Rolled tacos; these are the best. I learned how to make them and my husband loved them.

¼ cup butter
¼ cup all-purpose flour
¼ cup minced onion
¼ cup chopped black olives
2 tablespoons lemon juice
1 tablespoon oil
¼ teaspoon ground paprika
⅛ teaspoon ground black pepper
⅛ teaspoon salt
1 ½ cups cooked shredded chicken
8 flour tortillas
oil for frying, or as needed
toothpicks

Steps:

  • Melt butter in a skillet over medium heat; stir flour into butter until smooth. Add onion to flour-butter mixture; cook and stir until onion is softened, 5 to 10 minutes. Mix black olives, lemon juice, oil, paprika, black pepper, and salt into onion mixture; cook and stir until heated through, about 2 minutes. Stir chicken into mixture and remove skillet from heat and cover.
  • Heat oil in a large, heavy saucepan or deep-fryer.
  • Fill tortillas with chicken mixture. Roll tortilla around filling and secure with a toothpick.
  • Fry the rolled tortillas, working in batches, in the hot oil until browned, about 2 minutes. Transfer fried tortillas to a paper towel-lined plate using a slotted spoon or tongs.

If you have leftover chicken, these flautas are a snap to make! They taste so good, and the ingredients can be varied to suit your taste. They are baked instead of fried, but still turn out crispy. I like to serve them with sour cream, salsa and guacamole for dipping. Try them, you'll like them!

Number Of Ingredients 9

1 and 1/2 c leftover cooked chicken, shredded
6 oz cream cheese
1 c shredded monterey jack cheese
1/3 c your favorite salsa
1/4 tsp cumin
1/2 tsp chili powder
salt and pepper to taste
10 - 12 flour tortillas (the smaller soft taco size)
salsa, sour cream, and/or guacamole for dipping (optional)

Steps:

  • 1. Pre-heat oven to 400 degrees.
  • 2. Combine chicken, cream cheese, Monterey Jack cheese, salsa, cumin, chili powder and salt and pepper in a medium-sized bowl. Mix together well.
  • 3. Evenly distribute chicken mixture down center of each tortilla. Roll each filled tortilla up tightly.
  • 4. Line a baking sheet with aluminum foil and spray with cooking spray.
  • 5. Placed rolled tortillas evenly spaced on baking sheet, seam-side down. Spray tortillas generously with cooking spray.
  • 6. Bake for 10 - 12 minutes, or until tortillas become golden brown.

1 1/2 c. shredded chicken (can use leftover chicken or even canned chicken)
6 oz. cream cheese
1 c. shredded Monterey Jack cheese
1/3 c. salsa
1/4 tsp. cumin
1/2 tsp. chili powder
salt and pepper to taste
10-12 flour tortillas (soft taco size)

Steps:

  • Preheat oven to 400-degrees. Combine chicken, cream cheese, Monterey Jack cheese, salsa, cumin, chili powder, and salt & pepper in a medium-sized bowl. Mix together well. Evenly distribute chicken mixture over each tortilla, making a line down the middle of each tortilla and then rolling them up tight. Line a baking sheet with aluminum foil and spray with cooking spray. Place rolled up tortillas evenly spaced on the cookie sheet (seam side down) and spray cooking spray generously over the top. Bake for 10-12 minutes or until tortillas become golden-brown.
