowl and toss. Add the 1 ounce of cheese and toss again, adding pasta water, little by little, if you need to loosen the pasta sauce. Season with salt and pepper, add the basil and transfer to bowls. Serve the pasta, passing more cheese at the table.

1 tablespoon extra virgin olive oil
1/2 teaspoon crushed red pepper flakes
2 large cloves of garlic, minced
1/2 pound spicy Italian sausage, casings removed
1 14-ounce can whole peeled tomatoes, drained
1 large basil chiffonades
2 medium zucchinis
2 tablespoons Pecorino Romano cheese, to garnish
For the eggplant
1.5 cups diced eggplant (3/4" pieces)
1 tablespoon extra virgin olive oil
Salt and pepper, to taste

Steps:

  • Heat oven to 475 degrees. Place the eggplant in a bowl and drizzle in the olive oil. Toss the cubes to combine and season with salt and pepper. Transfer the eggplant to a baking sheet and bake, turning occasionally, until soft and browned, about 25 minutes. When done, set aside. While the eggplant is roasting, slice your zucchinis halfway lengthwise, careful not to pierce farther than the center. Spiralize the zucchinis, using Blade B. Spread out the zucchini noodles in a large serving bowl. Set aside. In a KitchenAid® Aluminum Nonstick Skillet 12" Skillet, heat the oil over medium heat. Once oil heats, add the red pepper flakes and garlic, cooking for 30 seconds or until garlic is fragrant. Then, add in the sausage and cook, breaking up the sausage into small pieces with a spatula or wooden spoon, until browned, about 10 minutes. Then, add in the tomatoes (crushing with your hands) and half of the basil. Season with salt and cook until mainly reduced, about 10 minutes. Once reduced, add the zucchini noodles to the skillet and toss to combine. Cook for 2-3 minutes, tossing occasionally, or until zucchini is cooked to al dente. Then, add in the cooked eggplant, remaining basil and toss to combine. Transfer to the large serving bowl and garnish with Pecorino Romano cheese. Serve immediately.

1/3 cup KRAFT Lite Zesty Italian Dressing, divided
2 fully cooked chicken Italian sausage links (6 oz.), thinly sliced
3 cloves garlic, minced
1 jar (24 oz.) light tomato-basil pasta sauce
1/4 tsp. crushed red pepper
2 cups whole wheat penne pasta, uncooked
1/4 cup loosely packed fresh basil leaves, coarsely chopped
1/4 cup KRAFT Grated Parmesan Cheese

Steps:

  • Cook and stir eggplant in 2 Tbsp. dressing in large nonstick skillet on medium-high heat 5 min. Add sausage; cook 4 min. or until evenly browned, stirring frequently and adding garlic for the last minute. Stir in pasta sauce and crushed pepper. Bring to boil; cover. Simmer on medium-low heat 10 min. or until eggplant is tender, stirring occasionally. Meanwhile, cook pasta as directed on package, omitting salt.
  • Drain pasta; place in large bowl. Add sauce, basil and remaining dressing; mix lightly.
