- In a small bowl, cream butter and sugar. Beat in vanilla. Combine flour and salt; gradually add to creamed mixture. Stir in pecans. Shape tablespoonfuls of dough into 2-in. logs. Place 2 in. apart on ungreased baking sheets. , Bake at 375° for 9-11 minutes or until edges are lightly browned. Roll warm cookies in confectioners' sugar. Cool on wire racks.

My grandmother gave me this recipe. I made it for my husbands family get together. Ever since then I have been asked to make this every time we have a family reunion or holiday.

Steps:
- Preheat oven to 300 degrees.
- Cream 2 sticks of butter.
- Add 1/4 cup of powdered sugar, 2 cups all purpose flour, 2 tablespoons vanilla extract, and 1 1/3 cups of chopped pecans.
- Roll into a ball or lengthwise about the size of a finger.
- Bake on greased cookie sheet in preheated oven for 20-25 minute.
- Cool for 1 minute then roll in powdered sugar.

ORANGE CHICKEN FINGERS
We lightened chicken fingers by coating them with a crunchy breading of crushed rice cereal and baking them. Paired it with a sweet tart low-sugar orange dipping sauce and crisp pea and carrot salad with a touch of honey and sesame oil, it becomes a complete meal.

- Make the salad: In a large bowl whisk the vinegar and honey until combined and then whisk in the sesame oil. Add the snow peas and carrots and toss well to coat. Set aside for the flavors to blend while the chicken and sauce cook.
- Preheat the oven to 425 degrees F. Place a wire rack on a baking sheet and lightly mist with nonstick cooking spray.
- Put the sesame seeds in a small nonstick skillet set over medium heat. Cook, stirring often, until golden brown and fragrant, about 5 minutes. Set aside to cool.
- Put the cereal in a plastic storage bag and crush with a rolling pin or heavy can until coarsely crushed. In a shallow bowl combine the toasted sesame seeds, crushed cereal and orange zest and lightly season with salt and pepper.
- In a second shallow dish, beat the egg whites with the teriyaki sauce. Dip each chicken tender in the egg mixture and then the cereal mixture, pressing to coat well. Place on the rack and mist the chicken with nonstick cooking spray. Bake until the crust is golden and the chicken is cooked through, 18 to 20 minutes.
- Meanwhile, in a small saucepot heat the marmalade, teriyaki and ginger over medium heat until melted and well combined. Remove from heat and stir in the lemon juice. Serve the chicken with some of the sauce for dipping and the salad.

EASY NO-BAKE ORANGE BALLS CANDY
No-bake orange balls are similar to bourbon balls with vanilla wafer crumbs. The orange juice concentrate gives them a burst of orange flavor.

- Combine the vanilla wafer cookie crumbs and 1 cup confectioners' sugar in a mixing bowl.
- Add the butter to the crumb mixture and blend in well.
- Stir in the thawed orange juice concentrate; add vanilla and nuts. Mix with your hands until all the ingredients are fully incorporated.
- With your hands, shape the mixture into balls about the size of walnuts. Place the prepared balls in a food storage bag with the sifted confectioners' sugar or shredded coconut. Shake the balls around so that the sugar (or coconut) sticks to the balls. You may want to do just a few at a time to prevent overcrowding which could impact the shape of the balls.
- Remove the balls from the bag and arrange the orange balls in single layer on waxed paper-lined cookie sheet. Store them uncovered overnight in the refrigerator for the best flavor. - Combine flour, sugar, baking powder and salt in a mixing bowl.
- Stir in nuts, raisins and orange peel.
- Combine beaten egg, orange juice and oil.
- Pour into flour mixture.
- Mix only until flour is dampened and fruits and nuts are well distributed.
- Turn into greased 8x4 inch loaf pan.
- Bake in 350 degree oven 40 minutes until cake tester comes out clean.
- Let cool in pan 10 minutes, turn out of pan and cool completely on rack.
- Wrap in waxed paper and store overnight before slicing.
- Diabetic- 1 slice, 1/2 inch thick, 1 starchy choice, 1/2 fats and oils choice.
