Some of my friends from Rio will remember when the heavy rain flooded our apartment and we spent hours trying to scoop up and drain the water away. None of us had eaten so half way through, ankle deep in water (!), I devised these lovely little pizzas to give us all a break and a laugh as I'm flipping the pancakes!. I think they taste so good because the 'base' is fresh. Feel free to add extra toppings as you wish but I think they're great plain. Don't expect to be able to pick these up, you need to eat them with a knife and fork.

4 ounces plain flour (all purpose)
1/4 teaspoon salt
1 egg, beaten
200 ml milk (can use half milk half water)
cooking spray, for frying
1 (14 ounce) jar of good quality thick tomato sauce for pizza pasta (any size really, just use your favourite, I like tesco's finest chunky passata)
200 g grated cheese
1 tablespoon oregano (approx)
1 tablespoon black pepper (approx)

Steps:

  • Sift the flour into a bowl with the salt, make a well in the centre and add the beaten egg and half of the milk (or all of the milk if using half water) Whisk until no lumps remain then stir in the rest of the milk (or water if using). If the mixture is too thick, add a little more liquid. Pour into a jug or have a ladle to hand.
  • Prepare your toppings so that you're ready to go.
  • Heat a large frying pan over a medium heat and spray a little oil over the base, your frying pan must have a lid, if not, substitute foil or another lid.
  • If you are brave or in a hurry then you could use 2 or 3 frying pans at once!
  • Once hot and working quickly, pour enough pancake batter over the base to cover, swirling round as you go (you want them thicker than thin crepes but thinner than american pancakes).
  • When the underside is cooked and browned (you can check this by lifting up one of the sides) remove from the heat, flip over and assemble your pizza with the tomato sauce and cheese, sprinkling over black pepper and oregano as you go.
  • The first pancake sometimes sticks but it helps to 'season' the pan so don't worry if this happens.
  • Return to the heat and put a lid on or cover the pan. In a couple of minutes, the pancake will have cooked and the cheese should have melted.
  • Serve immediatly, 1 is never enough so be prepared to allow someone else to stand over the pan once you get tired!

1 1/4 c milk
2 large eggs
2 Tbsp butter melted
1 1/2 Tbsp sugar
1/8 tsp salt
1 c flour

Steps:

  • 1. Add milk, eggs, melted butter, sugar, salt, and flour to a blender. Blend for 2-3 seconds. Refrigerate for 30-60 minutes.
  • 2. Heat a 10 inch nonstick skillet over medium heat. Melt 1/4 tablespoon butter in the skillet. Pour 1/4 cup of batter into the pan and swirl to coat evenly. Cook for 1 minute; or until lightly browned. Flip and cook the other side for 30 seconds; or until lightly browned.

1/2 cup whole-wheat flour, preferably white whole-wheat (see Tip)
1/2 cup all-purpose flour
1 teaspoon sugar (optional)
1/4 teaspoon salt
3 large eggs
1/2 cup low-fat milk
2 teaspoons canola oil or melted butter
1/2 cup seltzer water

Steps:

  • Directions 1. Process whole-wheat flour, all-purpose flour, sugar (for sweet crepes), salt, eggs, milk and oil (or butter) in a blender or food processor until smooth, scraping the sides once or twice. Transfer to a bowl, cover and refrigerate for at least 30 minutes or overnight. 2. Slowly whisk seltzer into the batter. Coat a large nonstick skillet with cooking spray; heat over medium-high heat. Ladle 1/3 cup batter into the center of the pan; immediately tilt and rotate the pan to spread evenly over the bottom. 3. Cook until the underside is lightly browned, about 30 seconds to 1 minute. Using a heatproof silicon or rubber spatula, lift the edge, then quickly grasp the crepe with your fingers and flip. Cook until the second side is lightly browned, about 20 seconds. Slide onto a plate. 4. Repeat with the remaining batter, spraying the pan as needed and stacking crepes as you go. If the pan begins to smoke, reduce the heat to medium. As you prepare your filling, cover crepes with a clean kitchen towel or keep warm in a 200°F oven. 5. To assemble, place a crepe on a clean cutting board. Spread a filling of your choice in the center, leaving a 1- to 2-inch border. Fold in the sides to make a square shape, leaving a "window" in the center. Press down on the corners, as necessary, to help keep the crepe folded. Tip: White whole-wheat flour, made from a special variety of white wheat, is light in color and flavor but has the same nutritional properties as regular whole-wheat flour. FOR THE CREPES
2 - eggs
2/3 can(s) milk + a little extra for thinning the batter
2 tablespoon(s) melted butter or coconut oil
1/4 teaspoon(s) salt
1 cup(s) all-purpose flour
- nonstick cooking spray
FOR THE FILLING
10 ounce(s) cool whip frosting (any flavor)
2 cup(s) sliced strawberries
1 cup(s) nutella

