- Preheat oven to 350 degrees F (175 degrees C). Pierce the potatoes in a couple of places with a sharp knife; place on a baking sheet.
- Bake in the preheated oven until a knife easily slices through the potato, 45 to 60 minutes. Cool potatoes for 10 minutes.
- Slice potatoes horizontally; scoop out the flesh with a fork, leaving the skin intact. Mix potato flesh with spinach artichoke dip in a bowl; spoon back into the potato skins and top with Cheddar cheese.

- Combine drained tofu with spices, and blend together (I used my food processor, but a hand blender would work well too). Thin out mixure with 1-2 T of marinade from the artichokes, until the consistancy of sour cream.

- Defrost the spinach in the boxes on a plate in the microwave until thawed.
- Wring out the spinach in the boxes or in a mesh colander, remove as much liquid as possible.

QUICK AND EASY SPINACH DIP

- Defrost Spinach in the microwave. Pre-heat oven to 350 degrees. In a mixing bowl add all ingredients. make sure to drain and squeeze the water out of the spinach before adding. mix all the ingredients together well. Put in a oven safe baking dish and sprinkle with some more parmesan if desired. Bake for 25-30 minutes untill the top just starts to brown. Serve with your choice of tortilla chips.
