1 tbsp butter
1 lb ground chicken
1 onion, chopped
1 1/4 cups water
1 can (8 oz) tomato sauce
1 pkg (1.25 oz) dry taco seasoning mix
1 1/2 cups Minute® White Rice
1 can (15 oz) kidney beans, drained and rinsed
16 prepared taco shells, heated
1 pkg (8 oz) shredded Cheddar cheese
1 cup shredded lettuce
2 tomatoes, chopped

Steps:

  • Melt butter in a large skillet over medium-high heat. Add chicken and onions. Cook, stirring for 8-10 minutes, until chicken is no longer pink and is cooked through. Step 2
  • Stir in water, tomato sauce and seasoning mix. Bring to a boil. Reduce heat to low and cover. Simmer for 5 minutes. Step 3
  • Add rice and beans and mix well. Cover, remove from heat and let stand for 5 minutes. Step 4
  • Fill taco shells evenly with chicken mixture and top with cheese, lettuce and tomatoes.

1 15 ounce can black beans, drained
1 cup salsa, your favorite (we use medium because we like a little heat)
1 cup frozen corn
1 cup long grain white rice, not cooked
1-2 cups chicken breast, cooked and shredded or cubed (can use canned if you prefer)
1 tbsp chicken bullion
1 tsp chili powder
1 tsp ground cumin
¼ tsp garlic powder
2¼ cups water
2 tbsp olive oil or butter
1 cup shredded cheese

Steps:

  • Put all ingredients in a large skillet that has a lid.
  • Bring to a boil over medium high heat.
  • Stir to make sure everything is distributed evenly.
  • Reduce heat to a simmer, cover and cook for 20 minutes or until water is absorbed and rice is tender.
  • Serve with corn chips and grated cheese if desired.

2 tablespoons canola oil
2 celery ribs, chopped
4 green onions, thinly sliced
1/2 cup chopped sweet red pepper
1/2 cup chopped sweet yellow pepper
2 cups frozen green beans, thawed
1 jar (4-1/2 ounces) sliced mushrooms, drained
1 can (14-1/2 ounces) chicken broth
1/4 cup water
3 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon lemon-pepper seasoning
1/8 teaspoon garlic powder
1/8 teaspoon pepper
2 cups uncooked instant rice

Steps:

  • In a large skillet, cook chicken over medium heat in oil for 3-4 minutes on each side or until a thermometer reads 165°. Remove from pan; keep warm. Add the celery, onions and peppers; cook until vegetables are crisp-tender. Stir in beans and mushrooms until heated through., Stir in the broth, water, garlic and seasonings. Bring to a boil. Stir in rice; cover and remove from the heat. Let stand for 5 minutes or until rice is tender; fluff with a fork. To serve, top rice mixture with chicken breasts.

2 -3 tablespoons oil
1 (13 1/4 ounce) can chicken broth
3 garlic cloves, minced
1 (8 ounce) can tomato sauce
4 tablespoons chili seasoning mix (or taco mix see Kittencal's Taco Seasoning Mix)
1 (12 ounce) can canned corn niblets, drained
1 medium bell pepper (red or green or both)
1 1/2 cups Minute Rice
1/2-1 cup shredded cheddar cheese (optional)

Steps:

  • In a large saute pan (large enough to hold the chicken and rice), saute the chicken breasts in oil, about 3 minutes on each side to brown.
  • Add in chicken broth, minced garlic (if using), tomato sauce and dry taco seasoning mix. Bring to a boil, and simmer covered for 10 minutes, or until chicken is cooked, stirring occasionally.
  • Add in the drained corn and bell pepper; bring to a full boil.
  • Stir in rice, cover and remove from heat.
  • Let stand 5 minutes, or until the rice is tender.
  • Fluff with a fork.
  • Sprinkle with grated cheddar cheese (if using), serve.
