EASY CHICKEN CACCIATORE RECIPE BY TASTY

Steps:
- Season the chicken breasts on both sides with salt and pepper.
- Heat 1 tablespoon of the oil in a large nonstick skillet over medium high heat.
- Place 4 pieces of the chicken in the skillet and sear until until golden-brown, about 1-3 minutes on each side. Transfer the chicken to a plate and repeat searing with the remaining chicken pieces. Set aside.
- Heat 1 tablespoon of oil in the empty skillet.
- Add the mushrooms and stir occasionally until most of the moisture has evaporated from the pan, about 8 minutes.
- Transfer the mushrooms to a plate and set aside.
- Heat the remaining 1 tablespoon of oil in the pan.
- Add the onions and bell peppers and season with salt and pepper. Stir occasionally until the onions and peppers have softened, about 2 minutes.
- Add in the garlic and rosemary and stir until the garlic is fragrant.
- Add in the tomatoes, red wine, and broth and stir until the sauce has thickened slightly.
- Add the mushrooms and chicken back into the sauce and bring to a low simmer.
- Cover and let cook until the chicken registers 165°F (74°C), about 5-8 minutes.
- Serve topped with basil.

- In a large resealable plastic bag, combine flour and Italian seasoning. Add chicken, a few at a time; seal and shake to coat. In a large nonstick skillet coated with cooking spray, cook chicken in 1 teaspoon oil for 4-5 minutes on each side or until browned. - Heat sauce in large saucepan on low heat.
- In fry pan sprayed with Pam, brown chicken on both sides.
- Add some wine, cover and simmer 15 minutes.
- Add chicken and about 2 T. of wine from pan to the sauce.
- Add a little more wine and the onion to the fry pan. Simmer 5-8 minutes and add to the sauce with 2 T. of wine from the pan.
- Add a little more wine to fry pan along with peppers. Simmer 8-10 minutes & add to sauce with 2 T. of wine from pan.
- Repeat above with mushrooms-simmer 10 minutes and add to sauce with 2 T. wine from the pan.
- Simmer sauce for 1 1/2 hours, stirring occasionally.
- Serve over pasta.

- Dip chicken pieces in flour and shake off excess.
- Heat oil in a 10-inch skillet over medium-high heat. Add chicken and brown well, 4 to 5 minutes per side. Remove chicken from the pan and set aside. Drain most of the oil from the skillet, leaving about 1/8 inch.

- RJ's Note: I made this recipe on 9th of May 1998. I substituted the tomato paste with a large can of tomatoes that I put through the blender. The aroma of the chicken simmering in the crock pot sauce all day was fantastic. During the last ten minutes I added some frozen mixed Chinese vegetables and served the cacciatore over home made pasta noodles (my first attempt at making pasta). I only used one teaspoon of oregano. Next time I'll try two.

EASY CHICKEN CACCIATORE
I love the flavors of Chicken Cacciatore, but don't like the bones. Using skinless, boneless breasts cuts down on the calories, as well, even though one does lose some of that intense chicken flavor. Fun facts: "Hunter's chicken" in Italian does not imply there are wild chickens being hunted in Italy!! Rabbit is also cooked in this style! Although Italian is no longer the official language of Malta, this is still a common, local dish on the island!

- Season the chicken with 1 tsp. Italian seasoning, salt and pepper. In a large skillet add 1 tablespoon olive oil and heat to medium high. Cook the chicken about 3 minutes on each side or until browned. Set the chicken aside.
- Add one tablespoon olive oil to the skillet and add the garlic, bell pepper, and onions. Sauté until almost tender. Add mushrooms, sauté another minute.
- Add the crushed tomatoes, wine, chicken stock, 1/2 and 1/2, about 2 tsp. Italian seasoning, and salt and pepper to taste. Let simmer until starting to thicken.
- Add the chicken back to the skillet and simmer on low heat until chicken is done, about 15 minutes. Serve over hot pasta and garnish with fresh chopped basil and parmesan cheese.
