500g pack shaped pasta (we used farfalle)
1 head broccoli , about 300g, cut into small florets
8 rashers smoked bacon , cut into large pieces
5 tbsp pesto
grated parmesan (or vegetarian alternative), to serve

Steps:

  • Bring a large pan of water to the boil and cook the pasta according to pack instructions. About 3 mins before the pasta is cooked, throw in the broccoli. When everything is done, drain, reserving about 100ml of the cooking water.
  • While the pasta is cooking, grill the bacon for 6-7 mins until crisp, then cut into bite-size pieces. Tip everything into the pasta pan, toss together well and loosen with a little of the cooking water, if needed. Sprinkle over the Parmesan and serve.

16 oz Pasta Shells (or your whatever you have on hand)
1 lb Broccoli - cut into small florets
4 oz Bacon (about 5 strips, excess fat removed and cut into ΒΌ inch strips)
1 to 2 Garlic Cloves (minced)
2 oz Parmesan
2 Tbsp Olive Oil
2 Tbsp unsalted butter

Steps:

  • Cook the small broccoli florets in boiling water with 1 tsp salt until soft (they should be bright green). Drain and set aside.
  • Cook the pasta in boiling water with 1 tsp salt until al dente (follow instructions on the package). Drain and put back in the pot. Melt 2 Tbsp butter and mix into the pasta.
  • In a large skillet, heat the olive oil on medium-high, add the bacon and fry until lightly crisp. Fold a paper towel and put it in the skillet. Move it around the pan with spatula until it soaks up most of the fat. Discard the paper towel.
  • Reduce to medium heat. Add the garlic and fry for 2 to 3 minutes stirring constantly.
  • Add the broccoli and season with salt and pepper. Stir over medium heat for 2 minutes.
  • Add the broccoli mixture to the pasta. Mix well and serve with Parmesan.

ONE-POT BACON BROCCOLI PASTA

4 strips of bacon (cut into chunks)
2 cloves garlic (minced)
2 cups dry rigatoni pasta ((or other small shape like penne))
2 cups heavy cream
1 1/2 cups low-sodium chicken broth
1/2 teaspoon salt ((and pepper to taste))
1/4 teaspoon crushed red pepper
2 cups broccoli florets
1/4 cup grated Parmesan cheese ((more for sprinkling on top))

Steps:

  • In a large saucepan, pot or Dutch oven, cook the bacon until crispy. Remove bacon from pan and drain on paper towels. Drain fat from the pot leaving about 1 tablespoon in the pot.
  • Add the garlic and sautee for about 30 seconds. Add the uncooked pasta, cream, chicken broth, salt (and pepper), and crushed red pepper. Stir. Bring to a boil then reduce to a simmer. Cover and cook for about 6 minutes making sure to stir once in a while and keep noodles covered in liquid.
  • Add the broccoli to the pot and cook another 5-7 minutes or until the broccoli is soft. Continue cooking until sauce is a little thicker. It will be thin and then thicken towards the end. Stir in the Parmesan and reserved bacon.
  • Serve immediately and top with additional Parmesan.

EASY WEEKNIGHT BACON BROCCOLI PASTA



Easy Weeknight Bacon Broccoli Pasta image

8 ounces pasta (cooked)
4 slices bacon (chopped)
3 garlic cloves (minced)
2 cups broccoli florets
1/4 cup freshly shaved/grated parmesan
1/2 teaspoon crushed red pepper flakes
lots of fresh cracked black pepper
extra virgin olive oil (if needed for drizzling)

Steps:

  • Bring a pot of salted water to a boil and cook the pasta according to the directions.
  • While the water is boiling, heat a large skillet or saucepan over medium-low heat and add the bacon. Cook until it is browned, crispy and all the fat is rendered, then removed the bacon with a slotted spoon and set it on a paper towel to drain and excess grease.
  • Remove all but 2 tablespoons of the bacon grease from the pan and turn the heat up to medium. Stir in the garlic and the broccoli florets and cook, tossing occasionally, for about 5 minutes until the broccoli is bright green and slightly soft. Add a lot of fresh cracked pepper and if you'd like, a tiny pinch of salt. I find that I usually don't need the salt because the bacon grease is salty!
  • At this time, you can toss in the cooked pasta. Toss well to combine every and keep it over low heat. If it seems too dry, you can drizzle in the remaining bacon grease or you can just drizzle some olive oil on top and toss well. Add in the parmesan shavings and crushed red pepper. Toss well. Serve it!

Believe it or not, the star behind this 5-ingredient supper is overcooked broccoli! We over-steam it here to give the broccoli a delicate and creamy texture, making it perfect for mashing, mixing with pasta water and tossing with pasta.

1 bunch broccoli (about 1 pound), trimmed and cut into large florets
4 tablespoons (1/2 stick) unsalted butter
Kosher salt and freshly ground pepper
12 ounces spaghetti
2 cloves garlic, minced
2 tablespoons olive oil
1/2 cup grated Parmesan cheese

Steps:

  • Set up a steamer basket in a 3-quart saucepan. Add enough water to come up to the bottom of the basket. Bring the water to a boil. Add the broccoli florets to the basket, cover and cook until the broccoli is soft and nearly falling apart but still holds its shape, about 15 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Transfer the broccoli to a large bowl. Add 2 tablespoons butter and gently toss; season with salt and pepper, then mash.
  • Cook the spaghetti according to label directions, then reserve 1 cup cooking water and drain.
  • In a large skillet, cook the garlic in the remaining 2 tablespoons butter and the olive oil for 30 seconds. Add the mashed broccoli, the Parmesan and half of the reserved cooking water. Cook, stirring, until saucy. Season with salt and pepper. Toss with the spaghetti, adding more cooking water as needed.
