I also like to add in a couple tablespoons of fresh garlic in with the onion as well as the addition of garlic salt, and also some cayenne pepper for heat, prep time includes browning the rice.

1 cup uncooked white rice
3 tablespoons oil
1 medium onion, quartered
1 bell pepper (seeded and quartered)
2 cups chicken stock
1 (16 ounce) can diced tomatoes
1 teaspoon chili powder (can use more or if desired you can use The Best Creole/Cajun Seasoning Mix)
1 teaspoon garlic salt

Steps:

  • In a saute pan, brown the rice in oil over low to medium heat, stirring constantly (watch closely as it burns easily).
  • When the rice is brown, add the onion, bell pepper, chili powder and garlic salt.
  • Turn the heat to high, and cook for 1 minute, stirring constantly.
  • Add the tomatoes, and then chicken stock; bring to a boil, cover, reduce the heat, and simmer for 10 minutes.
  • Remove from heat, and let stand for 15-20 minutes.

1 cup dry long-grain rice
1 cup chunky salsa, (I use Pace's)
2 cups broth
1 small onion (chopped (about 1/2 cup))
1 clove garlic (minced)
Salt & Pepper to taste (I typically wait until it's served to add)

Steps:

  • Rinse rice in a sieve until water runs clear to wash away extra starches.
  • Sauté onion & garlic in a little oil or bacon grease until translucent - about 3 minutes.
  • Add rinsed rice and stir & cook with onions until rice is lightly tan.
  • Add salsa and broth and stir to combine.
  • Bring to a simmer and then cover pot
  • Simmer until broth is absorbed, about 15-20 minutes
  • Fluff with a fork and serve.

1/4 cup butter or 1/4 cup margarine
1 cup chopped onion
4 cups cooked rice (about 1 1/2 cups uncooked)
1 cup cottage cheese (not lowfat)
1 (3 ounce) can chopped green chilies or 1 (3 ounce) can jalapenos, depending on how hot you like
2 cups sour cream
1/2 teaspoon salt
2 cups grated cheddar cheese or 2 cups monterey jack cheese

Steps:

  • Grease an 8x12 pan.
  • Saute onion in butter until soft.
  • Combine with rest of ingredients.
  • Sprinkle with paprika for color, if desired.
  • Bake at 375 degrees for 25-35 minutes.

1/4 cup chopped onion
1/4 cup chopped green pepper
2 tablespoons canola oil
1 cup uncooked long grain rice
1/2 cup tomatoes with green chiles
1/4 teaspoon ground turmeric
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon garlic powder
2 cups water
2 to 3 tablespoons chopped fresh cilantro, optional

Steps:

  • In a skillet, saute onion and green pepper in oil for about 2 minutes. Add rice and stir until coated with oil. Add tomatoes, turmeric, cumin, salt, garlic powder and water; bring to a boil. Reduce heat and simmer, covered, about 20 minutes or until liquid is absorbed. Add cilantro if desired.

1 cup water
1 cup uncooked instant rice
1 pound lean ground beef
2 onions, chopped
1 large green bell pepper, chopped
1 (14.5 ounce) can diced tomatoes
1 (8 ounce) can tomato sauce
2 tablespoons chili powder
1 (8.75 ounce) can whole kernel corn, drained
salt and pepper to taste
3 slices processed American cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 2 quart (8 inch round) casserole dish.
  • In a medium saucepan, bring 1 cup of water to a boil. Stir in instant rice, cover and remove from heat. Let sit for 5 minutes.
  • In a medium skillet over high heat, brown ground beef with onions and green pepper. Stir in diced tomatoes, tomato sauce and chili powder. Simmer for 20 minutes.
  • Stir cooked rice into the beef mixture. Mix in the corn, salt and pepper.
  • Pour the mixture into prepared casserole dish. Cut the American cheese slices in half and place over the top.
  • Bake in preheated oven for 15 to 20 minutes or until cheese is melted and bubbly.
