EASY LEMON PASTA WITH CHICKEN



Easy Lemon Pasta with Chicken image

1 pound dried penne
2 chicken cutlets, cut into fingers
Salt and freshly ground black pepper
3 cloves garlic, sliced
1/4 teaspoon red pepper flakes
3 tablespoons olive oil
3 tablespoons roughly chopped fresh parsley, for garnish
2 lemons, juiced
1/2 cup grated Parmesan

Steps:

  • Cook the pasta in a large pot of boiling salted water, until al dente. Drain well.
  • Season chicken with salt and pepper. Heat a large grill pan over medium high and add chicken. Grill until golden and completely cooked. Remove to a plate and slice.
  • Add the garlic and red pepper flakes to a saute pan with 3 tablespoons of olive oil and saute until fragrant. Add the cooked pasta and turn heat off. Mix all together.
  • Remove pasta to a large bowl. Add chicken to the warm pasta and season with salt and pepper. Sprinkle in chopped parsley. Add the juice of 2 lemons and mix. Before serving top with Parmesan.

1 (16 ounce) package refrigerated cheese tortellini
1 tablespoon vegetable oil
4 skinless, boneless chicken breast halves, cubed
3 tablespoons butter
½ pound sliced fresh mushrooms
1 pinch garlic powder, or to taste
2 cups heavy whipping cream
⅓ cup grated Parmesan cheese
3 tablespoons chopped fresh parsley
1 teaspoon salt

Steps:

  • Bring a large pot of lightly salted water to a boil. Add tortellini. Cook, stirring occasionally, until tortellini float to the top and the filling is hot, about 5 minutes. Drain.
  • Heat vegetable oil in a large skillet over medium heat; cook and stir chicken breast in hot oil until no longer pink in the center, about 10 minutes. Remove from heat.
  • Melt butter in another skillet over medium heat; cook and stir mushrooms and garlic powder until mushrooms begin to soften, about 3 minutes. Stir heavy cream into mushrooms and bring to a boil. Reduce heat to medium-low and simmer until slightly thickened, about 3 minutes. Add Parmesan cheese, parsley, and salt. Continue to cook until cheese is melted, about 1 minute.
  • Stir tortellini and chicken into mushroom-cream sauce. Simmer until heated through, about 2 minutes.

Steps:

3/4 cup bottled ranch dressing (measure is approximate, we eyeball it til its the right consistency. Creamy Italian would also be go)

4-6 chicken breasts, boneless and skinless
4 Tbsp cajun seasoning
olive oil
1 box penne pasta
4 Tbsp butter
4 clove garlic, minced
4 Tbsp flour
1 1/2 c chicken broth
1 1/2 c heavy cream
1 c parmesan cheese, freshly grated
salt and pepper to taste
garnish with parsley flakes (optional)

Steps:

  • 1. Cook pasta al dente, drain and set aside.
  • 2. Coat chicken with olive oil. Then generously coat with cajun seasoning. Heat up iron skillet medium high heat. When hot add a couple of tablespoons of olive oil to pan. When it's almost smoking add chicken. Cook on one side until the chicken is black then flip and cook until black as well. Once chicken is blackened turn heat down to medium low and continue to cook until done. About 5-10 minutes depending on how thick your chicken breast are. Let rest while cooking sauce. Slice before serving on top of pasta.
  • 3. In a sauce pan melt your butter. Add garlic and cook for about 1 min. Once you really start smelling that garlic it's done. Don't burn the garlic it taste bad. Now add the flour and mix well cooking for another minute or so. Add your chicken broth and heavy cream. Cook until sauce boils and thickens stirring frequently. Add cheese and season with salt and pepper to taste. Stir until cheese is melted. Add pasta and let simmer for a few minutes to finish cooking that pasta and this lets the sauce adhere better to the pasta.

3/4 cup extra virgin olive oil
2 tablespoons balsamic vinegar
1 tablespoon lemon juice
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh parsley

1 lb boneless chicken breasts or 1 lb boneless chicken thighs

1 box Betty Crocker™ Suddenly Pasta Salad™ ranch and bacon
1/2 cup mayonnaise
1/2 cup sour cream
1 1/2 teaspoons curry powder
2 cups cut-up cooked chicken
2 cups fresh baby spinach leaves or baby kale leaves
1 cup chopped tomatoes
1 cup matchstick (julienne-cut) carrots
1/4 cup chopped salted roasted cashews

Steps:

  • Cook pasta as directed on box. Meanwhile, in large bowl, stir together seasoning mix (from salad box), mayonnaise, sour cream and curry powder.
  • Drain pasta; rinse well with cold water. Shake to drain well.
  • Add drained pasta, chicken, spinach, tomatoes and carrots to curry mixture; toss to coat. Sprinkle with cashews. Serve immediately, or cover and refrigerate until ready to serve.

1 lb linguine
1/3 cup sesame oil, plus
2 tablespoons sesame oil, divided
1 1/2 lbs boneless skinless chicken breasts, cut into 1 inch cubes
1 cup crunchy peanut butter
2/3 cup heavy cream
1/4 cup soy sauce
3 cloves garlic, minced
2 tablespoons white vinegar
1 tablespoon sugar
1 tablespoon ground ginger
1 tablespoon crushed red pepper flakes
1 (16 ounce) package frozen broccoli, cauliflower and carrot combination thawed

Steps:

  • In a large pot, cook the linguine by following the package directions; rinse and drain; set aside.
  • In the same large pot, heat 2 tablespoons sesame oil.
  • Over medium-high heat, saute the chicken for 5-7 minutes or until no longer pink.
  • In a mixing bowl, stir together the peanut butter, cream, soy sauce, garlic, vinegar, 1/3 cup sesame oil, sugar, ginger, and red pepper; set aside.
  • Add the vegetables to the pot with the chicken; saute 4-5 minutes or until veggies are tender.
  • Add the cooked linguine and peanut butter mixture to the pot; toss until coated.
  • Lower heat and cook 3-5 minutes, or until thoroughly heated but do not boil.

This is a simply delicious meal...fast and so easy to make! If you aren't "artichoke-friendly", you will find a surprise at the sweet trail they leave behind even after a simple glass of water. Combined with the chicken, it's a jewel.

4 large boneless skinless chicken breasts
4 tablespoons olive oil
6 -8 garlic cloves, sliced thin
1 (6 ounce) can artichoke hearts, drained (frozen can be substituted)
1 (16 ounce) can diced tomatoes
salt
pepper
1/2 cup parmesan cheese
1 (16 ounce) box rotelle pasta (springs)

Steps:

  • Prepare chicken breasts by trimming any extra fat Pound out gently between two sheets of plastic wrap to flatten and thin breast to a 1/4".
  • Cut into 1" cubes.
  • Toss with Salt& Pepper; set aside.
  • Drain artichoke hearts and slice them into 1/8's.
  • Slice garlic thin.
  • In a deep saucepan over medium-high heat, pour in olive oil and add chicken.
  • Brown cubed chicken till lightly golden.
  • Lower heat; add garlic and cook with chicken for 1 minute or just until slightly tan.
  • Do not brown the garlic.
  • Add the artichokes and diced tomatoes stirring to lift all the brown chicken flavor bits on the bottom of the pan.
  • Cover and cook for about 10 minutes.
  • Cook Pasta and drain.
  • Pour chicken sauce over and mix in cheese.
  • Adjust salt and pepper to taste.
  • It's so quick and easy and tastes GRRRREAT!
  • Leftovers are even better the next day!
