EASY AND QUICK CHICKEN TORTELLINI SOUP
Tasty, quick and easy soup recipe. The flavors blend together so well they will be begging for more. Cheese tortellini, fresh spinach, and diced chicken with a few other ingredients make this a keeper! This goes good with a gourmet grilled cheese.

Steps:
- Melt butter in a 5-quart pot over medium heat; cook and stir onion and garlic in melted butter until onion is translucent, about 5 minutes. Stir chicken broth and Alfredo sauce into onion mixture; cook until heated through, about 5 minutes. Stir in sour cream and cooked chicken; simmer for 15 minutes.
- Mix cheese tortellini and spinach into chicken mixture, cover pot, and simmer for 20 minutes. Season with salt and pepper.
- Divide soup into bowls and sprinkle with Parmesan cheese.

EASY CHICKEN TORTELLINI SOUP
This is a simplified version of my mother-in-laws recipe for a great soup.

Steps:
- 1. In a large saucepan melt butter. Saute garlic in butter for 3-4 minutes. Stir in broth and tortellini and bring to a boil. Cover, reduce heat, and simmer for about 5 minutes.
- 2. Add remaining ingredients, except grated Parmesan cheese. Simmer 10-15 minutes,stirring occasionally to break up frozen spinach. When soup is thoroughly heated check for seasonings and add salt pepper or garlic as desired. Serve in bowls with grated Parmesan on top.