Steps:

  • For the Crepes: Whisk together all of the ingredients until a smooth batter forms. Heat an omelette pan* over medium heat for a minute (you'll use your first crepe as a gauge to tell whether this heat is too hot or too cool for your pan). Lightly spray the pan with the nonstick cooking spray.
  • Use a tablespoon* to scoop the batter into the pan. Lift the pan by the handle, and rotate your wrist so the batter spreads into a thin circle. If your batter doesn't spread easily when you rotate the pan by the second crepe, add a tablespoon or two of milk to thin the batter a little further. Place back on the heat to cook until the top of the crepe looks dry**. Run a small rubber spatula under the edges of the crepe to gently loosen it from the pan. Slide it out on to a plate to cool. Repeat with all remaining batter, stacking the cooked crepes on top of one another. Let crepes cool completely.
  • Cake Assembly: Start by spreading a little Nutella on the serving plate or cake stand. This will glue the first crepe to the bottom so it doesn't slide around. Spread Nutella on the first crepe and place it Nutella-side up on the serving plate. Add a layer of sliced strawberries and then spread on a layer of Cool Whip Frosting. Repeat with remaining crepes and fillings, until cake it complete. Chill for an hour before serving. At time of serving, top with more Cool Whip Frosting, strawberry slices, and drizzled Nutella for garnish.

I have been making this recipe for years and never actually wrote it down. It was always in my head and the batter was almost entirely based on texture and appearance. Well, here we are, finally, my masterpiece! If you would like to try a savory version of this recipe, simply remove the sugar. When crepe is on stove, add strong cheese on top to melt, and diced ham. This recipe serves 2-3 people (2 if you're really hungry!).

Number Of Ingredients 7

2 cups all-purpose flour
2 tablespoons sugar
1 teaspoon double-acting baking powder
1/2 teaspoon salt
4 1/2 cups 2% low-fat milk
2 eggs, slightly beaten
10 teaspoons unsalted butter or 10 teaspoons canola oil

Steps:

  • Sift dry ingredients (flour, sugar, baking powder and salt) together in a mixing bowl.
  • Add 2 cups milk and stir until blended.
  • Add the final 2 1/2 cups of milk and stir until blended. It is okay if there are a few lumps. Add beaten eggs and stir until blended. The batter should be slightly thicker than unwhipped whipping cream. If it is not, then add more flour or milk until it has reached this point.
  • Turn stove on to medium-high and warm a large non-stick pan.
  • Melt 1/2 tsp butter (or oil) on pan. To test if pan is hot enough to begin making crepes, place a drop of batter on the pan. Batter should start bubbling immediately.
  • Use a ladle to pour batter into pan. Tilt the pan to spread the batter evenly across entire pan.
  • Check bottom of crepe to see if it has browned at all. If so, flip crepe. Wait another 30-45 seconds and then remove from pan.
  • I usually put the crepes in a covered tray in the oven on 200degrees Celsius to keep them warm.
  • To eat, I recommend sprinkling a tablespoon of sugar evenly on the crepe and adding about 5-10 drops of lemon or lime juice. It may not sound very appealing, you'll have to take my word for it, it's delicious! Roll up the crepe and enjoy!
