4 (1/4 inch thick) slices ham
4 hard-boiled eggs, peeled and chopped
3 stalks celery, minced
1 ½ cups light mayonnaise
½ cup dill pickle relish
¼ cup minced onion
2 tablespoons Dijon mustard
ground black pepper to taste

Steps:

  • Shred the ham using the shredding blade on a food processor.
  • Stir shredded ham, chopped eggs, celery, light mayonnaise, relish, onion, Dijon mustard, and black pepper together in a large bowl.
  • Refrigerate 2 hours before serving.

1/3 cup mayonnaise
2 tablespoons Dijon mustard
2 teaspoons fresh lemon juice
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon paprika, plus more for serving
6 hard-boiled (12-minute) eggs, cut into 1/4-inch pieces
1 tablespoon sliced chives, plus more for serving
Sliced bread, preferably pumpernickel or rye, cut into triangles, toasted (for serving)

Steps:

  • Mix mayonnaise, Dijon, lemon juice, salt, pepper, and 1/4 tsp. paprika in a medium bowl. Fold in eggs and 1 Tbsp. chives and stir to combine.
  • Spread on toasts, then garnish with chives and a sprinkle of paprika.

3/4 c mayonnaise
2 Tbsp mustard (u can use prepared, stoneground or even dijon)
1 Tbsp minced green onion
1/2 tsp salt
1/4 tsp ground black pepper
1/2 tsp garlic powder
1/2 tsp ground thyme
1/2 tsp onion powder
1/2 tsp paprika , ground

  • 1. Mash eggs til they are chunked small. Stir in spices, celery, green onion and ham. Stir in mustard and mayonnaise til well mixed.

My roommate when I was a teenager used to make this. It is a delicious salad/spread that we used to put on toast and brown under the broiler. It tastes just as good served cold as a side dish. This recipe allows for many variations on ingredients (such as ham or sausage for the Spam) and would also make a great low carb meal. Prep time does not include hard boiling and peeling the eggs.

6 -8 hard-boiled eggs, peeled and chopped
1/2 cup cheddar cheese, cut into small cubes
1 1/2 cups Spam, cubed, browned and cooled
3/4 cup Miracle Whip (more or less to taste) or 3/4 cup mayonnaise (more or less to taste)
2 tablespoons yellow mustard (more or less to taste)
1/4 cup onion, minced (I omit this)
salt and pepper

Steps:

  • Brown the cubed Spam lightly in a nonstick frying pan and set aside. Mix all other ingredients together. Mix in the Spam and season to taste. Chill. Serve as a side dish or top assorted crackers with it. It is also very good spread on top of toast and placed under the broiler until bubbly and the cheese starts to brown.
